I really love the showmanship Japanese Chefs seem to have, whether it's at an Isakaya or Iron Chef Kurogi, everyone is super passionate and it's so easy to see. Togashi is a trained chef, and in a lot of places around the world chefs are supposed to be super composed and uber-focused, and not really personable. But I can see that a lot of Japanese chefs like to have fun with what they're doing and to get their customers having fun too. I want to experience it first hand.

+Simon and Martina If you don't have okonomiyaki flour, cake flour works great! PS Tonkotsu sauce is really easy to make, so take the time and don't use American BBQ! Heres what I use 1/3 cup ketchup 2 tablespoons Worcestershire sauce 1 tablespoon soy sauce 1 tablespoon mirin 1 tablespoon sugar 1 teaspoon Dijon mustard 1/4 teaspoon garlic powder or just 1 Tbsp. ketchup 2½ tsp. Worcestershire sauce 1½ tsp. oyster sauce 1⅛ tsp. sugar

You should try it with pancetta or prosciutto instead, it's wayyy better! (If you can find prosciutto San Daniele or even a 12-20mo Prosciutto de Parma you are golden!) Also try using Kewpie mayonnaise and if you can find it a little dab of Hellman's mayonnaise too, it's the perfect mix of sweet style and salty style mayo!

Recipe for the cucumber salad Simon loves: -1 tsp sesame oil -1 tsp soy sauce -1 tsp rice vinegar( i used sushi vinegar) -1 tsp minced garlic -1 tsp sugar -some sprinkle of chili (adjust to taste) >wash the cucumbers before making the sauce and cut them into mouth sized pieces. >Soak the cucumber pieces in salt and ice water and leave in freezer. >Rinse the cucumber pieces and put in a bowl with the sauce and mix. -Tada . bone apple tea >_

Secret trick for the flip: have another pan the same size or slightly bigger heating and use that as a top to turn the glorious mass into. Best to have the same size pan. Or you can use a plate, quickly flip onto the plate and slide back into the pan, but it might stick.

Yep, all of those things are pretty cheap where I live. I always have flour and eggs on hand and green onions and cabbage is only a few dollars here in Mobile. We always have bacon on hand so I might try to make this tonight, I just need bonito flakes. lol

I always return to this video when I make okonomiaki. Today I tried it with chickpea flour and corn starch, since I was diagnosed with coeliac disease recently. It worked like a charm. Thank you so much for this very entertaining video!

Thank you for introducing him to us, Simon and Martina! I love Japanese food but I have yet to really dive into cooking my own. I subscribed to his channel, and his website looks amazing! I like how he has vegan and vegetarian options too. :D I'm so excited to try this out! Question though to anyone out there who knows. Japanese mayo is different from regular mayo, right? I normally hate mayo, but whenever I eat it in Japanese food, I am somehow okay with it. XD

Hope it is okay. Here is the recipe: Bacon Okonomiyaki Recipe -7 heaping tbsp Okonomiyaki flour mix -1/2 head of green cabbage -4-6 stalks of green onion -1 egg -3/4 cup of cold water -5-6 thinly sliced bacon strips Garnish: -real mayonnaise (made with egg not olive oil) -okonomiyaki/tonkatsu sauce or BBQ sauce that isn’t smokey (optional substitution: 3 tbs of ketchup + 1 tbs worcestershire sauce +1 tsp soy sauce) -bonito flakes Cooking Supplies: -large mixing bowl -whisk -measuring cups -measuring spoons -flat frying pan + fitted lid -large flipper Directions: 1. Finely chop the cabbage and green onions. 2. In a big mixing bowl, whisk one egg and the water. 3. Add the flour and whisk together until mixed. It should resemble pancake batter. Don’t keep whisking it until it is totally smooth or your pancake will be tough! 4. Dump in all the cabbage and green onions into the batter and mix up. It will look like there is not enough batter but the cabbage will give off water as it cooks! 5. Bacon time! Head to a large flat frying pan and cook the bacon for around 2-3 minutes on each side on medium-low heat. The bacon will keep cooking as you cook the pancake so you don’t want to fully cook it right now. 6. Drain the excess oil out of the pan before you add the batter so that the pancake isn’t super greasy. We didn’t show that in the video but it is an important step!!! 6. After you drained off the bacon grease, rearrange the bacon back into the pan and dump the batter onto the bacon. Spread the batter out evenly into a circle pattern over the bacon, pressing down so the bacon sticks to the batter. Cover the lid tightly, set it to medium heat, and set the timer to 4 minutes. 7. After 4 minutes, using the flipper, check under the pancake to make sure your bacon isn’t burning. If it looks nicely browned, flip your pancake over. Use all the skills Togashi. DO IT. FLIP IT! I BELIEVE IN YOU!!! 8. After you destroyed your pancake trying to flip it, smooth it back out into a circle (I mean…you totally did it!!! WOW!) and cook for another 3 minutes with the lid on. 9. BEEP! Time’s up! Check the centre of the pancake with a wooden chopstick or toothpick. If it comes back dry, it’s ready! If it is gooey, keep cooking with the lid on for another 2 minutes, periodically checking so you don’t over cook it. 10. Dump it onto a cutting board. Cut it up into pieces and place it on a plate. Coat it in the sauce, mayonnaise, and sprinkle on bonito flakes. This part is really up to your taste, but Japan really does love mayo. The mayo in Japan is actually really amazing and tastes different than North American mayo!

