Bake time: 20-25 Minutes
This recipe yields 1 dozen enchiladas
Ingredients
12 Corn tortillas
2 cups of cheese (1 cup mozzarella +1 Cup mild cheddar)
Sauce ingredients
3 to 4 Tbs oil
1/2 cup Guajillo chili powder
3 cups of water
2 1/2 Tbs Knorr chicken bouillon (natural)
1/2 cup heavy whipping cream or half and half
1/2 can of Pato sauce or tomato sauce
Filling
2 cubed potatoes
1/2 pound of sausage or ground pork
1/2 white onion
1 tsp black pepper
1 tsp salt
6 eggs + 1/4 cup heavy whipping cream or half and half
1/4 enchilada sauce optional
Toppings
1/2 Ice burg lettuce
9 chopped bacon slices
Sour cream (daisy)
3 chopped green onions
Heavy whipping cream substitutes
1/2 block cream cheese (Room temperature)
1/2 cup sour cream
1/2 cup milk
1/2 cup evaporated Milky
1/2 cup of Mexican Crema fresca
Filling protein substitutes

I have been watching your videos off and on for about a year now. I absolutely love your style of cooking as well as the relationship you have with your sister. My sister/best friend passed away in November 2018 and I miss her terribly every day. I am a native of Arizona and grew up eating, loving and cooking mexican food. We make the enchilads...cheese and the next morning always have a fried egg with them. Better than scrambled...some refried beans and potatoes and chorizo as sides. Coffee or chumpurrado. Delicious breakfast. Mexican style.

Renee Moreno, I was taught to cook by best cooks (Beautiful Mexican maids) old school, during late 50's-70's. Not sure if one of them was from an Indian tribe in Mexico because of some different spices she used but, with my mother dead my dad made sure me and my 5 brothers learned to cook and make tortillas. Your menu sounds fantastic. Even though I can cook all of your menu it's nice to savor another cooks meal and exchange cooking secrets...also I recently learned what Chumprrado is, that's some good stuff! A neighbor told me she would teach me how to make it. ( Hope so) 🤗

Hi, This looks amazing! I made the tomato basil pasta you recently posted and it was delicious. I've also made flan twice and my family loved it. Thank you. My kids are mexican,swedish Norwegian and I was asked a lot if they all had the same father. Two kids look nothing like the other two lol. They all speak and understand Spanish. Good recipe! Great for a cold morning with a cup of coffee such a aroma to wake up too!! As well as be fortified for the day. They look delicious and melts in your mouth enchiladas.

I use your tortilla dip in oil method in my air fryer. It works like a dream and you dont have to deal with the insides of your taco falling out into the oil.

Friendly hint when I fry my tortillas I only do one side and stack the tortillas the heat from the previous tortilla heats the next one. Saves time 😊

I would also agree, t That the enchilada sauce can be versatile (but remember its using PATO SAUCE, which is very spicy but maybe thats why they added the cream ...to minimize it a bit. I like to use red tomato sauce so its not too spicy & i use no cream for regular enchiladas....for breakfast though (I've never had any &) her recipe seems fantastic & wonderful! I will definitely try it & keep it as is & go from there bc she seems open & gives us advice & suggestions. :)
