Keto Lemon Bars are in my opinion one of the best keto desserts you can make in the summer. Mostly because these low carb lemon bars are refreshing, tangy, and perfectly chewy. Literally, lemon bars are what summer tastes like on your tongue...atleast on my tongue. And my favorite thing about these healthy lemon bars is that each one has just 3 NET CARBS!

3 tbs Butter melted 1 Egg yolks 1/2 tsp Vanilla extract 1 c Almond flour 3 tbs sweetener Bake for 10 minutes at 350 3 eggs 3 juiced lemons Zest 1/2 lemon 2/3 c sweetener 1 c almond flour Bake for 20 min Chill then sprinkle with sweetener

Excellent recipe! If you want to up the wow factor you can mash together fresh raspberries and chia seeds and let it sit until thickened. Then add that mixture on top of the lemon layer. Go even a step further and double the original crust recipe. Use half as a base layer as shown in the video and the other half as a crumble on top. Ultimately, it would be: almond base, lemon layer, raspberry/chia layer, almond crumble. Tasty! (But the macros would be different.)

DamZe dude it’s just meant for a treat here and there lol. I’m on keto but literally 90% of the fats I eat are from macadamia nuts, avocados, salmon, eggs, MCT oil, etc.

Blue Diamond is the lumpiest almond flour I've ever used. I'm now using Great Value from Walmart, same macros as the big brands, but it's super, super fine and doesn't clump up.

Did them this week but we sadly only had Erythritol as a sugar free sweetener in our stores. :/ The base tastes amazing and I will steal for a lot of other baking stuff I do. The lemon topping is ok but I think I need to find another sweetener.

I was so excited to try this but it's turned out very soggy, and the base merged with the lemon topping! I think next time, I will cook the base for longer and let it cool completely and maybe put it in the fridge before putting the topping on.

If I may advise, allow the butter to sit in room temperature 4 hours before making the bars, so that the butter soften. I think it is butter than microwaving it.

Excellent stuff my wife and I are getting into keto and I’m looking up recipes where she can have a little sweetness cause she misses that the most. I’m trying to do my best to understand what the keto diet is all about and also looking on recipes that deliver. I’ve come across your videos here on yourself chef and I gotta say I’ve made your peanut butter mousse twice already so huge thank you for that! So I trusted that there would be good as well. I have the crust cooling on the stove and curd is waiting to be added then placed back in the oven. I want it in the fridge cooling so it’ll be ready after dinner. Made these today. Only thing I did was baked for 30minutes instead of 25. Oh. My. Goodness. Hands down, best keto dessert! I topped it with some whipped cream and was floored. Definitely want to let this chill in fridge for a few hours. It wasn't as good still warm. Totally worth the wait! Just melts in your mouth. Usually keto treats have an overwhelming almond flavor from the almond flour and are really gritty. This isn't. I can imagine these even being delicious after freezing them a bit and again, topping with whipped cream. Shared with a couple friends and they adored it! Even my daughter loved it! Thank you so much for this recipe! God bless

You can do whatever exercises you like on keto as long as you keep them in a low intensity interval, at least in the start of your keto journey. Once you are fat adapted though, you can increase the intensity of your workouts.

Why do you use baking spray on parchment paper? Parchment paper is nonstick.

That's a lot of Erythritol which is in swerve as the sweetener. Serving Size: 5g (1 teaspoon) seems you used 25-28 teaspoons which would put each square around 15.5g of carbs. That's bound to cause a blood sugar spike.

Erythritol, although contains 3g of carbs per 3g serving, technically counts as zero net carbs as it’s a sugar alcohol that doesn’t fully get used by the body. Swerve even advertise that you don’t need to add I to your carb count.

I would love to make these, however, my daughter has a severe almond allergy so we don't keep it around. Could you tell me how much coconut flour I could use instead of the almond flour? I know the measurements aren't cup for cup with almond & coconut flour. Thanks so much!! These look amazing! When my daughter moves out one day (but not too soon!!), I would love to try these with the almond flour.

Hey, coconut flour binds a bit more liquid than almond flour. I would try about 1/4 less of it (75g instead of 100g) and then look for the consistency he shows in the video by adding eather more flour or more melted butter.

@barefoot arizona do you think a gluten free flour might work better? I don't know if it would still be considered keto then? It might not be as dry as coconut flour. I will try the coconut flour and let you know how it works out. And if it's too dry, I will try gf flour. And if that doesn't work, I'll just try it with almond flour after my daughter moves out😂

I made these last night, they're pretty good, thought not sweet enough. My access to stevia sweeteners is extremely limited and things like monk fruit are unheard of, so I will need to adjust for next time. Anyway, this crust is really good and really easy but I think next time I will wait for the crust to cool and fill it with lemon curd, which is easy to make keto and doesn't require further baking. But I'm also thinking this crust can be filled with lots of things. Leave out the sugar and you've got a great chicken pot pie crust, for example. Thanks for the recipe, you put a lot of effort into this and it shows.

