What I can do so the sides of the cake feel smooth like your video. I did this cake couple times I like it but the sides are a little hard. When I put it on the fridge get hard the texture thats normal?

I've made this a few times now and it is by far the BEST vegan vanilla cake recipe I've tried. Not oily or heavy, just moist, light and fluffy. The only thing I might do differently next time is use golden flaxseed instead of brown so you don't see the brown spots in the beautiful vanilla cake. 😊

I just made this. I halfed the recipe. The batter tasted so good I thought I was dreaming. I made them into 6 cupcakes and they were delicious. I topped them with your butter frosting made with apples. Thank you so much!

Making this right now for my friend’s birthday tomorrow. It’s currently in the oven. Followed the recipe to the T (including ingredients), only difference is that I used a hand mixer and a rectangular pan. Hope it turns out well! Batter tasted yummy 😋

That cake and buttercream looks amazing! I keep forgetting these recipes are vegan at times, which is a good thing 😂 Have you ever tried making vegan macarons before? There’s not many recipes out there and you’re the best vegan baking channel, so I’d love to see your take on it!

Hi Noha thank you so much and you are welcome too! However, my non vegan blog is shut down I just couldn't keep up the cost to host it on the internet and maintain it monthly anymore I had always said I would continue to share my recipes for free & give free tutorials on RU-vid for as long as I could afford to do so, and well.. I just can't anymore. Many people had been helping through Patreon & PayPal, but at this point it is just not enough to pay for everything to keep it all going. The cost to host such a huge database was close to $400 a month (with the maintenance cost, I needed to hire a tech guy to help keep it running smoothly) So that cost was severely outweighing any small profits I had been making though running ads on the videos & blogsite. I have not kept any of the non vegan recipes, since for over 4 years now I have been strictly vegan; so for me they are of no use. They were all housed in the database and that has shut down. Sorry Not to mention I am not comfortable sharing non vegan recipes anymore, as it promotes animal abuse and torture not to mention animal agriculture is a disease on the earth as well as human health. I made the recipe and instead of butter i used 6 tbsp of grapeseed oil and it came out the exact same way im so glad i found this recipe thank you for sharing it with us from now on whenever i make cake ill use this recipe😁😁😁

One of the only vegan vanilla cakes I’ve made that doesn’t come out “raw”, this bakes up like actual cake! Don’t know why so many recipes come out too wet/unbaked (I fully bake it lol)

I've heard virgin sunflower oil is pretty buttery good for desserts, I bet a mix of that and coconut oil would be the ideal fat for white/butter cakes

I prefer to bake the cupcakes and then just keep them in the fridge - ice the next day. While I have not tried letting this batter sit overnight (a few hours, yes and no problems, but overnight...hmmm.) Worth a try and i want to say yes it will be fine, but since I have not tested this I hate to steer you wrong!

Ok, so the vegan vanilla cake is a smashing hit! I did as mentioned above make a mistake in that I did not cream the vegan butter with the sugar 😬🙈! But even after having had made that mistake the cake came out wonderful. Looked like your cake in the video. I actually love the flax specks! 👍❤️ Oh and it is very moist, not dry or too dense at all. Fabulous! Thank you Gretchen for your wonderful recipes!

Fab recipe, came out beautifully thank you so much. Just a quick question, my hubby is gluten free would I be able to make up my own cake flour using gluten free plain flour and corn starch? I'm in the UK so I've already made up some normal cake flour 😊

I'm really can't wait to make this cake! Do I really need a stand mixer? Or can I use the hand held beaters? 🤷‍♀️ One more question... for the buttercream does it have to be hi ratio shortening? Thanks

Nicole Avila You can use hand beaters for this recipe if you’re making the American buttercream the stand mixer is not necessary. While high ratio shortening is meant for icings (less heavy-greasy mouth feel) but you can use any shortening that you like or can find

Hello Gretchen!!!I was concerned about one of ingredients From aquafaba Swiss meringue buttercream. “ hi ratio vegetable shortening” instead can I use “Crisco all vegetable shortening “ is it the same? Because I can’t find exactly the same ingredient that you use in your recipe... please help. Thank you so much for your time.

Thank you for watching! You can use another egg replacer of your choice! Something like a Bob's Red Mill works great, I have used the Plant Based Egg by Freely Vegan in this recipe and LOVE IT BETTER THAN THE FLAX!

