Arguably the most popular food of Trinidad & Tobago, this week's extra special episode is all about DOUBLES:
Yield: 16 - 18 Servings
INGREDIENTS
For the Bara Dough:
3 Cups All-Purpose Flour
1 Tsp Brown Sugar
½ Tsp Salt
½ Tsp Turmeric Powder
1 Tsp Yeast
Warm Water (About 1 Cup & 3 Tbsps)
3 Cups Vegetable Oil, plus 1 Tbsp
For the Channa Topping:
2½ Cups of Water
18 oz Canned Chick Peas (Drained)
5 Cloves Garlic Minced
1½ Tsp Salt
1¼ Tbsp Curry Powder
2 Tbsp Minced Chadon Beni/Culantro
½ Tbsp Geera/Cumin Powder
Salt and Black Pepper to taste
METHOD
1. In medium bowl, add the flour, brown sugar, salt, turmeric and yeast. Mix to combine.
2. Slowly add warm water little at a time and use your fingers to mix to allow the flour to absorb the liquid.
3. Mix dough until it comes together to a slightly sticky but soft pliable consistency.
4. Knead for 1 minute to bring the dough together in one mass. Dough would be slight moist to the touch. Drizzle 1 tablespoon of oil atop the dough and rub to ensure the top doesn’t form a scab and cover with tea towel and let sit for 20 minutes.
5. To prepare channa topping, place a medium sauce pan over high heat adding all at once, the water, channa, garlic, salt and curry powder.
6. Stir and bring to a boil uncovered. Cook for 10 minutes then add the geera powder and chadon beni.
7. Cook for an additional 5 minutes until chick peas are cooked and sauce is thickened.
8. Season with salt and pepper and remove from the heat.
9. To cook the fried bara, heat the three cups of oil in a shallow sauce pan to 450 degrees Fahrenheit.
10. Lubricate your hands with a little oil and on your countertop lightly.
11. Take golf ball size amount of bara dough and place on the greased countertop and gently use your lubricated hands to stretch out and open all of the dough balls to a thin size.
12. As soon as all are opened out, carefully place one piece of stretched dough into the hot oil and fry using a perforated spoon for 5 seconds on each side until cooked.
13. Place on paper napkins to remove excess oil and continue frying each piece and keep warm in a covered cooler.
14. To serve; place two pieces of fried bara dough, one over lapping the other onto a plate and top with few tablespoons of chick pea topping.
15. Additional condiments to top off your doubles will include, a drizzle of tamarind sauce, chadon beni sauce also a few dashes of Trini pepper sauce and for a fresh element, some grated cucumbers on top.
16. Using your hands, grip a piece of the dough and use that to pick up some of the channa filling with some of the condiments.

My Fiance is Trinidadian. I am from Barbados. I tried this recipe so he could have a taste of home. He absolutely loved them. Great recipe! Only thing i did different is build a curry paste from scratch then add channa as opposed to adding the curry into the pot. Paired with a chandon beni sauce, cucumber with flavour peppers and a sweet and spicy scotch bonnet sauce. Absolutely delicious! It's our Saturday meal now😊 Thanks Foodie Nation

So yesterday I showed up for my doubles fix, and her main man was absent..so guess who made bara allll day...me..so Im more ready for Trinidad than ever 😄🔥

I lived in Grenada for two years and Doubles were my absolute favorite food of all. They are the most popular street food in the Caribbean for good reason. If you haven't already, you must try them. If I didn't have three kids, I would start a Doubles food cart and both sober and drunk people will crave them the same.

My mum's also Trini! I miss a good doubles. But I find when I buy it in the UK, it doesn't taste the same as when I have it in T&T 😕. I wonder if it has something to do with the difference in water 🤔

Made this today and it was the bomb. Two things it needed a bit more saffron to get the colour right and about a 1/4 cup more water but the dough came out soft and even softer after resting. The Chana was really good after adjusting the seasoning and it came out really great for a first time try of making doubles.

