These Korean vegetable pickles are made with a simple brine with 3 ingredients - soy sauce, vinegar and sugar! This versatile brine is so easy to adjust to your taste and works with a wide range of vegetables. The pickles can keep well in the fridge for weeks and months.

Ingredients (for 2 32-oz jars):
2 pounds cucumbers (Korean or Kirby pickling cucumbers) or any vegetables of choice
1 medium onion
4 to 5 green chili peppers or jalapeños
For the brine
1 cup soy sauce
½ cup sugar
½ cup vinegar (any clear type such as rice vinegar, white vinegar, etc.)

I just made mine yesterday, and I'm trying my best to give it 2 full days before I taste it! I had some veggies that I needed to clear out of the fridge, so I added Korean peppers, onions, shallot, cabbage, and carrots. I'll report back after the taste test🤗

@@ksb9469 thanks for the reminder. It is absolutely delicious. I always have a mason jar in the fridge at all times. It’s the perfect topper for a lot of meals, but my favorite is typically on top of a salmon rice bowl🤤

Hi! I love your channel & the recipes you share, & I do appreciate how Koreans incorporate vegetables in practically every meal of the day. I wanted to ask, you mentioned in the video that after 3 or 4 days of pickling, Koreans will take out the brine from the pickles then boil it down. After boiling it down, is the resulting brine solution returned to the pickled veggies it came from?

Thank you for the recipe. I have been enjoying picked veggies (chayote, Jicama, Sweet Pepper, Carrot..etc) with almost every meal. I am not sure if I should leave the veggies in the unopened jar until ready to eat, or if the veggies should be taken out after some days? Can unopened jars stay in a cool place, or do they need to be placed in the fridge?

Yes, it is. It will have a slight difference in flavor, but not necessarily a bad thing.

Is it possible to exclude the sugar entirely? I have a really low tolerance for the taste of sweetness.
