Wow you is the only person actually made original coconut bake, many persons make bake and refer to it as coconut bake, when it's not, just like how my grandmother use to make it. Only one secret she had was the cold pot was better to make it she said , even doh we had an oven she told me as a child that the smoke from the cold pot gives it a special favor. Hello lady thank you for sharing it looks great. Just a question I don’t have access to fresh coconut. Can I use shredded coconut you get in the stores and if so, am I buying the unsweetened coconut or am I buying the sweetened coconut?
A suggestion to everyone baking bread/frying bakes. Cut the food lets see the inside. Theirs a big difference outside and in. We need to know that the recipe really works.

As usual great video, very thoroughly explained. But I have a question, can I substitute for whole wheat flour instead? Reason I asked is, here on ST Thomas (usvi) we call this "dumb bread". I've had both regular flour & whole wheat flour bakes(dumb bread). And I favor the whole wheat version more. So would the recipe be the same if I used wheat? Looking forward to your response :)
+SimplyMJ Thanks for your kind compliments! Using whole wheat flour instead of regular flour would require the usage of more butter (as the whole wheat flour would cause the coconut bake to be a bit dry). So put 4 tablespoons of butter instead of two. Sometimes I would use have regular flour and half whole wheat flour and add a little more butter because I know if I don't my bake would be a bit dry. Hope this helps! BTW in St. Vincent, they call this type of bake Dumplings!
+SimplyMJ Here's what to do. Start with 1 1/2 cups of water, gradually add to your ingredients and mix in well. Eventually you will have a dough, if your dough is nice and soft and you have not used up all the water don't add any more. If not add more water (gradually) until you get the dough texture to be nice and soft. Let the dough rest and knead again after about 10 minutes. I hope this helps.
Hmmm that sounds good! I did the saltfish buljol video already but the hops bread I don't think I will be lucky with that! What about black pudding and hops bread??!!
Sometimes these breads are called different names. This is made with the husk of dry coconut. It this what you are looking for? Seems like coconut bake and dumb bread are the same thing.
+WhaTo🍴Cook I think she means accurate, you are using eating spoons as teaspoon measure but if you use the baking measuring spoons you will get less yeast, sugar and BP. I think that is what she meant because I was wondering the same. Also how much liquid is in reserve with the coconut. Thanks much

Ms.Rebecca Fortune Long ago I use my own measuring a Pinch of this and Dash of that in Baking you have to use your IQ in measuring Baking in the Golden Age was no measurimg and the Food came out more appetising We always do thing Old School instead of using all these Stupid Gadgets on the Market Cooking and Baking is just Simply Methods.

Vincent2wice: I think that was a very impolite remark. The lady is doing something to help us and you are being rude. A lot of the older Trinidadian cooks did not use measuring spoons, they used regular spoons. Everything does not have to be modern and sophisticated. For a matter of fact, we were taught to do things by guessing. When I was taught to cook and bake, I was not taught with the measuring spoons that they we today. We knew exactly how much to use and used regular spoons. That is how it was back then. I would agree that she is using more than what a regular measuring spoon would be, but you have to just use your judgment. We are not paying for the lesson and should say, thank you, and be intelligent.
I think the way she made the bake , the counter top need cleaning there were chip wood where she was needing the flour was not very clean and sanatizer I will not follow her it just make me feel uncomfortable. EJL.
