How to Make Simple Cheese from Dry Powdered Milk

A Simple Recipe for Homemade Paneer Cheese that works well as a replacement for Cream Cheese or Ricotta or such. The more cream/fat content, the better, but this can be made regardless and tastes wonderful in all sorts of recipes from your dried foods pantry.
4 cups of Half-n-Half, or reconstituted Powdered milk.
1 Tablespoon of lemon juice or vinegar or lime juice per cup of milk.
(but only add the acid 1 teaspoon at a time and stir for 60 seconds before determining if it needs more. Often, 2 or 3 are enough to separate the whey sufficiently. When you notice this, don't add any more acid. It is ready to be strained in the cheese cloth!)

I made this cheese last weekend and it was so fun and soooo good!! I ended up making half strawberry cream cheese and half garlic-herb cream cheese by blending my end product with a dash of heavy whipping cream and strawberry jam or the fresh herbs. I enjoyed it all week with sourdough toast in the mornings for breakfast! All of my friends and family think I'm amazing for making homemade cheese and cream cheese and it's all because of you!!! Thank you so much for this. You’re such a delight to watch. This reminds me of what my grandmothers made and called “farm cheese.” It was lovely with fresh herbs and spread on crackers. My maternal grandmother whom I just lost a few months ago, she was 97, made her own limburger cheese! It smelled AWFUL! She would get so tickled at us children when we’d turn our noses up. I can literally see her smile and hear her laugh as I think of her now. She said it was her treat and reminded her of her “momma, Emma.” My grandmothers name was Dorothy. She always ate her Limburger with a huge slice of onion as a sandwich. She’d chase us around and try to smooch us AFTER she ate it and we’d laugh and laugh. She truly is the greatest woman I’ve ever known or will know in my lifetime. The most generous soul. I’m so sorry. I got to rambling. I apologize. I’d erase it all but she’s my grandma and I can’t. Lisa, what a beautiful story & sweet memories. You are very blessed to have had your Grandma till the age of 97. You should write those memories down as they come to you. I find myself forgetting things like that about my grand parents, until something jogs my memory of a certain thing they did or said.

Essentially, you're making farmer cheese. My dad used to reminisce about the giant ball of cheese being hung over the sink to drain, and how the occasional wasp would fly into the kitchen to investigate. Yum!

Saw this last week and tried it out last night. It works really well! The dried milk version was about 4 ounces. And the Half and Half version weighed in at 11 ounces. We only had a non-stick pan and lemon juice and it worked just fine. The third Tbsp seemed to make a lot of difference in the curdling. We do historical reenacting so this will be a great addition to our skills set. May not be historically accurate, but easy and fun to make.

That’s exactly why I’m watching this video. About 2 months ago I made pita bread and my family loved it. I realized I had cheese and pepperoni. I found a pizza sauce recipe and it turned out to be the best pizza i ever had. I been making pizza ever since and usually make 12 at a time. I put them on paper plates and wrap the in plastic wrap for the kids, we just pop them in the oven. My husband said it’s almost homemade. He said the cheese was store bought. For the last 2 weeks I been watching videos on cheese making. I love cooking from scratch. An I’m gonna try this tonight when everyone is sleeping.

I did not know there was a difference between instant & powdered milk. I LOVE all different types of cheese & you made this look easy enough that even I could make it. It is such a blessing to watch & listen to you. I bet when we get to Heaven, you will be the beautiful lady with the sweet voice telling stories to the little children.

@@PREPSTEADERS I was curious why you don't use citric acid or rennet. I used BOTH on a recipe and my cheese seemed to have same texture as yours. I was told to microwave a minute, and then work it with your hands to develop a mozzarella texture. Then nuke it for 30 seconds and pull it and fold it more, then shape into a ball and add some whey in a container to keep it moist. BTW, I added some whey to dry milk and Ovaltine. I'm sure that drink was packed with nutrition.

Great video, thank you! When I filter small quantities like you did there, I use plastic clothespins to hold the cheesecloth securely to the funnel.

I make queso fresco like this, but I use vinegar, as it's quicker, and then you can salt the cheese if you like, but keep the whey to make a high protein drink much like Horchatta (rice water), but with the whey, sugar, vanilla, cinnamon/nutmeg. I use a funnel in a jar with a coffee filter. If you have too much whey to drink, your roses will love it!

I love your videos! I wanted to mention a bit of a tip when mixing dry and wet in a bowl or pan. You're reconstituting dry powder with 3-cups water, my tip is to mix in only one cup of water first to make a paste then continue to thin by mixing in the other two cups slowly. This will prevent the unwanted slash.

The curd texture was finer like the one you made with half and half with about the same amount of whey. It is cooling now and I cannot wait to try it.

I've done both methods as well, fresh milk v powdered. I like to add smoked salmon, chives, capers and red onion to my finished product for a really nice spread for fresh baked bread. I have just discovered your videos today in self isolation and really appreciate your recipes and your ministry - I am being nourished by both.

What a delightful video. I have read several articles on making cheese from powdered milk. Being a heavy user of powdered milk, it has always interested me. But actually watching you do it every step of the way is a tremendous help. This is only the second video of yours I have watched. The first one was the one on Kippered Herring. I like Sardines a lot. In the past , I have tried the Herring, but for whatever reason, always reverted to Sardines. Well, I now have NO sardines in my cupboard, but have about 20 cans of Herring in my storage food cabinet. And I subscribed to Amazon's program, so I will maintain a good storage supply at all times. Sorry to get carried away on fish in your cheese video. But you are batting 1000 in the 2 videos I have watched. Thank you. And the LORD Bless you.

Thank you for the video. I prefer the look of the cheese made from the instant dry milk. It reminds me of a locally made African cheese, wara, which is lumpy in texture, and made by curdling the milk proteins with the leaves of the plant, Calotropis procera.

