How To Make The McRib Sandwich! | The BEST McRib Copycat!

This is a video I've been wanting to do for a long time! Make a "REAL" McRib Sandwich. Not just a boneless rack of ribs on a bun, like so many on RU-vid. I actually researched how the McRib is made, then replicated the process, at home! My friend Harry Soo had the same idea, so we collaborated. Check out his video: • McDonalds McRib Clone ... .

I wanted to make this as close as possible to the real deal, so I delved into the net, reading every article and blog I could find. I also found some footage shot in the plants that make the faux rib patty. I had always believed that there was meat glue (transglutaminase) was used in the process. Turns out I was wrong... So, with the exception of the preservatives McDonald's has added, I present to you my version of the famous McRib Sandwich!
Using the large die on my meat grinder I ground pork shoulder, which is the meat that McDonald's uses.
Once I had the grind, I added the four major ingredients:
Water
Salt
Dextrose
Rosemary extract (homemade)
To make the rosemary extract, I simply boiled three sprigs of rosemary in two cups of water, until it reduced to one cup. I allowed this to cool and poured it into a spray bottle.
To form the patty I made a wooden rib mold, which was vacuum sealed and placed in the freezer.
McDonald's flash freezes the patty during production, which was the main reason I'm certain there is no meat glue. Transgutaminase will not work under a deep freeze.
The patty was seared on my flattop and then placed in a small pot of BBQ sauce heated to 150ºF.
I used a blend of store bought sauce. 3 parts Sweet Baby Rays and 1 part Bullseye Barbecue sauce.
Obviously, it is not necessary to make a mold to recreate you own McRib. You could get similar results by simply shaping the patty by hand.
I purchased the Hoagie roll at McDonald's while the McRib was still in season. I kept it frozen until I shot this video.

OK, I just finished the video. One of my weirdest take aways is the realization that the McRib is not as unhealthy as I thought it would be. Pork butt, water, rosemary, etc. I know it's not exactly paleo but I honestly thought the ingredients would be weirder than that.

Don't use the ribbon, just don't attach the bottom of the box so you can just push it through 👍

@@BallisticBBQ If the texture didn't seem quite right or it was tough, you can keep simmering the thing until it is the texture you want, you can do that with pork shoulder, I make meatballs with burger and pork shoulder and the longer they simmer the more tender they get and the quality isnt lost.

Troy, you should look into getting a Vacpak-It chamber sealer. It is a clone of the Vacmaster machine Greg uses, but costs about $300 less. I've had mine for about 3 months and use it almost daily.

@@KevinWindsor1971 I concur. A chamber vacuum sealer is by far the superior product. Foodsaver style vac sealers tend to leak causing freezer burn, they suck liquid out of the bag and the cost of the bags bags often eat up any savings from the bulk purchase.

One of my all-time favorite sandwiches and you did it complete justice. Great job, although I'd love a from-scratch recipe for the bbq sauce - it's the most distinct element to me, besides the general composition. Still, love everything about this!

When I get the mcrib I always get it with extra onions pickles and order a hashbrowns on the side. DO THIS! put a hashbrown on top of the mcrib. It's a layer of crunchy potato goodness. sounds weird but tastes super good.

Getting the ground meat to bind together is a secret many people do not understand. Work it, either by hand or in a mixer or food processor with dough attachment. It does not take long to release the colegen and proteins to bind together. Not doing that is the cause of hamburger patties that fall apart as you cook them.

Great video in that it shows every step needed to make an almost exact duplicate of the original. As a practical matter, few will want to go through all that trouble. I suspect you could get course ground pork from the store, mix in the dextrose and some ground rosemary, make a basic rectangle shape and cook it. The result would not be visually the same, but the flavor should be good. Still, kudos for really doing it all right!

I loved this video! In Australia we only have the McRib for a little while at the moment, and I like the idea of being able to make these myself any time. With the ribbon - could you keep the ends hanging out through the sides of the mould then use them to lift the "rib" out? Might help make it come out easier and also keep the ridges there. I think it still looked awesome though ^_^ I don't have a vacuum sealer but I have an idea for making the compressions/ridges by using some small plastic tubes and a weight on top. Do you think this would work?

Very interesting to see both yours and Harrys approach and outcomes. I feel that an abuncance of sauce is really essential to a good McRib, so in terms of authenticity, I think yours is closer to the real deal, but I'd love to try the Competition McRib, I'm sure it's tasty. Btw, if you've got McRib cravings and it's off-season, you can always get on a plane - German McD's serves them all-year round! Cheers!

