How to make Kombucha Fizzy

Want a good carbonation in your kombucha? Here I'm sharing my tips for fizzy kombucha.
Carbonation in kombucha is a normal part of the ferment and what makes it such an enjoyable drink. The yeast found in kombucha consumes the sugar and this produces the carbonation.

Most of my kombucha has a nice effervesces after F1 but in F2 is where the real magic happens with the flavoring and more carbonation. So here are my best tips for achieving a good fizz.
1. The right bottles. Bottles that are made to hold carbonation. Old kombucha bottles & flip top bottles. Make sure the seals are working correctly and are not rotted.
2. Stir your Ferment 1 before you pour into the smaller bottles. This will mix the yeast around.
3. Second ferment flavor- how much you added when you did your F2 bottle. My general rule of thumb is 1TBS for 16oz but people use up to ¼ cup or more. To continue ferment the yeast needs sugar. Fruit works great.
4. Little air left in the bottle-little room left for the carbon dioxide to release increases the kombucha carbonation
5. Letting your second ferment sit out long enough. I do 3-7 days. The weather can affect this as the temperatures, in most area’s change during the year. The winter months might require a longer F2 time. Try giving your bottles a few more days.
6. If your kombucha SCOBY is new it might take a few batches for the yeast to build up. I’ve noticed this when I gifted SCOBY’s to friends. The first batch is good then once they get a few batches under their belt it turns into GREAT!

I have found that adding ginger that has been zested at about 1 teaspoon per 16 oz in the second stage ( I do it in 1/2 gallon growlers) seems to give it more carbonation, then I put it into 16oz bottles and leave it out for 3-7 days before putting it in the fridge. ( fresh pineapple works well in the second stage also for fizz.

You are so right about tip #6. I began my kombucha home-brewing journey about two months ago, and I believe my SCOBY yeast is just now reaching optimal levels (I live in northeast USA and it's winter). I'm starting to see tiny bubbles constantly rising in my fermentation jars (during primary fermentation) and SCOBY hotel. Looking forward to seeing how the second fermentation will turn out! Fizziness has been really hit-or-miss so far, though I still drink it either way.

I use pineapple-fresh is best, but frozen and thawed ok too. It almost blows the caps off, so be careful. Don't use too much.

hey what worked for you? ive been adding more juice or sugar, still cant get the fizz, ill try going 5-7 days in a warm room, im hesitant on adding extra sugar as i dont really want a sugary drinking. i see above someone mention ginger might help!

Has anyone ever had any issues using honey in their 2nd ferment? My husband really wanted me to do a lemon kombucha this time, and since lemons don’t have a very high sugar content on their own I knew I was going to have to add some kind of additional sugar. So I juiced a bunch of organic lemons and sweetened the juice with honey, and then added that to my bottles. I live in Texas, and it has been HOT here, and my 2nd ferments have only been taking 3 days in my storage room that stays at about 85-90 degrees F. But this batch has been in there for 7 days already and still has zero carbonation?! I’ve been making kombucha for 10 years and I’ve never run into this issue in the summer! But this is the first time I’ve used honey to sweeten a 2nd ferment.

I leave it longer for first ferment if I don't see bubbles on the side of the glass. Also, I make my own simple syrup to add to bottles so I'm guaranteed fizz. Great video, I subbed

I've found that if the fruit puree you use is not a very sweet one you can add 1/2 tsp of cane or raw sugar to the second brew. Wipe the tops and caps of the bottles with a dry towel to get a good seal. I love the Gt's bottles as when F2 is done you can slowly let out the fizz to open the bottle! Hi Liz. I'm from India. and the term "Kombucha" was new for me and so will be for many people. So...... In India we drink tea i.e. made of [ Milk+Water+Powdered Tea leaves+Sugar] sometimes we also add dried powdered Ginger or Cardamon. People also add other spices also.

@@shansi1931 hello ❤ thats a great question. If you make the tea with milk then ferment it I'm not sure what would happen. The kombucha starter tea would definitely ferment the milk but I don't know how it would taste. Would it turn sour? An alternative would be to make the tea using water then after it has fermented add the milk. I did a video where I used tea bag chai tea and made kombucha but I used water to make the tea. It turned out nice. Let me know if you give it a try I'm interested to hear about it. 😊

These are really good tips... I am surely gonna try this for my current batch of kombucha... As I stay in a warmer place(India) can you suggest anything which I should be careful while doing the second fermentation?

If it's hot there burp your bottles meaning release the cap so the pressure releases. Kombucha bottles have been known to explode.