I am not from a Christian background nor am I religious, but your videos are joy to watch! I tried your recipe twice, the first time with 3% milk and the second with organic unhomogenized milk. Both came out wonderful! I added salt, chives and black seed to mine and crumbled it up in a bowl. Then I added a bit of olive oil, layered it on an English muffin, and toasted it in the oven. Yum! The cheese didn't melt, but it just felt softer to the touch. Next time, I'm going to try it on middle-eastern mana'ish (which is kind of like a pizza). Looking forward to it!

I've made this cheese twice now this week. The first batch disappeared before I could share it... 😊 I get 40% whipping cream in 1/2 gallons from Costco and I have instant dry milk. I made my batches as a blend of 1 qt from the dry milk and 1 qt from the Costco whipping cream. I used the juice from 2 limes. Yummy!!! I found it too difficult to squeeze my massive cheese pile by hand so after about an hour of frustration I just set the strainer over a stock pot and put it in the fridge overnight. It drained itself to perfection! As for the "extra curricular activities", last time I added a spice blend called Sweet Misquite and pink salt to half my batch... Delicious! The other half got a garlic and herb spice blend (also from Costco), tasty but the smokey flavor of the mesquite was far better in my opinion. For today's batch I've added a 1/2 cup of dark stout beer (Guinness) to half the batch to see if it comes out like our family's favorite beer cheese spread. I added the beer just before straining, hoping to "infuse" the curds. So far, the warm curds are pretty good. The true test will be when it is cold and set this evening. The other half of today's batch is yet to be determined. So many choices, so little cheese! Thank you for sharing this information with us - what a wonderful blessing this is for me!

I make queso fresco once or twice a month, it's the same as paneer, just a different name. I make it with whole milk and either white Vinegar or lemon, Vinegar gives more consistent results. But I don't recommend using apple cider vinegar, while white vinegar leaves no taste, apple cider leaves a definite taste! Its still good in salad though but not too great plain. After I strain it, I add thyme, parsley and salt, then press it into a block for a few hours. it is sooo deliscous. sometimes I add other herbs, oregano, basil, majoram, dill, chives or finely chopped garlic greens. If you make goat milk cheese, don't use Vinegar! It will taste awful, I learned that the hard way.

@@MiddleEastMilli Same as this video's. Come on people. lol Salt? Put a little, next time, add more if you like a lot. I would add no more ,than t teaspoon for 3 cups of water and one cup dry milk. So 4 cups of milk. I or 2 tablespoons of vinegar...till it curdles. Then the salt. Add half a teaspoon to start.

Such an amazing young lady you are and a great inspiration. Just FYI, when draining something through a cheesecloth, I use the old spring loaded clothespins to hold it in place.

Wm Cottrell theres one thats thinner weave i use to strain almond juice so if catches little pieces and has longer sides to tie down.

I use powered milk and add butter . Just cut the butter in small pieces. Add to small amount of warm milk mix. Blend in blender on high for 3 minutes to incorporate it. Add to warming milk . Follow the rest of her recipe as she gives it.

She does have beautiful nails. Not to be rude, or assuming, but I can make mine look like that with an acrylic kit from Sally's Beauty Supply. Takes a few hours but they really last well!!

Paneer is just traditional Pakistani/Indian cottage cheese. They often drain it enough to form a brick so it can be cut into cubes. You can make wonderful curries with it and an amazing spinach dish called Palak Paneer. So yummy!

Just viewing this video again. I’m going to do this with my daughter over the holidays as part of a science class. (She’s having a lot of trouble at school so I use school for socialization for her and then teach her after work and on weekends). Thanks for the very clear instructions.

I am so glad that I found your channel. Yes, I know 3 years after your making this video, but better later than never. I just bought half and half and will be attempting to make this today when my granddaughter is here. I can't wait to see how it turns out. Since we already bought a whole bunch of Havarti and Smoke Gouda for our coast trip, I am going to make this into cream cheese and add chives and jalapenos. I'll come back and comment later today on how it turned out.....after I make my 4 mini sourdough bread bowls.

Thanks so much for this video. You are probably aware of the hype about how we should not eat cheese, but if we make our own, we know what is in it. Lisa Booker's comment about her grandmother, Dorothy is proof that you can live to a ripe old age while enjoying cheese on a regular basis, if you make your own. Oh my I did this with powdered milk and apple cider vinegar it was unbelievable and good. My daddy use to do little cooking experiments with us kids back in the day I'm going to have to ask him why he didn't do this one. Great video, thanks

Thank you for doing this tutorial! I’ve made fresh goats milk cheeses for years, but never thought of using powdered dry milk or half and half! Wow!! So easy😊👏👏

Thanks! Tried it with evaporated milk and it separated so finely, I didn't think it worked until I strained it (definitely spreadable, so fine some came through the cheese cloth). Going to try with goat milk and powdered whole milk. Thanks again.

Hi I finally had to comment. I am a Christian who has found you recently- I do not have my mother, she is missing. I took care of my Grandmother until she passed literally. I love watching anything you do. I make the chesse. My chesse came a litle dry, I put in the food processor for 1 minute and came very creamy, delicious good to spread on a toast.

I learned the how to on making cheese using gallon milk from a magazine, and to hang overnight, I got so excited that it turned out, I didn’t put anything with it, I just spread it on crackers, and yep, I ate it all, WHAT A WONDERFUL FEELING TO BE ABLE TO MAKE UR OWN CHEESE! Anyway, ur video here excites me even more, I mean, if I had goats, I wouldn’t be excited, but hey, I’m 61, and with how things r going, because of u I now know I can make cheese from powdered milk, which I can jar up lots with my break bleeder, giving me years of being able to have cheese come hard/harder times. Thank u