Hey Ballistic, great video as always there is one small but. You got recipe wrong, I work for McDonald's meat supplier in Europe and pork parties are made with belly and shoulder not just shoulder. No meat glue or anything like that used to make it.

Greg, how important do you think is the freezing to the end result? From your video it seems that it is difficult to apply an even browning to the frozen paddy. Also shock-freezing or freezing the paddy with the mold is really technical challenging. For the one you need the technology, for the other you need for each paddy a mold. So does freezing add anything to the teste or the texture? I really like your approach in cooking the paddy in the sauce. I see that that would improve the result and it makes that rib a good option for a party, where you cater many people.

I am in the 4th group "never had a McRib" which may suprise some considering the amount of time i lived and worked in germany where it is always on the menu at micky d's. Schnitzel sandwich, sausages and Frikadelle from schnell imbiss stands with curry ketchup. I live in the UK now but still travel to germany afew times ayear, so in the interest of BBQ i will try some when i next visit. Thanks for an interesting, informative video take care God bless. I mean, the process is cool, but we're missing an extremely important part.... the BBQ sauce! By far the most important ingredient to the sandwich. I'm sure Sweet Baby Ray's would not taste very authentic...

Ok Greg. I gave my vote to you as the clone most representative of what McD probably does and uses in their sandwich. Harry's real rib clone probably tasted better I am sure. The creativity of that wood box is genius (minus the ribbon).

Can you use something other than that powder stuff in the meat? Something in our kitchens already? You know, also, if you made a larger jig, you could start creating frozen patties, boxing them, and selling them. I bet, people would order them.

I read somewhere, that McD used to get their ketchup from Hunts. I have made a home version of the Mc Rib before and used Hunts BBQ sauce. I thought it came pretty close to the original.

Rather than using a fixed bottom in you Ballistic Rib Mold make it removable just like the top. No need for the handle on the lid either. After it’s frozen push the bottom, McRib, and lid out from either direction. No need for ribbon either.

I bought a mcrib to eat one night after the latest marketing campaign here in KY. It was almost not edible. It was like something from the dollar tree so obviously what you are making is much better. The mcrib is a pressed meat slurry concoction. Maybe the actual mcrib varies state to state.

Question: Why did you use a Foodsaver bag in a chamber vacuum sealer? Comments: In making your mold, several things come to mind. First off id you would have had the strips used to make the voids between the ribs held in with dowels and gave them a slight draft and rounded over the sharp corners, you could have used an ejector plate to push the patty out of the mold from the bottom, no ribbon needed. Why not add the sauce to the bag and cook it sous vide? The meat would be colored by the sauce and go directly on to the bun. Less clean up and less wasted sauce.

The Original “Babyback Rib Sandwich” was Originally made with Baby Back Ribs in 1953 before McDonald’s came out with there version. Hey Greg! Good video, dude. That looked much better than the McRib. I'm not a big McRib fanatic. I don't dislike it, however. In general, I'll a couple of them annually. They don't seem like they are as good as they were 15-20 years ago. Perhaps that's just me, and my taste buds are changing as I get older...lol. Your press is pretty slick. I probably would have used the handle of a butter knife or something similar to press in the rib bones (I'm lazy...lol). Again, loved the video. Nicely done!

I havn't had a Mc'Rib in YEARS. For some reason, they're just not popular where I live so they never bring them back here. I havn't seen a Mc'Rib in over a decade. I don't think that any McDonalds in my state have had a Mc'Rib in AGES. They tend to always skip this state. I check. Every single time that there's an announcement that, "The Mc'Rib is back, it's never in my state and it's been this way for years. I guess.. just.. no one buys them here, for some reason.

They actually use meat in the McRib? What I read was it was made from "otherwise unrecoverable connective tissues and bone scrapings" formed into a patty. Without the sauce it tasted like licking a stamp. Last one I had was probably in 09. Home made can't be anything but good, unlike the "real' thing.

This guy spent all this time and effort to make a sandwich that shouldn't take more than a few mins, 1) Buy some ground pork, make the patties into a Mcrib shape , place in freezer for 20-30 mins, take out and sear, fry in bbq sauce, toast hoagie roll, thats ALL!

Two days ago I made a BBQ pork sandwich with sous vide pork belly. It took little prep and effort and was killer, this seems like a lot of effort to duplicate something McTier. But who am I to criticize? I grind chicken breast to make premium chicken nuggets on occasion. I would highly recommend it.
