Great video, very informative, lots of tips, no silly gimmicks, no distracting background music, a real pro. I'm gonna cook jambalaya in a few hours and out of all the videos I've watched on RU-vid to learn it, this one is the best by a wide margin.

Ok I’m back after making this version. I’ve made it for years as I’m in the South and we grew up on the stuff. This recipe is very authentic and delicious. Maybe the best I’ve made. One thing I do different is pour a box of shrimp stock ( Walmart has it) in a pot , put my discarded union skins , green bell peppers , celery pieces I won’t use into it while cutting my veggies. Also put the shrimp shells in there with a bay leaf and garlic, also a spoonful of “ Better than Bouillon “ garlic base, roasted chicken, ham and onion base. When you get ready for the liquid I strain the stock and pour in the magic. Chefs spice list is perfect.

I may be of Irish heritage, but damn, I love Cajun food! Gumbo, jambalaya, mudbug etouffee, etc. are fantastic! Combine those with corn pudding and/or cornbread, and I'm in heaven!

Very nice chet. Excellent job..I prefer Browning the chicken and sausage first. Remove from pot then adding it back when rice and stick is in. Also add shrimp for the final 10 minutes of cooking. Glad I found you.

I’ve been making Jambalaya for about 20 years and have always struggled to keep the rice from sticking to the bottom as I kept cooking it. Your solution to just lid it and let it sit for 20 minutes was such a great tip. Thanks!

Looks like a really great Creole style Jambalaya! Congrats! It has all the right elements and probably hits just right You could magnify and add another layer - Suggestion if you want to try it: if you want to brown the andouille sausage first and then use that fat and bacon fat to brown the chicken (use a portion of the cajun seasoning to coat it). They'll both have a nice layer of browning which adds a lot to the dish. Also, cutting the onion and peppers down to smaller dice will help them cook through and caramelize a bit. Keep on cookin!

To get the browning on the bottom of the dutch oven, I saw another video where they cooked the chicken and sausage first (about three-quarters of the way cooked) and then removed it from the dutch oven. What they had after removing the chicken and sausage was all that "goodness" on the bottom of the pot which is similar to what is called the socarat when cooking a spanish paella. Then they placed the onions in the pot to cook and sweat down, and then the rest of the holy trinity, seasonings and spcies, etc. Never made this dish but I am definitely going to make it in the next week or two. It looks amazing. Wish there was smellavision.

Yes! Get your Maillard reaction (brown) the chicken and sausage in the pot first, then remove. Deglaze the pot of the fond with the caramelization of the onions, then everything else just like he did. That's the only thing out of order here. Meat first, then the trinity.

This isn’t a Cajun jambalaya (it has tomatoes) BUT what you’ve described is a key technique in almost all Cajun dishes. We always brown the meat heavily, then remove, and sweat the veggies in those juices and scrape up the fond. We spend a lot of time building a base for gravies like that.

The best recipes I've seen cook the sausage first, to build some fond and render some of the andouille fat, then cook the chicken, to build more fond and add a little schmaltz to the mix, then deglaze with the onion, then the rest of the trinity, getting even more flavor. Putting the chicken in with the wet veggies almost guarantees you'll be steaming the chicken, not searing it.

That’s what’s up I use the seafood magic seasoning on both jambalaya and gumbo. That’s my go to and you can never go wrong using that stuff. And you are absolutely on point with using both seasoning mixes that include the dry herbs And using them all by themselves. This is what makes an incredible jambalaya and gives it amazing flavor. And you’re also absolutely right about using skinless boneless thighs in a soup or stew because it has better flavor and it does not get dry like you said. The only time using breast and jambalaya works out is if you’re using a whole entire chicken

Another great recipe, brother. Only thing I did differently is I used shell-on shrimp. I peeled the shrimp and used the shells to make my own shrimp stock by frying them till fragrant and adding chicken stock. I usually have some homemade shrimp stock in the freezer so I can use shelled shrimp in recipes sometimes.

Great technique (bacon grease & chicken smalz are THE BOMB in jambalaya)...one question and a thought... question first...what is the induction burner u are using and how do u like it? I lied...2 questions...do u use long grain or short grain rice (think short grain is more prone to becoming gummy, esp if not rinsed)? Just a couple thoughts...we use roasted red peppers in ours...roasting adds a LOT of additional flavor. I like to rub some of the spices on the chicken and brown it with the andouille before starting the veg to build up that bottom of the pan crust even more...just another layer of flavor.

The burner is gas used for camping. You can find them in the camping section at Walmart. I love it. Rice is long grain parboiled.

@@roybabineaux5353 you know the holy trinity is french right? As are most of the bases in creole cooking and cajun cooking because IT ALL CAME FROM THE FRENCH, ALL THEM DISHES. You cant seperate the two bc you couldnt have had creole cooking without french or cajun.

Been looking for a recipe to do my first jambalaya, and every video on YT is like 5-10 minutes, and they all just looked bland. When you said this ain't gonna be a bland jambalaya I was like, this is the one! And so glad I did. Home run!
