I've watched a few videos on how to cook this vegetable and I can honestly tell you that this is by far the best! This is the most beautifully cooked asparagus I've seen.
I've made this several times since first seeing the recipe a few weeks ago and I'm completely addicted now to cooking asparagus this way. You've really raised my awareness of how much flavor roasting adds to veggies.

I believe this is the best way to eat asparagus. I do add some garlic powder and grated parmesan but it's the great flavor of being roasted I love the most. Many vegetables taste so much better roasted.
I normally pan-fry asparagus in butter but today I couldn't because I had no room on the stove-top for a frying pan so I googled "roasted asparagus" (because the oven was empty) and you have saved the day! Thankyou! This was my very first Sous Vide session and the meal, a pork tenderloin, turned out to be exactly how I wanted it too despite the fact that the sous vide gear took up all my stove-top space (more or less.)
Excellent video as always. Only "qualm" I have is I have heard conflicting advice on the "snap the woody part off". I used to do that and then used my judgment and cut down to size...I think the snapping notion is a bit of a myth. Otherwise, your recipes have not only never done me wrong but have made me a hero...especially the lasagna with meat sauce...Holy Wow! Some vegetables and plants are better when younger and smaller, like cucumbers, zucchini. I like my asparagus small also like the wild asparagus of Eastern France. It was really very good and the old French farmers never let you know where it grew.
Make stock for soup by slow cooking the woody ends in a little water or chicken stock. Remove the asparagus ends and add cream cheese to thicken and flavour the soup.
Great video I just saved dinner. I was walking through the kitchen and happened to notice that the entire can of asparagus has gone bad. So I've tossed it in the trash much to my girlfriend's dismay. Thanks again. 👍
This may be a dumb question, but should you wash asparagus before cutting their ends off or after? Or do you even wash them at all? I can't wait to make them! Thank you for the recipe.