Hi Gretchen I was wondering if you could explain the science behind this cake vs your vegan chocolate cake. The chocolate cake is super simple, and there is no egg substitute, but it is sooooo moist and fluffy. I've never tried this vanilla cake, but I was super curious why you can't just omit the cocoa and achieve similar but vanilla. ? Thanks!

i know there is more chemistry involved when adding cocoa powder, it effects the ph. that would be my guess

Hey, this looks amazing! I noted that in the video you used distilled white vinegar, however in the written recipe it just says white vinegar. I there a difference? Which one should I be using for the recipe? Thanks

Hey thanks! Sorry about that confusion.. I always think of them as the same thing and technically they are, but... - Distilled White Vinegar is what I am actually using as it is slightly milder (and less acidic) than regular white. Distilled will have about 5%-8% acid level whereas just plain white (as it would be labeled) can have anywhere from 5%-20% acidity. You can also use apple cider vinegar in recipes calling for vinegar which I will do that more than often now and leave the white vinegar for cleaning things around the house! :D

Hi Gretchen I just had a quick question about the measurements. I’m going to make this cake for my dads birthday in 3 days and I wanted to know if I have 8” pans and I only want one layer should I just divide all the ingredients by 2?

Gretchen's Vegan Bakery I made the cake and it turned out amazing! Doesn’t taste vegan at all!! The chia seeds were a little crunchy which was nice actually, but I’ll grind them up next time for the toddlers. Thank you for the great recipe!

Hi Gretchen, I wanted to know if using Lily Flour AP is ok to make the vegan cake. Also what about cake flour have you ever tried using that the vanilla vegan cake?? If so was it a difference meaning was the the cake fluffier?

Sorry for the late reply this was not just a quick answer and I needed some time to sit down and write the answer out Yes to Lily flour AP is totally fine Many people have negative results when they use cake flour in vegan baking , vegan cakes tend to be very moist already and to keep the story short:: cake flour does not absorb liquids as well as all purpose flour does so if you use a cake flour in a recipe that has a high amount of liquid the liquid will not be absorbed as it should, and your resulting cake could be heavy and gummy, very different than what we typically think cake flour will do especially as your comment proved your thoughts would be that the cake would be fluffier. This is not always the case. That said all recipes are formulated differently so I don’t want to strike out cake flour across-the-board, but it’s helpful to know what type of recipe you are working with and where to implement the proper flour, which is why I always say to stick to the recipe as it is written

will the arrowroot method or aquafaba method be a better replacement for the flax seeds?

Hmm, I wouldn't say "better" since I love the flax recipe, AND the more recent Egg Replacer method (using The Plant based Egg by Freely Vegan) however you can of course use the AF, I just do not prefer the results with AF compared to the way I am sharing it here

YES! I have 2 separate recipes where I used the Plant Based Egg as the egg replacer. HERE----> www.gretchensveganbakery.com/vanilla-cake-recipe/ (The plant based egg gets added to the dry ingredients, so if you use another egg replacer, just reconstitute it with some of the liquid from the recipe)

Hi Gretchen.. I missed you a lot as I always use your recipes like your swiss meringue buttercream, vanilla cake, etc. I just found your vegan channel and I want to try this vegan vanilla cake.. I do not have vegan butter in my area.. What can I substitute for this vegan butter?

I'm still new baking, but I was wondering.. does it matter if you mix cake batter in a stand mixer? I don't personally have one, and I was wondering if I can just use a whisk or spatula to mix my ingredients.

Hi! It all depends on how the recipe says to mix it. Some recipes are "No mixer required" mixes, but others need some power of an electric (not necessarily STAND) mixer but because the sugar needs to be creamed into the fat- it is necessary. MICHELLE donoso Hi No, this is Egg Replacer can be added straight to the dry ingredients and I’ve adjusted for the liquid in the wet ingredients already, For substituting with this egg replacer In other recipes (meaning recipes-not mine-That have not been specifically formulated to use the plant-based egg) the directions are on the package

Gretchen's Vegan Bakery okey thanku, i have here in chile one egg replacer from orgran, that it said for each 3grs you have to add 30ml of water, that is why i asked, i am going to try this recipe .... thanku again 💖⚡️

Hey there, I would not recommend it, since the result will be dry & like cornbread texture. Sugar not only adds sweetness but it also adds moisture to cake batters and also carries the other ingredients through the recipe in this case through the "creaming method" I have been using Monkfruit sugar as an alternative to regular sugar in many of my recipes by subbing in Half Monkfruit with great results

@@GretchensVeganBakery Thank you very much, then I will use the entire amount of sugar. I made a cake of yours a few days ago, it rose nicely in the oven but when I took it out it collapsed a bit. I don't know what I did wrong, I hope it works this time.

Can you show how to properly fill and ice a cake. I create a border but no matter when I fill it with a ganache or fruit filling, it seeps out!

Can you see any of the flax meal flecks? I always tend to use golden flax seeds for vanilla cakes so you can't see anything.

yes golden flax for sure, (although I know in the video I used an older footage of the flax mixing because my camera battery died on the recording of the actual recipe for this one yesterday! LOL) But in the close up of the final cut slice, I don't think it shows through that much, and I definitely used golden for this exact recipe

Hey there, I'm not sure exactly what recipe you are using, so it's hard to pinpoint exactly as there could be a number of reasons. The first thing that comes to mind is you could be filling the pans too much. If all else is well with the recipe, method & ingredients, this is usually the reason, as the cake will rise nicely but when it runs out of room to grow it will fall in the center