Hi Christina. I'd love to share. I don't usually burp my bottles. I used to. I've never had a kombucha bottle expode. I have had koffucha explode because I put way too much sugar in the F2 without realizing. I believe the reason my kombucha has never exploded is because I generally let my first ferment go for 12 days. I think the people that get explosions ferment around 7 days. This is just a theory . But when I did burp them it was usually after 3 days in ferment 2 and I open the bottle enough to let the air out then tighten it back up. I hope this answered your question 😀☀️🌷💜🤸‍♀️🥃.

Hi David 🍻 I don't know. I am so sorry..I actually stopped buying that brand because I feel like they purposely make the bottle caps so that's its hard to replace. There are some stores that sell black caps that might (emphasis) work. Karma cultures and Kombuchakamp

Great video, thanks, on my third brew with new scoby, so building up the fizz as you said. By mistake I just doubled the sugar content in my first fermentation brew, do you think this will be a problem?

How do you get the sticky off the glass after removing the sticker from the store bought bottle? Ive washed mine in the dishwasher on the sanitization setting twice. 😬

You can rub some type of oil on them like olive oil or if you have any Goo Gone that would work. For the really hard ones I'll break out the brillo pads.

It depends on your taste. I let mine go 12-14 days. Some people only ferment for 7. It's best to taste it along the way to figure out how you like it.

When you fill a glass bottle to the top for the second fermentation, how often do you burp your bottle?

You can start with 3 days. If there is no fizz at all then wait 5 to 6..if you are somewhere it's always warm every day or so

I usually get a good fizz when I have it fermenting out on the table but once I put it in the fridge some of the bottles go flat. Is it the cold?

Hi Benny. Yes, that is correct. The colder temperatures slow down the fermentation process and start putting the yeast and bacteria into a dormant state.

Hello again .. have you made fizzy Lemon Kombucha? I tried adding natural Lemon juice with sugar but it didn't work.. the bottling second fermentation stopped ..

No I haven't tried it yet but I"m bottling today and will do that. That's strange it didn't work. Lemon juice and sugar in it along w/ the table sugar. How many days did you let the F2 sit?

I would just leave it longer. I usually let mine sit for a week. But every SCOBY is different. Yeah I'll let you know. The booch is ready today. Not sure what day I'll end up bottling but I'll let you know 😃

During winter I heard people heat kombucha and drink, that surely reduces benefits I think. Thanks for replying. I tasted kombucha this month and trying to brew my own first Time.

@@muskanjain4624 it could depend on what temperature they heat to. If it's just warming it up before it gets to simmer it probably doesn't change its benefits. But I am not 100% sure. Best wishes on your Kombucha journey 💙💚❤️

What stops the fizz fermenting process which no one seems to cover? Say its super in 3 days, put in fridge and the fermentation stops or etc?

Hi Rob. Lower temperatures slow down the fermenting process which can also decrease the fizz some but it will still be effervescent (bubbly) 🍾 so to answer your question putting in the fridge pretty much stops it because the bacteria and yeast start to go dormant. Does this answer your question?

If I get white fuzzy small things on the surface of water , my scoby was not floating it was down so, is it mold please reply ,this is after my 1st ferment

If it's fuzzy thats a clear sign of mold. Its ok for the scoby to sink to the bottom but if the stuff on top is fuzzy it's mold 😔

@@sanam3665 yes you should throw it out if you find mold and start fresh. I don't know what would happen if you drink moldy kombucha. How long ago did you drink it?

For 5 litre please how many scoby should I put in tea(when cold)

5 liters is a little over 1 gallon. I'd use 1 SCOBY and 1.5 cups of starter tea.

Dear, kombuchalizt. I wanna ask you about my kombucha I have been doing the second fermentation for 2 days when I see a lot of bubbles rising above the neck of the bottle and was trapped there. Then, in the night, I put my second fermentation in the refrigerator. In the morning the bubbles were gone and when my bottle was opened. there was no burst at all and there was no mess . But when I drink it tastes soda. Can you tell me why the "burst-ing" is gone?

Annisa, your English is very good. No need for pardon ❤. When you put kombucha in the fridge the cooler temperatures slow down the fermenting process. So that is why you didn't get the bursting. You could let your bottles sit out a few more days without burping them (opening the bottle to release air). That will build up the carbonation. Then put them in the fridge. With the built up carbonation, even with being in the fridge, you should be able to achieve that bursting that you enjoy. 😃 I enjoy it too. Its a satisfying feeling Cheers 🍻🌞
