Learn how to make lobster thermidor with chef tutor Joel Selleck. This extravagant dish is perfect for New Year celebrations and great to present at dinner parties.
Taking you through the step by step process of how to prepare a whole lobster, Joel also teaches you how to make the rich thermidor sauce from scratch.
Ingredients:
3 tbsp unsalted butter
2 shallots, finely sliced
small bunch tarragon, plus 6 extra sprigs
300ml fresh fish stock
1 tbsp plain flour
150ml whole milk
3 tbsp double cream
2 egg yolks
½ whole nutmeg, freshly grated
2 tbsp English mustard
2 x frozen Canadian cooked lobsters, defrosted
4 tbsp cognac (or other brandy)
2 handfuls coarsely grated gruyère cheese (about 50g)

One of my favourite dishes, well explained. I made this a while back after lightly smoking the lobster tail meat. Smoked or otherwise - Delicious!

I have cooked many lobster thermidors and I'm sorry to say this is one I will not be repeating! The predominant flavour was the nutmeg, something I have never used before and no tobasco to give it a little lift. :(

If I were to boil my own lobster to get lobster stock what would you add? Also for the brandy part how long do you let it disappate the brandy before letting it cool and adding into the sauce?

I bought one of those lobsters from Waitrose, never again, it had about a tablespoon of meat in it.

Agreed. They’re absolutely miniature, and chewy too! Best buying decent raw, shell-on frozen prawns, which seem to suffer the freezing process a lot better, retaining their natural sweetness and firm (but not chewy!) texture.

I will stick to my Lobster Imperial merthods..!! Using mustard and anise flavored herbs destroys the flavor of the star of the show..!! The use of Sheldonaise sauce, is the key here, mild flavor with a touch of almond, but Nothing that overpowers the taste of the Lobster itself..!! Why anyone would use overpowering ingredients to muffle the lobsters flavor baffles me...I mean C'mon Man ..... If you love seafood, why would you use anything to drown out the flavor of it.?? Think Shrimp Scampy....butter, garlic, lemon juice Period..!! Quick, and delicious.!!

This might have been mildly useful if waitrose lobster wernt extremely expensive and constantly sold out, along with fully booked delivery slots months in advance when im disabled and they didnt care when contacted, which is disappointing for such a high end retailer.

Love BG, but really waiting for a vocal coach reaction to be realistic and pick on obvious vocal failures (which do come from tiredness as this is the end of the long concert), but I guess noone wants to have angry fans attack their channel over such underrated thing as truth. Pity
