DANNI ROSE’s SEAFOOD BOIL PASTA
INGREDIENTS:
For the Pasta:
1 box linguine pasta
1 carton (32 oz.) chicken stock
1 bag Crab Boil
2 tablespoon salt
For the Sauce:
Smoked Sausage Link, cut into gorgeous slices.
½ lbs. Shrimp ( peeled and deveined)
Lump crab meat ( or crab claw meat since its cheaper)
1 stick of Salted Butter
3 cloves Garlic (chopped) or 3 tbsp minced Garlic
¼ cup White Wine
2 ½ cups Heavy Whipping Cream
1 tsp Lemon Juice
½ cup pasta liquid
Seasonings (to taste):
1 -2 tbs old bay or more to taste
crab boil seasoning
Salt ( to taste)
Pepper ( to taste)
Chicken Bouillon ( about two tbs )
Cajun Seasoning
Paprika
Parsley (chopped fresh or dry) (about 1 tbs, or more if you like )
½ cup grated Parmesan cheese ( plus more for topping )
METHOD:
For the Pasta:
Boil your chicken stock in a pot and add your crab boil bag. Lay your linguini in the boil and cook for 8-9 minutes.
Whilst it boils, place a strainer into a bowl. Pour your pasta out when it’s cooked into the strainer, the bowl saves the Pasta Water that you will use in your sauce.
For the Sauce:
Using a high-brimmed saucepan cook your Sausage first in a little bit of oil on medium heat. Be sure to cook both sides, getting your slices nice and brown. Remove from heat and transfer to a bowl.
Season your Shrimp well. Using the same pan, cook off your Shrimp until delicious and seared. Transfer to another bowl.
Add your butter to the pan and cook until brown and foamy. Add your garlic and cook for 1-2 minutes. Add your white wine and lemon juice and cook for 1-2 minutes. Add some Chicken Bouillon (1tbsp). Add your Heavy Cream and stir well until fully combined. Now add your seasonings, being careful once again for the spice level - taste as you go! Add in your freshly grated parmesan and stir it in.
*If you notice your sauce getting a little too thick, gradually add a little of your Pasta Water that you saved to get the right consistency.
Once you are happy with your sauce’s consistency add your Parsley and stir.
Keep at Medium Heat!
Add your Shrimp and Sausage and cook for 2-3 minutes, always stirring to absorb all that delicious flavor! Add some salt and pepper and taste.
Add your pasta to the sauce. It may thicken up with the addition of the pasta, so use your Pasta Water to keep yourself happy with the consistency. Stir together well.
Add the Lump Crab and tuck it in, being sure not to mix too much.
Top with freshly grated Parmesan and chopped Parsley and enjoy!