Wow... I made these yesterday, let them cool in the fridge overnight and just had one now. Although I did over-burn slightly (I have a gas oven), this is sooooo delicious! a tiny bit too sweet for my Japanese taste, but really yummy nonetheless. That’s expensive material. And all that almond flour is horrible for you. Almonds are high in oxalates and traces of cyanide not to mention omega 6. I recommend everyone staying away from almond anything. Use coconut flour if you absolutely need this dessert, reduce the amount of it as well and reduce that swerve, That’s way too much, too sweet. Mix blueberries or blackberries in for sweetness and the fiber will benefit you for the carb intake. You will not be kicked out of keto.

Ok I just started doing keto and I am still excited to try these in a few weeks but I won’t try them now cuz you said 30g of the sweetener then for the (Filling) another 100g right?? So 130g I looked at the package from the link to see for myself and every tsp is 3g and the erythritol is 3g per serving so 130g of the powder is 130g of carbs divided by 9 for the serving of each bar is 14.5??? Still great but says 5 on the web page still can’t wait to make them but as a precaution cuz I’m serious about keto rn don’t wanna risk it but just thought I’d let you know… am I wrong???

ONG- Love lemon! Can’t way to make them. Nice, easy recipe. One small suggestion: Maybe just a sentence about what zest is, so people know to use just the very outer skin, and not the bitter white rind under it. Can’t to make it for Fourth of July!

Joe, so far I’ve loved your recipes but this one really disappointed me. Almond Flour Overload! Almond flour in the crust is fine but another cup of almond flour in the filling? Why? I’m a newbie to Keto so please bear with me when I ask: Why not just make a keto version of Lemon Curd with eggs, lemon juice, butter, lemon zest and sweetener to taste?

Hey Joe! I just made these during my lunch break. The lemon bars are SUPER TASTY... but you know I could only let them cool for 45 mins-ish. That's fair game in my house. So I cut myself a still warm piece, I didn't put the powdered sugar on it put I did add a little whipped cream and it's amazing! It actually tastes more like key lime pie. This is great! Thank you so much!

Can you make this without the Confectioners Swerve? I cant digest the sugar alcohols... I use micronutrients Stevia which has no sugar alcohols.

Just made these. I used a smaller banking panicked 6x6. Your 8x8 does not look close to 8x8. There was no way the crust would fit my 8x8. Maybe I'm doing something wrong.

Can I substitute almond flour (AF) with coconut flour (CF)? Is it with the ratio of 1AF = 1/2 CF, right? Thanks so much!

Hi. Is he using powdered sugar? Not sure how he’s getting only 3 net carbs. The sugar states 30 g per 1/4 cup. He’s using 2/3 cup plus 3 tbs . Can someone explain? That divided by 9 bars.

Hey, I bake them, but after staying in the fridge one night the erythriol had cristalized - and it felt like chewing fine sand while eating the bars. We don't have Swerve in Austria/Europe. I used grounded erythriol. Is it different with swerve? Does Swerve not cristalize? Thanks!

I haven't got Swerve confectioners sugar atm so I'm going to try putting the erythritol in my nutribullet to make it fine.

@@d.howard4218 this is what I did too. I grinded the Erithritol very fine beforehand. But I think the Ratio of liquid and Erithritol is just not the Optimum... It still cristalized. Next time I will replace half of the Erithritol with xyilotol (100g Erithritol = 50g Erithritol +35g Xyilotol) . Maybe it will not cristalize then - and the total Carb amount ist still low per piece. (I don't like Stevia. And Monkfruit and Allulose are not permittet in Europe yet). Cheers

Can you use Stevia instead of Swerve??? Im extremely allergic to it as it is still a sugar alcohol despite being keto friendly...just wandering if the flavour would still be decent????

Zest all the lemons first and put into a small bowl to dry. You'll be able to flavor so many deserts drinks Mexican foods with the zest.

These came out yummy but not chewing which I was really hopping for. The consistency is more cake like. Still good with a little whipped cream and raspberries on top!

What does the sweetener taste like? We keep trying different ones when we see great-looking recipes like this but so far, they all taste so horrible, we end up throwing everything out. I'm kinda tired of wasting lots of money and other ingredients

I use Pyure, a stevia. It's 2x as sweet as sugar. But if you use a lot of it, it can get bitter, so I cut it with sucralose or erythritol. Swerve is mostly erythritol and tastes sweet enough, but you can definitely tell it's not sugar. It does have an artificial taste, which is why I guess he doesn't use a lot of it. It also costs a lot for a little bag. He could have used granulated for the crust and filling, since it was being cooked.
