* 75g salt
* 30g sugar
* 1 tsp caraway seed powder
* 1 tsp dried marjoram
* 1/2 tsp white pepper
* 1/4 tsp of ground nutmeg
* a pinch of clove
* sausage casing of choice
* 500g fatty pork, like neck
* 1 egg white
* 50g ice cubes
* 1 Tbsp seasoning
* 2 Tbsp cold water
* 50g concentrated tomato paste
* 40g apple sauce
* 1 tsp Worcestershire saucestershire
* 1 tsp balsamic
* 1/2 tsp salt
* 1 tsp sugar
* 1 tsp curry powder
* 50g water
* 2 tsp turmeric powder
* 1/2 tsp mustard seeds
* 1/2 tsp coriander seeds
* 1/2 tsp fennugreek seeds
* 1/2 tsp cumin seeds
* 1/2 tsp fennel seeds
* 1/2 tsp salt
* 1/2 tsp sugar

Years ago I traveled to Germany for a classical music festival. In the end my most favorite part was the currywurst. I fell in love with it and the country of Germany on the first bite. I hope to make it back soon! Thank you for the vid. Subbed!

quick tip: put all of the sausage casing on the end of the sausage maker, then roll it off as you fill it. don't try to squeeze the meat down the casing. I think I'm going to have to try this recipe though.

Yeah, that will definitely make your life easier. And extruding the sausage out onto a moistened metal sheet pan so it doesn't stick while you're filling the casing.

Enjoyed your video, was raised in Berlin, but moved to the US 50 yrs ago , the Currywurst prep I remember was no case sausage they sprinkled curry powder, paprika worcestershire sauce and ketchup over it . That is the way I have made it here . Thank you

Dude....I'm a cook and I lived in Bavaria for a year and a half. Your series are absolutely spot on. There are (almost literally) 0 doner shops in the states. The market is wide open and I have been thinking for years that the best way to introduce them to the doner is by just having it called a sandwich shop. Anyway, I digress. Thanks for covering the classics and I can't wait to see what else you share with us.

If I had to suggest what strikes a visitor to Germany as "different" - and unfortunately I've not been to Berlin, so this is based on Dusseldorf & Munich (just saying, if any of this is applicable/useful). 1) Lack of beer choice. I mean this as a good thing. Beer comes in 3 flavours Light/Dark/Wheat - not corporate branded. Unlike a lot of the world where there the same beers are available everywhere, your choice of venue in Germany defines what you'll be drinking. Venues are not interchangeable - the preference of brewery/beer-type will shape where you should drink. 2) Food. Schweinshaxe with a dumpling the size of your head is immeasurably better than the British "packet of crisps" to accompany drinking. What's maybe unique though to Germany (well maybe similar to Spanish tapas), are all the small plates of food you can get with your beer. I'll accept this may be less magical to the locals, but as a visitor it's great to be able to spend an evening sat in once place, flagging down passing beer and food, and just paying based on a shredded beer-mat at the end of the evening

@@mynameisandong Definitely one of the better places I've randomly gone for work. The one that stands out is raw pork mince (from google, I guess it was "Mett") France does raw beef, middle-east does raw lamb - but I'd never had raw pork before. The beer definitely helps lower the barrier for trial (it was delicious). In the morning I'd escape the misery of a hotel breakfast in the local Kamps (yes, I know it's not a family owned bakery) - but way better bread and coffee than my mid-priced hotel. Then after work "a beer or two"... which takes me back to my post above. You didn't mean to go out for the night, but you find yourself at a nice table, in a nice bar. Then the nice staff with the eternally full tray of "tiny beers" keep swinging by, and they're so tiny.. what harm could another do? Then you think you should probably eat dinner, but they come around offering some delicious little plates that stave off the hunger...and then you realize you should have been in bed hours ago, your beer mat looks like a doily, and when you try to stand your legs seem to be malfunctioning slightly. Fortunately small stalls supplying fortifying wurst seem to have magically appeared lighting the route back to your bed. I never acquired the taste for curry-wurst (too sweet) - but have fond memories of regular delicious sausage selections on those bits of card that are 'almost, but not quite' a plate - and a selection mustards to dip them in. Life-saving.

@@mynameisandong Yes, Düsseldorf, so suspect similar to Köln based on geography. Maybe another interesting thing about Germany I'd not really considered - is that there is still a lot of 'regionality' (for want of a better word). I'd previously presumed the whole country was beer steins & dirndls (oktoberfest seems to dominate the international view of a night out in germany). 14 years I was stationed in Germany. The one thing I miss most is Curry wurst. You can't really find a good Broetchen here so Iong for both, the perfect Curry sauce, a great Wurst, and the broetchen. The first thing I eat each time I go back to Germany is Curry Wurst. This recipe may save me. I must try it. Thank you

I'm Danish, and I really love currywurst. Homemade or the real deal in Berlin. It's always good. Has to be real german bratwurst though, I think. Currywurst is so underrated and unfortunately Danish people look down on it.

When I got to Germany to visit family, I always eat currywurst! I LOVE IT! I live in MN, USA, so there's no currywurst anywhere around here. Very excited to try your recipe next time the craving hits!

