Rosehips are a traditional source of Vit C. They are a frugal food when you forage them or harvest them from your garden. Here's how I make Rosehip Syrup for our family. It's delicious in tea...or a nip of bourbon...
You'll need: harvested rose hips. Sugar.
Cover cleaned rosehips with water and boil for 30 min.
Strain juice from the hips using a jelly bag or tea towel
Measure the resulting juice, and return to the pot. Add an equal quantity of sugar (1:1 juice to sugar...if you prefer a heavy syrup, 2:3 juice to sugar). Simmer until thickens. Store in the fridge for up to 4 months.