I MADE THIS AND GUYS THIS IS SO GOOD! Some japanese stores also have the okonomoyaki set packets that have everything in it. It's about $4 and makes 2 pancakes. All you need to add is the sauce, mayo, and bonito flakes

Japanese mayonnaise is the best and without it Japanese food (like takoyaki or okonomiyaki) taste bland. I made salmon and prawn okonomiyaki and it is heavenly😇 you guys should give it a try 😁

I honestly don't expect you guys to read this but I just want to say thank you for your videos. They always make me smile especially now that I'm dealing with depression from moving away from my mom and from having family problems. Tonight was a night that I was crying because of that and this honestly brought a smile to my face and made me laugh. I really hope to see more of these cooking videos since I like to experiment in the kitchen and again thanks a lot and love you guys.

the bacon gets crispy because of the moisture in the cavage. Just like when you use water to cookdown the bacon and make it extra crispy using that methode.

I also use a GoPro to film like that on my second channel. Ashleysart Attack. And I just got one of those floor lamps with the moveable arms, and I tape the GoPro to the lamp. So it's my tripod and lights at the same time.

I just tried this recipe tonight for dinner, however I substituted 1C. frozen Organic kale and 1C. frozen Org. spinach (because they are more nutrient dense than cabbage) and it worked out great! mine took much longer to set up and become a pancake than the recipe said, but I attribute this to excess water in the frozen veggies. This is def one of my favorite meals now!!

I tried the recipe for the batter but I didn't have pork belly. I used my leftover sukiyaki-cut beef with mushrooms, used it as base, added shredded lettuce (I was desperate to have okonomiyaki and only had those in the fridge), popped it in the pan, made the perfect fliparoonie and I am so thankful of this fun and quirky video.

I don't know why, but I really enjoy watching eyk videos. Not only are their videos really informational, but they make the effort to reach out in the Japanese community. Not hating on other J-vloggers, but I really like to see more of Western youtubers hanging out with other Japanese(/youtubers).

+miyawa21My best friend hates all kinds of mayo, including japanese mayo lol. Even when we go out to eat, she asks and checks the food for mayo. Some people just don't like mayo. I can't eat a lot of Japanese mayo either, I hate mustard, and it has a mustard-y taste, at least the kewpie brand.

***** oh snap i didnt know that. i just bought kewpie at the store for things like karaage and the like, i dont really use it with stuff that would call for us mayo (mostly bc it's like $8 a bottle @~@)

Just made this for lunch and it was great! Hubby loooved it. Instead of bonito flakes I used bonito flavoured seasoning intended to make rice balls and it was still yummy!

Okonomiyaki is honestly so easy to make and there's a bunch of different variations! My mom literally made this for dinner last night but she added seafood and kimchi to the batter!

I watched this video when it first came out but I just now was able to make it. And it's so amazingly good and really easy too! I used regular all-purpose flour and oyster sauce since I knew it is good with eggs and cabbage. Thank you so much for sharing! ❤
