Pork/Chicken adobo is a scrumptious and hearty dish to eat on days when you want to relax with the ohana. Adobo was brought to Hawaii from the Philippines and has been part of Hawaii’s wide variety of local meals. It is now considered to be a comfort food and a simple dish to make. Adobo is a very versatile dish. It could either be chicken or pork. Growing up, I always had it as pork with potatoes as a filler. #adobo #chicken #pork
Ingredients:
1.5 lbs chicken thighs, pork butt/shoulder, or pork belly
½ cup distilled white vinegar
¼ cup shoyu (soy sauce)
3 cloves crushed garlic
¼ tsp salt
¼ tsp peppercorns
2 bay leaves
½ cup water
2 russet potatoes
½ tbsp cornstarch
1 tbsp water