Omg thank you guys so much for this recipe!!! I made so many recipes from other channels and this one was the easiest and best tasting. I live in Iowa and there’s no Caribbean food (or anything hotter than a jalepeno 😭) and tasting this just made me so happy. On a side note, if any Trinis live in Iowa and wants to adopt me and cook for me I’m open to that as well 😂

I lived in Philadelphia for years after moving from Trinidad and unfortunately doubles in Philly don’t taste anywhere close to authentic. If you can, try buying them in Brooklyn NY🤗

Please don't follow this recipe just Google trini doubles recipe. She said don't put baking powder it would make it heavier. The fact is baking powder actually makes it fluffy and light and soft. If you just use flour it will be much harder and heavier. The reason famous chefs throw off people with a different recipe. Is to keep theirs safe. All other recipes call for baking powder so just follow it carefully. And always keep oil on your dough, counter and hands when spreading it. Oil keeps it soft and helps it spread better.

I just saw this video and I went straight to my kitchen as I had channa soaked to cook and my doubles came out perfect as though I bought it, the test now is when my son comes home from school, as I will be wrapping and bagging them. I'm from Trinidad now living in the UK and couldn't find a good Trinidad doubles nowhere. I looked at this video and I got the perfect doubles no joke. However for the channa I had to cook it a little longer even tho i used thin channa and to get a good consistency I added dhal to my channa. Thanks to Kelly and foodie nation.

ARE YOU KIDDING ME., I was Born in the U.S.A 🇺🇸, & my Grandmother who is Chinese & Indian, Trini & My mother, taught me to Cook Doubles bara the size of a Grapefruit, & Channa with a little Aloo, & Slight Pepper sauce on the Side., since I was 8yrs old. In Trinidad 🇹🇹 when I would visit when I was young., its the Easiest East Indian recipe to put Together Today, than it was back then, it was a Lot more Harder to put Together, with..,One pot for the Channa & Aloo, & one pot of My Grandparents deep iron Chinese Wok for the Doubles Bara,.in Crazy hot Cooking Oil.., Those were the best Good old Days Growing up in San Juan.., when Visiting the island of T&T 🇹🇹..! 🙂❤🇺🇸✡🇹🇹🦋🌈👍🏽

Thank you for this video! I love doubles so much. Hard to get in the suburb that I live in. Often have to travel to the city to buy these. But this recipe is totally awesome! I never knew the channa filling was this easy to make. My dough needs work though. Hard to get it fluffy and soft. Gonna try for round 2 this weekend.

Can I be for real when I say I made this with what limited ingredients I could rustle up in my area, and it was some good eats. Stretching out the bara dough was fun, the channa a cinch to make, and I love the customization via the sauces (tamarind was my favorite). Definitely a breakfast to impress.

Actually you can add baking soda/baking powder to the barra dough for extra fluffiness with the barra but in the right proportions because too much soda in combination with saffron turns red.

Lolz yuh understand .... my daughter made doubles recently and it taste great, she bought doubles and realize, yes they are not giving us the real recipe the bara have distinct taste. Something is missing!! We watch this video and giggled because it's not their actual recipe , a family secret and their not going to just tell everybody lolzz😂

I love this recipe and the end result but somehow I feel like there's some little thing that there still hiding in the recipe because they know there are a lot of doubles vendors out there that would try to copy them 😂

Baking soda gives channa/doubles its characteristic taste. I'm not sure why they're pretending they don't add it.

The doubles vendors only put baking soda in the channa because it’s hard old channa they using and it they don’t put baking soda in it it will never cook.

@@mamaguile7587You are so wrong because it's the small grain channa that's used to make doubles channa by all doubles vendor and it cooks very fast without a presure cooker and even faster if u soak it before. Baking soda pull impurities and allows flavour to be more bold. It also thickens gravy.

I made these! Best recipe by far.... I do want to know how to keep the bara so soft! I even bought a cooler to put mine in.... it was soft when initially cooked but got a little stiff after a while. Still tasted great!!!!!

Natasha honestly speaking i from my experience i think your doubles recipes especially your resent ones is far better than what Kelly demonstrated there. Is not that she can't make doubles but i personally think she will not give out her original recipe.
