Hi I am from India, more specifically from South India. In South India we get the same variety of plantain . When ripe we make a dish called appam which is sweet. As you are mixing flour and the banana we also mix banana , flour jaggery and coconut and fry them. We don’t add yeast but rest the mixture for sometime. Since the climate in South India is a tropical one just as Africa I feel how similar are our food items. We also make use of banana flowers in our diet . Of course we are pure vegetarians. You can cut the bottom of a plastic bottle , put your dough in de bottle, set it up side down , press is slowly and cut the dough that comes out of the bottle in your size directly in the pan😊