Tbh, if you don’t mind the „heresy“ you can basically use any sausage and turn it into Currywurst. The bigger part, imo, is the sauce. Either spice up ketchup with chili/pepper and curry powder, or make it from scratch (sear finely diced onions, add some tomatoes, add ground black pepper, pinch of salt and curry powder and other spices to your liking). Bottom line is, if you have access to any kind of sausage, tomatoes/ketchup and curry powder or paste…you can make Currywurst. Don’t let your dreams be dreams, just do it :)

But you must understand that curry powder is actually a blend of spices used in Tamil cuisine. We use it in most of our curries, except that we use the ingredients separately instead of premade mix!

@@brightlight6536 I personally suggest people to never use pre-made spices. I grinding them separately and mixing them is tough, but it's worth the hassle and much safer, better and long lasting than pre-made one. Plus it's cheaper.

No, we do have curry powders and pastes in India. We call them sabzi masala. Curry powder has mostly same spices that the sabzi masala and garam masala that most Indians use at home. Sure, they might have slight variations in ingredients and vary in the relative proportions of each, but so do the foundational spice mixes among different regions, cultures, brands and households within India.There is no centralized authority that is codifying any of this. Therefore, you can't recipe-police spice mixes. Even for more distinct preparations, for example, a chicken korma and the like, with the exception of some highly historical signature recipes from some local traditions or very region specific recipes, there is rarely a definite spice composition that everybody has to use. Different restaurant have different spice mixes for that. There are general tendencies and flavor profiles that have passed down from region to region, cook to cook and everyone else is trying to replicate that as per their own tastes and accessibility. A Bengali mother's everyday chicken curry will have a noticeably different spice mix from that preferred in a Punjabi family's or a Tamil's. So what, if a British family wants to use those same spices with their chicken curry in a slightly different composition. Curry powder is nothing but a baseline spice mix that most Westerners would use as a dedicated flavoring when trying to recreate a general flavor of Indian cuisine. Most households in India do the same. We use pre-prepared spice mixes, whether you buy it from a store or you're from an adulteration-wary family and mum has a mix of basic foundational spices that she cleaned and ground from whole spices herself. And not only does that spice mix go in almost every spice application, in a lot of recipes that's the only point at which you're adding the spice elements for the bulk of the dish. With the exception of really good restaurants or some very passionate home cooks, no one is selecting and calibrating a spice selection tailored for different ingredients or recipes. So, a regular Indian is neither significantly more informed nor more adept in the use of spices than an average Westerner. And finally, on a lighter note, should Indians really be entitled to the snobbery of nitpicking other cultures on how they adapt and simplify Indian influences to suit their own palates and lifestyles, when we are also extremely guilty of stereotyping entire cuisines around it's one representative? Please refer to: Pizza seasoning = Italian food. Soy sauce, chilli sauce, fried rice spice mix = Chinese food, etc.

"There's no such thing as curry powder in India" Indeed, it's a British invention isn't it? Worcestershire sauce obviously is too. Funny how British cuisine is so looked down upon but other countries are constantly using our stuff in their recipes! Cheddar cheese is another one that comes to mind (clearly the king of cheeses!)

Version I heard was that the inventor had gotten hold of curry powder, ketchup & Worcs from the garrison in the Brit sector of postwar Berlin. Is it true? No idea. Not really important in the grand scheme of things - what matters is she had them and she used them to make some deliciousness :D

If your sausage casings smell bad DONT USE THEM Ohh yeah,and to stuff a sausage with a machine: Slip ALL of the casing onto the spout except a few inches. (run water trough the inside of the casing first to aid applying it to the spout) Pinch the free end of the casing and start extruding. As the filling extrudes let the casing slip off the spout. Its way WAY easier than what is shown here.

...when I visited my late brother, Tim, in Berlin in 1989 he introduced me to Donner Kebab..I DO seriously miss that. "Communist Currywurst"... I LOVE that!!! the Wall fell on the night of my 40th birthday, 9 November 1989...Thank God I saw Berlin both BEFORE and AFTER the wall fell...

That dish looks like it has sooooooooooooooooooooooooo much flavor, but it's so much work! Making the sausage, making the very involved sauce, making the spice mix, it's a lot to do. Especially for those of us who don't usually have those ingredients or tools on hand.

Nice Video and kudos for doing your own sausages! I had Berlin Currywurst multiple times but it did not leave any lasting impression except that i was very affordable (as is food in Berlin). The best Currywurst or CPM (Currywurst-Pommes-Mayo) i ever tasted was in Bochum at a convention center from a greasy food mobile as it was closing for the day. The sausage was homemade as were the sauce and fries. The CPM was better than the much praised Berlin Currywurst in my opinion. The Sausage was grilled on coal and not fried. I suspect that the surrounding setting plays a big role in the taste though. I had my CPM at around midnight after an exhausting day at the convention... maybe i was just really hungry. CPM is a typical Ruhrpott after-midnight snack in the city. It hits the spot where you really need something to top your beer off with ;-). When i get my hot Currywurst in a cold night and feel the warmth spreading as i eat is really nostalgic for me.

