How to make Nyonya Bak Chang (Peranakan Glutinous Rice Dumpling)

This is my version of Nyonya Chang. A sweet and savoury rice dumpling with a distinct patch of blue from the blue pea flower. It is usually wrapped in pandan leaves but as I was not able to get broad pandan leaves, bamboo leaves were used instead. Nyonya changs are different from the rest due to the candied winter melon and coriander powder used to make the filling. Minced pork belly was also used for this recipe instead of finely diced pork.

I'm a Singaporean living in Australia and I miss home food so much. Your channel and the recipes are very good and I really enjoy the videos. I want to thank you for sharing such wonderful recipes. May I know why you boil the dumpling in water instead of steaming the dumpling. Will the water dilute the taste of dumpling?

That is the traditional way. You can also steam the dumpling but the taste and texture will be slightly different. Steaming is dependant on individual preference and taste.

Mr Eddie I have managed to get the giant pandan leaves to wrap the nonya zhang May i know how to prepare the giant pandan leaves prior to wrapping

I'm not very sure but I think you just rinse the leaves thoroughly and drain them dry in a basket.

I just made some following someone else's recipe. There's bean paste in theirs. Is it authentic to put bean paste? Plus they roasted the coriander seeds then ground them. Personally i think the taste of the coriander is too strong that way. I prefer the pre-packaged one. They also dont use nutmeg and 5 spice. 🤷‍♀️ So which is one is really authentic?

You can buy the bamboo leaves online. Vacuum sealed from China. Shopee or Lazada.

No chemicals at all. The colour is from the blue pea flower and has good nutritional value. Using this colour is traditional to this Nyonya rice dumpling.
