Bud. I've cooked Italian food at home for 30 years. I'm not a bad cook. Frankly, I skipped these simple Roman dishes thinking they were too simple. Saw your channel and tried. It was an revelation. This is one of the few videos in English where they teach you to make it the right way. You see Babish adding butter and calling it 'an easy Cacio e Pepe' when it's just wrong, others add olive oil, etc. This is the correct way. Good job dude. I only find videos in pure Italian that do it this same way.

I love how you walk through prep, the cooking plan- beginning to end, then execute. There is nothing more frustrating than watching a host add ingredients only to have them flash on screen for 2 seconds. Excellent technique, viewer knows exactly what to expect and when. Possible improvements to make it creamier: - set aside some water from the pot and let it cool down before mixing it with cheese. - mix the cheese with pasta in a separate bowl (if the pan is too hot, when the cheese is touching it it's gonna get lumpy).

the usual recommendation is to always remove the dish from the heat before adding cheese. Throwing it in a different vessel is definitely an effective way to do that.

So i tried this recipe here in India using regular grated processed cheese, weikfield(economical brand name) spaghetti and desi peppercorns and was BLOWN AWAY with how complex the flavors were that came out of this.. hey, this is a year too late but I just wanted to say I'm really proud of you for trying a recipe with what you had. There is a lot to be said for keeping strictly to traditions, but at the same time a lot of the tastiest food has been created by hungry people being creative with what is in their cupboards. I used to watch a lot of Indian cooking videos and not try to make them because I didn't have the exact spices, and I was really missing out. Now I'm not afraid to just miss something out (aseofetida is really hard to get where I am, for example) - it might not be 100% exact, but it's normally still damn tasty. I imagine when if I make them again with the missing ingredients, it will be better, but I still love what I made

What I love about your show is that you have accessible recipes. A lot of RU-vid chefs use ingredients and equipment most people can’t afford and have access to. Also your food is amazing and I watch all your videos and have made mostly all of your recipes. Keep up the good work man

Love cacio e pepe and I’ve seen it done on RU-vid a few different ways. I like your method of mixing the pasta water with the cheese to create a paste seems a lot easier to emulsify into the pasta that way than just putting the grated cheese in the pasta with the pasta water. Thank you!

Managing the pasta water is where 100% of the trickiness comes in for cacio e pepe, you need to use way more than you think you need because as you said the sauce tightens up as it cools, and it also needs to cool down from boiling just a bit before combining with the cheese or it'll seize up and turn into gobs of rubber

Definetly this! Parmesan is great, but is almost impossible to emulsify with the pasta water. I've tried with it and it did not work. The cheese melted and it was not creamy. Delicious, but not creamy. Maybe because water temperature? Anyway, thanks for the recipe! One more subscriber to you, mister!

I have been practicing this dish for a while. Today a friend visited improvised and I cooked this recipe as "a simple fast dish"... And he was amazed by the simplicity, the speed and how flavorful this recipe is. He ate two plates and asked if there was more left. A great simple dish to enjoy with friends.

Bro. This recipe is INSANE. I knew it was legit when you only had three ingredients. Absolutely fantastic, just made it and it turned out great. Finely ground cheese and the simmered pepper water make a huge difference for the integration of the sauce. I've been trying to get this right for years and this technique knocks it out of the park. I know this comment is 2 years old, but where in Germany do you live? I live quite near Berlin in Brandenburg (state) and DOP Pecorino is easy to come by in many of the shops I go to. What I can't find is Pancetta/Guanciale, 00 flour or low-moisture mozzarella, but Pecorino is fine. Unless I travel into Berlin to Italian supermarkets, it is impossible to find what I want, so the only truly traditional Roman dish I can make is cacio e pepe

I cooked thjs today and my wife absolutely loved it! The sauce came out more liquidy than yours so I still need to improve the implementation a bit. Taste was great, nutty, flowery and cheesy. Thanks for sharing!

I am another Italian who endorse your recipe :-) I wanted to add that (seasoned) pecorino can be kept refrigerated for some month, also pasta and pepper don't go bad, so this a recipe for when there is nothing else left home, and black pepper has healthy properties :)

We have a old style fireplace in our kitchen which runs right now throughout winter season. I put the plates on there, and take them off when iam 10 minutes into finishing the dish. Works great for cacio e pepe. Thanks for the recipes.

Glad the finally find this video in English! Many times I tired to make this dish but failed. But thanks to the beauty of RU-vid and cooking I watched an Italian chef explaining how to make this dish. Did I understand a single thing the Italian chef was saying? No, but watching him was all that I needed to know. This video recipe is the exact way the Italian chef demonstrated! Minus grinding the peppercorn by hand :)

I don't know if you're italian, anyway you made it in the perfect way, as Romans do! On youtube, we italians are often accused of being arrogant when it's about an italian recipes... I've been even called racist for criticizing a video recipe from an afro-american guy. But that's because like 99% of the videos are just super bad and show you how to ruin an easy, good recipe and a light yet delicious meal. Again, you did it perfectly so I can just compliment your work! Amazing video. Keep up the good work

@@guser436 Well we can discuss about what is an improvement. Most recipes add tons of ingredient and some of them are just bad (ketchup, cream, soy sauce, cheddar...) so that I would say those recipe are actually worsening the original one

I know this isn’t the 100% most authentic way to cook this dish, but as a lover of Italian food, but a slow cook, I love this method as it means that the food doesn’t get cold when mixing it on the plate ect 😍

I’m really passionate about food and cooking and I know it’s like a meme that people find Italians ridiculously sensitive about the “right” and “traditional” way to cook their dishes, but I totally get it. When something’s got centuries of history behind its creation you have to respect that. I also get pissed when people mess up or add weird things to my native food, Korean dishes. As much as I like Babish(in general and also for introducing cacio e pepe to me) he’s more about flair and adding his own things to recipes so I was looking for an accurate version of the process. This was very informative, I was at the brink of trying to translate the videos narrated in Italian. Thanks and subscribed.

Ive made Cacio e Pepe a few times and this method is far superior. I was skeptical at first but gave it a shot because I was craving it. I didnt end up with stringy pecorino globs but instead a delicious sauce. Thanks brotha!

Since COVID, I’ve been super tied up with work (nurse at a major hospital). Now it’s picking up again with the new variant. Today is was looking up this dish to cook. I ended up watching an Italian chef react to videos made by others cooking the same dish. He was honest and fair but none got it right. I then come to your video. I am pleased to say, he would have approved of you video, 100%. The biggest mistake pay for made was not making the pecorino cream before putting it in the pasta. He said this would make it stringing if skip. Well done my friend. And as a sidenote, I want to come across pecorino Romano within the last couple of years. I wish I could live the first 45 years of my life over again with this cheese in it. But it is incredibly hard to get in Mississippi.
