Hey folks!
Today for lunch we had this amazing kedgeree :) not something I’ve ever made before but I’ll certainly do it again in the future! Super easy to make and quick too! Everything I used in the video will be listed below.
-Cheryl x
______________________________________________________________________
What I used - Serves 3 - 4
300g (10.5 oz) Skinless & boneless smoked haddock fillets - or similar white flaky smoked fish
3 Large free range eggs - boil for 10 minutes
Two large knobs of butter - around 25g (0.8 oz) each
1 Medium leek - washed & sliced
1 Heaped teaspoon curry powder - I used garam masala
1/2 teaspoon turmeric
150g (5.2 oz) Basmati rice - wash thoroughly or leave in a bowl of water for half an hour
400ml (14 oz) Cold water
The zest & juice from 1 lemon
A handful of chopped chives
Salt to taste

Thank you for this. My British father often made this dish when my Mom was still alive. At 101 he now lives with us and thought he might like to eat this but I couldn't find Mom's recipe. He'll be a happy man tonight!

Hi Cheryl, you always preface your videos by saying you're not a chef, but that presentation was pretty darn chef-y. And for someone who doesn't like eggs, they were cooked to perfection. I hope Mr. What's for Tea gave you a standing ovation.

I am certain I made Kedgeree once, ages ago, like 50+yrs. I have not eaten it since, I have no idea why. Maybe I screwed it up but you have made this look easy as usual.

If you have a friend with a smoker it's not too hard .. I use cod , halibut or buy alaska or BC black cod even sable.. hope this helps .. Costco usually has frozen portions ..for this type of dish , not a problem with smoking previously frozen fish..

@@kristinrae1 Same in Canada. But there is a product called kippered herring, various flavours, which are smoked. I often use those. When I don't have them but crave kedgeree, I just use a tin of good sockeye salmon. I also add frozen peas at the end. Never used lemon before but I will try it -- I really like this recipe.

Brilliant stuff! I love kedgeree & my father taught me to make it as a bairn so it always brings back memories of family Sunday breakfasts. Such a nice Sunday breakfast or for lunch or supper at any other time. I sometimes make it with fresh Arbroath smokies if I've been through there to pick them up. The extra juicy smoky flesh of them really adds to the dish. [also great with a side of crispy sautéed Bombay potatoes if you have leftovers of them!🤤] I've missed the fish van for this week, he was 'round this morning, but you've really put me in the mood to have it nest week now. Very posh presentation you had there, I usually just have a heaped plate. But yours is better for entertaining. Cheers for putting me in the mood for it, I've been letting things slide in the kitchen of late.

Thanks for this recipe! Not a usual thing in my corner of the world. The colors are so lovely; amazing egg yolks, and the kedgeree itself! I think turmeric is just fantastic, love the flavor and the color it imparts. ATB, Cheryl!

I cannot tell you how much I appreciate the alternative measurement for a knob of butter. We've been guessing in our house for quite some time now. I wasn't sure about this dish when I first saw it but you've made it look so fab, I think I'll have to try it.

Lovely presentation! I was reading Scarlett this morning and in the book she chooses to have this for breakfast at a house party in Ireland. Curiosity got the better of me and here I am! It looks ever so tasty. Being a Yank, I'm not at all accustomed to having fish for breakfast. I don't think I've even had haddock ever! 😳 But I'm nothing if not adventurous and look forward to giving this recipe a try! Thank you for sharing. 😊

Thankyou , this takes me back to a small child close to 70 yrs ago.. My great Aunt and Uncle lived on Uist and we spent most of our summer between there or down on Arran.. My Great Aunt was a neat lady ,she came from Labrador Canada and was 1/2 Eskimo/ /Native and 1/2 Hudson Bay Company fur trader ( My Great Uncle) .. anyway , they basically crofted and fished to survive .. Kedgeree, her version was much like yours with home smoked Haddock and a mix of wild and "Indian" rice and Gannett eggs or the eggs from the free range chickens down on the shore.. sometimes Duck eggs if a big meal.. I do remember a curry sauce /glaze that was there as well.. My eldest sister who's almost 80 still cooks this minus Gannett eggs for her family back in Newfoundland , seems to be a hit .. Washed down with home brewed ginger beer ..

Have always wondered what this dish consisted of; totally NOT what I thought lol. Wondering can u add/use any other spices of course realize the curry is basic flavor, and sub green/spring onions since leeks are hard to find in local markets? Really want to try this for a family breakfast! Thx again for posting.

I make this with shallots and finish with spring onion if I have no fresh chives. Do not be tempted to use any spices but garam marsala and turmeric as anything else destroys the flavour of the smoked haddock! You also do not need to add lemon - I never have, it makes it acidic instead of creamy! I have been making this for over 60 years and we love it!

Whenever I see Kedgeree I always think of the Two Fat Ladies as they made it and that was where I was introduced to it. They were hilarious always making fun of vegetarians but also gave great history to their dishes. And that motorcycle.....LOL although Jennifer did drive one in real life all her life. Wait a minute....... I know another cook who drives a motorcycle........lightening bolts in my head have just gone off! Mind blown. In fact I think I am going to look up that episode right now I need to see that again.

this looked good but unfortunately I can't eat seafood, I have been learning Japanese language and watch a lot of Japanese TV programs I like their cooking programs and I pick up a lot of tips, if you prefer your rice light and fluffy soak it in cold water before you cook it also Japanese people eat cold rice they eat a lot of onigiri which are rice balls and they come a many shapes, Japanese rice is known as sticky rice and is sweet tasting and it is short grain rice, here in the UK it is difficult to find short grain rice unless you know what you are looking for, we tend to call it pudding rice try using short grain aka pudding rice for your kedgeree you may be pleasantly surprised if you go to Japan and have a curry and rice it will be served with short grain rice I think South Korea is the same they use short grain rice
