Thank you!!! I was think that once he said 200 degrees… way over cooked and he should be jailed for at least a year! Also, stripped away from any propane, charcoal, pellet, smoker/grill so he can never commit this monstrosity crime ever again 😂

My preference is pulling it off at 140 and giving it a nice sear after. Then wrapping in tin foil while it cools down

Have any of you bashing smoked tri-tip ever actually try to do it themselves? I have smoked tri-tip on numerous occasions and it comes out just like brisket. Taking it to 200° makes the meat so damn tender. You just have to know how to properly smoke meats. You all saying its so cheap then why not just try it for yourself instead of being so close minded

His looked a bit dry, but totally agree. I smoked tri tips to around 200 all the time and they taste great. Last time I kept some of the fat instead of trimming fully and end product was super tasty and tender. And I order rare/medium rare steaks all the time, so it’s not like I prefer well done only lol

You have to cook a brisket to the higher temps bc of how tough that cut is. A Tri tip doesn’t NEED to be done like a brisket. It is naturally more tender from the start. Not knocking this method. I’ve done it a few times. But it is definitely a chewy bite. This is coming from a competition pit master.

I’ve tried this method years ago. It’s ok. Definitely a lot more chew. Cooking till 125 then giving it a sear is my preferred method.

If you had chew it was done wrong. You have to buy an untrimmed tri tip to smoke it like a brisket. When I cook them I don't hang on temp and cook till its it's probe tender, but I use untrimmed so I can leave a decent fat cap on. That will break the meat down and give you that brisket pull apart melt in your mouth tri tip. This dude is whack using a tri tip with no fat...he ruined that thing. If done right they are dame good eatin.

I'll smoke my tritip for an hour and a half at like 130 to take in that smoke then bump it up to 225 for another hour and a half till it gets to 130 then rub some bacon fat on it and throw it on the Propane grill so it gets a nice chart for like two minutes Each side. Let it sit for around 15-20 min and that Carry over cooks putting the meat right at 135 Internal. Slice against the grain and the meat is super tender with that great smokey flavor. I like it better than Brisket

Not enough fat...they can be cooked like that but are much better coming off around 125 and then giving it a little kiss on a skillet. T​@philcampbell85

Excuse me sir, no tritip should ever reach above 130 degrees internal for any reason. 200 is just poor cooking. It aint a brisket!

Tried it tonight 225 till 150 150 rapped in butcher paper with tallow Rapped it also in aluminum Heat till 200 Rested 1 hr Fantastic!! Don’t knock it till you try it

150 is also over cooked. Pull it off at 125 and rest it in a foil tent…..temp will raise to 135 which is medium rare.

Looks dry. I smoke prime tri-tip all the time at 225 to an internal of 120 and reverse sear…..turns out amazing

Yeah a tri-tip ain’t a brisket. It doesn’t have all that connective tissue and collagen running through it that will melt over the course of several hours and render the meat fall apart render. You’ll just be getting a well done bottom round roast basically.
