New Orleans Native Charlie Andrews Gives a demonstration on how to cook his delicious Creole Seafood Jambalaya! It is one of New Orleans most popular dishes. Jambalaya is a Louisiana creole dish that has Spanish and French influence. It consists of some type of sausage such as andouille and other meats and seafood mostly pork chicken or shrimp. My jambalaya has shrimp, Tasso ham, andouille smoked sausage and tomatoes in it. We start by sauteing out onion celery bell pepper and garlic until it becomes nice and caramelized. Then we had the Tasso ham and andouille smoked sausage. Followed by an additional onion, celery, bell pepper and garlic. Along with our diced tomatoes and my favorite blend of New Orleans seasonings. We let that cook down. Next, we add our seafood, rice and shrimp stock and we let it cook on a low temperature until the rice is cooked. Hope you'll give this popular New Orleans classic a try!
