Making freezer jam at home is easy and rewarding.
start with washed, stemmed strawberries. about 4 cups
Crush strawberries, I use my emulsion blender.
Measure exactly 4 cups of sugar. set aside. In a large bowl, measure 2 C crushed berries. Gradually add the 4 c of sugar. Let stand for 10 minutes; stirring occasionally.
Stir in 1 pkg Sure-Jell pectin and 3/4C water in a small saucepan. Bring to a boil on high heat and boil for 1 minute. Add pectin to fruit mixture and stir for 3 minutes or until sugar is completely dissolved. Fill containers leaving 1/2" space on top. Let stand at room temperature for 24 hours or until set. Refrigerate up to 3 weeks of freeze up to a year.
