This pizza is the sort of thick-crusted, fried-on-the-bottom, puffy, cheesy, focaccia-esque style you might remember having as a Pizza Hut personal pan pizza when you were a kid. Baked in a cast iron skillet, the crust is golden and crunchy on the outside, but still a touch puffy and soft under the stretchy mozzarella cheese.

Pro tip: after placing the pizzas in the pans, put them on stove and let it cook for 6 minutes at medium-high flame, check the base it must turn brown. Now put the pizzas in a pre heated oven at 250 C or 500 F and broil for 7 minutes(or until cheese starts to brown). You will get the best crust ever, crispy bottom and a soft top and melted cheese

I've watched 4 videos on making a cast iron pizza. Two recommended spreading the dough on the skillet and putting in the over for 5 minutes then taking it out and adding the toppings, while the other two (like this one) just added the toppings straight off. Now I'm not sure which to try 🤔

You wouldn't let a new actor with zero experience to play a leading role in a big budget film, so why would you do that on YT with a 200K channel? Same logic applies. Practice off-screen until you're comfortable then upload on YT. Serious Eats ain't a new channel. Subscribers have a high standard.

pre heat the skillets as hot as your oven goes every time, then keep them hot over a low gas ring on the hob as you assemble the pizza

Jaykxl that is exactly what I was looking for. You put those skillets in cold, they are such a large thermal mass they will pull a lot of heat out the oven, especially if your oven is as old and shit as mine

@@torquedogg175 I get mine as hot as I can, then I just keep them hot with a low gas ring, just try to avoid frying the base on the hob too much. I always put plenty of olive oil in the skillets, if you leave them for 5 when they come out of the oven the pizza base sucks it up. for me the pizzas cook in around 9 mins if the skillets are pre-heated.

Cast iron takes to long to heat up in an oven which is why the dough needed some time on the stove. If you have a high carbon steel pan, it will produce a much better crust out of the oven.

Alternatively you can heat up the pan in the oven first, then put the dough into the hot pan and build accordingly. This produces a much better result, though it does mean one has to push dough down into a ripping hot pan - which is definitively less safe. I would also recommend crisping the crust on the stove before putting it into the oven, since it just makes things go faster.

@@GothicPotato2 right, cast iron does not conduct heat evenly but when it gets hot it keeps it's heat. You shouldn't have to put it on the stove top to brown the crust to finish. If the pan was heated properly, just leaving it in the pan until it browns to your liking will work. Or better yet drop the temperature down and double the bake time. Like maybe 400-425 for 30 minutes instead of 500-525 for 15 minutes. It all depends on what you are comfortable with. I worked at a joint that did pan pizzas and we did not wait for a pan to cool before using it. Scrape the burnt bits off and start again.

I read it might be a good idea to cook the dough in pan with sauce alone in oven for few minutes before adding cheese and toppings to guarantee crispy bottom crust.

Almond flour does not contain gluten, you'd be left with a cakey pizza.. you need gluten in order to create a stretchy dough.. I'd do a califlour pizza instead, but I'm not sure how that would work out in a cast iron

You can freeze the dough, without the toppings. And after taking the dough out from the fridge, let it rest until it comes to room temperature. You could totally use a skillet to make a pizza. You may want to make it with a more traditional crust to avoid a mess. But foil on the bottom of the oven makes for easy cleaning.

Luandy Elam, instant yeast is super fine and activates really easily just in the presence of moisture, when incorporated into a dough

With an overnight proof there should be little issue of activating. But if you have been using yeast that has been stored away for a long time you may want to give it a head start.

That's what I thought. Making the dough right now. Pizza tomorrow. That's what my plan is. 4 min about med. High and then 525‐550° depending in oven. Made a couple the other day. One that you only needed like 2 hours to proof. Now I have 16-20 hours to let rest. Never seen dough not placed in refrigerator for that long. Going to give it a try though.

95F is best temp to proof, about 1hr, but really just depends on the temp starting from.

The longer the proof the better the pizza. Every now and then I make a Roman-style pizza. The dough is made 5 days in advance. There is none of the fresh "yeasty" taste to the crust.
