Do this instead for the save command so it lasts forever: /execute as @e[name=Grumm] at @s run /structure save plinko ~~~ ~~~ memory

The bug your talking about with the structure is because you're saving the structure to memory instead of disk. It defaults to memory when you don't specify which one you want.
