If you've never eaten Strawberry Freezer Jam, you're really missing out. I think it's the best strawberry jam ever because it tastes like fresh strawberries. This jam is not canned, it's frozen.
Strawberry Freezer Jam
2 cups crushed strawberries
4 cups sugar
1 box Sure Jell
In a large bowl add sugar to the crushed strawberries, mix well and let stand for 10 minutes, stirring occasionally.
In a small pot mix together the box of Sure Jell and 3/4 cup of water. Bring to a boil, stirring constantly. Boil 1 minute, stirring constantly then remove from heat. Add this mixture to the strawberries, stirring constantly until sugar is dissolved and no longer grainy, about 3 minutes. (a few sugar crystals may remain)
Pour into containers, leaving 1/2 inch space at the top for expansion during freezing. Let stand at room temperature for 24 hours until set. Refrigerate for up to 3 weeks, otherwise, store in freezer for up to 1 year. Makes about 3 pints.
