i'm french, and i can understand their pain when i see ketchup in a napolitain sauce which is supposed to gather the simple but yet powerful flavors of the tomato. But a fine recipe nonetheless even if it's not napolitan. 9/10 would gladly dig in !!!
I'm Filipino and I can understand why the Japanese like ketchup in their western style cuisine. Ketchup has vinegar, and the Japanese use a lot of vinegar. Not as much as Filipinos do, though. We also have ketchup based pasta dishes which are considered horrible by some, then they taste it and they are in love. 🍝
This is not Italian food and it doesn’t have anything to do with vinegar nor Italy at all. It is a very famous Japanese cafe food called Neapolitan, it is merely a name of Japanese cafe dish every Japanese knows but not coming from Italy but grown right here in Japan and became popular during Showa era so it’s been around for a long time more than 50 years at least. I’m Japanese actually living in Tokyo and lived in many different parts of the world also. We use Ketchup because it’s full of natural Umami flavor. If you didn’t know Japan has the most Michelin starred restaurants in the world, and we are big on Umami (naturally occurring amino acids flavor that gives you the feeling of “gosh it’s so tasty”). This isn’t of course not of Italian origin nor Michelin restaurant food but it is a very delicious cafe food which reminds everyone of Showa cafe that serves the best drip coffee. Try coming to Japan when this crazy corona thing settles down and visit retro cafe in Japan. It would take you back to some Ghibli movie scenes.
Im also filipino and i have to say, not all their versions of pasta is authentic in different countries but in italy, it is, italian chef’s should stop being mean to them and respect their ingredients of their pasta
