Recipe by Momma Needs a Goal:
Maryland Crab Soup
1 lb. of Lump Crab Meat (or pick about 2 dozen crabs)
1 lb. of Crab Claw Meat
2 cups of Beef Broth
2 cans Diced Tomato with liquid
1 bg. (18.5 oz) Hanover Soup Basics Maryland Mixed Veggies for Crab Soup (if you can not find, use mixed veggies with string beans, potatoes, corn, lima beans and tomatoes).
1 cup Water (may need to add 1 more cup if not enough, start with one cup)
3 Tablespoons of Old Bay Seasoning (ONLY IF YOU ARE NOT USING THE HANOVER SOUP BASICS FOR CRAB SOUP)
If you are using the Hanover Soup Basics for Crab Soup you will only need about ½ tablespoon of Old Bay Seasoning. If picking your own crabs that have seasoning, wait until the soup is done before adding the Old Bay Seasoning. You don’t want to have too much; you can always add to the soup if you want it spicier.
Pepper and Sea Salt for taste
In a large pot add beef broth, water, diced tomatoes, veggies (and the seasoning packing if using Hanover Soup Basics for Crab Soup), Old Bay Seasoning (amount depends on the frozen veggies you use and if you picked your own crabs, see ingredient list for more details). DO NOT ADD MEAT YET!
Cook on med/low for ½ hour. If you picked your own crabs you want to add the claws and half crabs after ½ hour (do not add meat yet). Then cook for an additional ½ hour. Total of 1 hour. After an hour add crab meat and cook for an additional hour. Total cook time is 2 hours. Add salt and pepper to taste. At this point do a taste test, if you want spicier add a little more Old Bay Seasoning. Enjoy! This soup does freeze well.