I know I didn’t put as much time in the recipe as you but I bought beer Brauts from Aldi’s grocery store. Made in Germany, broiled and fried them. Them made a sauce with curry. They tasted amazing. Thank you.

Indem man nicht den typisch deutschen Weg geht und sich nicht davor scheut, Sprachen auf Geräten, in Spielen, bei Medien wie Serien etc. auf Englisch zu wechseln und tatsächlich versucht Englisch zu sprechen, vor allem mit Ausländern, und nicht nur als Witz.

I worked at a startup right next to Konnopke. Literally 50m. The amount of people they manage to serve lunch to was crazy. A 10m long line but you only had to wait a couple of minutes. So damn good.

The history version i heard of Currywurst was just after WW2. A german woman wanted to make sausage but dont have necessary herb/spices for usual recipe. So she got some curry powder from British soldier. Apparently, people love the recipe and it now a staple.

Bin vor kurzem über dein Döner Video auf diesen Kanal gestoßen und war schon beeindruckt. Aber mit diesem Video schießt du echt de Vogel ab! Hervorragend Qualität, coole Infos und das alles sympatisch rübergebracht. Ich hoffe diesee Kanal geht ab wie Schmidts Katze. funny i live next door in the Netherlands. I like my bratwourst with ketchup and curry powder. My grandparents were from Germany, but I don;t remember eating it like that, but i might have picked it up from them, thanks for the youth sentiment

I suspect that the original "curry" in currywurst sauce was obtained from british troops station in Berlin. My father told me that the british army used sharwoods medium madras curry powder, my mother who is german use to make beef curry at least once a week and would make currywurst acouple of times a month, her version with british cumberland sausage [dads favorite] and a sauce like you make but with sharwoods medium madras powder. Which according to sharwoods contains: Coriander (32%), Cumin, Salt, Turmeric, Paprika, Cinnamon, Rice Flour, Fenugreek (3%), Pimento, Garlic Powder, Onion Powder, Parsley, Mustard Seed, Black Pepper, Dill Seed, Chilli, Clove, Fennel Seed, Celery Seed, Ginger, Bay, Cardamom, Nutmeg. Never tried currywurst in Berlin sadly, but had it almost daily when visiting family in Hamburg and mums tasted similar to what i had there, each place had it's own version hotter/sweeter/salty etc find one that you preffered and that was your place. Thanks for this video brings back so many fond memories of good times with my family. Take care, God bless one and all.

"Curry powder" also has chilli powder in it, you're missing that. "Curry powder" is used by novices in place of separate spices, chilli, turmeric, coriander and cumin. Garam masala is also used along with those spices but added usually at the end, they may even contain the same spices.

I don't think he's necessarily missing anything, he's not making "curry powder" he's just making his own spice mix that works best for his recipe, or as he calls it, Berlin Masala.

My curry sauce: 1 jar (250g) of plums in their own juice 300g of tomato ketchup 200mL of coke Half a medium onion, grated 1 chili, chopped 1 clove of garlic, chopped a pinky-sized piece of ginger, chopped Some Worcestershire sauce A squeeze of lemon Your favorite curry spice mix (mine includes cinnamon, nutmeg, clove, paprika, chili powder, turmeric, and as a little cheat some garam masala) salt pepper Reduce the coke and the plum juice to a syrup in a medium sized pot, add your ketchup, chopped vegetables and plums and let it cook on low heat for an hour, add water if necessary. Purée to your desired consistency then add the spices, Worcestershire sauce and lemon juice and let it simmer for another 10-15 minutes, then season to your taste with salt and pepper.

The curry powder formula is pretty spot on, coming from an Indian who learnt this while staying abroad. The only ingredient missing is dried red chilli and curry leaves. Usually coriander powder provides the texture, the garam masala provides flavor, chilli powder the heat and turmeric a little salty+ citrusy flavor in a curry. But, great job :).

In Germany we dont like Currywurst too hot, kids eat that often too and our mouth can't handle it. Also very much people don't really like coriander.

as a dutchman i am very aware of the red Hela sauce bottles, they're everwhere around here too, they are cheaper than most A brand over here too for the same volume, yet a favorite with many i think the red got lighter over the years though, pretty sure 20 years ago my grandma already had it in the fridge, and i remember the color being way darker, more bordeaux-like then again, pretty sure the old one said "curry gewürz" on it and made no mention of ketchup, either they rebranded or they're really hard to find old-style here in the netherlands we call the gewürz sauce "curry" and the spice powder "kerrie(poeder)", so there's no real confusion over that :) everytime i try to find a proper translation, i realize how much Dutch is in between english and german

Richtig gutes Video, zumindest von meinem Standpunkt als Laie. Gab echt keinen Punkt der mich genervt hat, mach weiter and keep growing. Wie wär's mal mit Kartoffelknödel "from scratch"? Ist bestimmt ne Herausforderung aber das Ergebnis lohnt, vorallem wenn man sie am nächsten Tag in scheiben geschnitten anbrät.
