How to make Vegan Cheese | Cashew Cheese

How to make vegan cheese. An easy recipe for delicious vegan cashew cheese. I've always wondered how to make vegan cheese so here we go! :)
VEGAN CASHEW CHEESE
1 cup raw cashews
1 clove garlic, minced
1/4 tsp garlic powder (or to taste)
lemon zest (0.5 medium lemon)
lemon juice (1 medium lemon)
~1/4 cup water
1 Tbsp nutritional yeast
salt to taste (optional)
1 Tbsp olive oil (optional)
Instructions:
Place cashews in a bowl and cover with cool water. Cover with plastic wrap and refrigerate overnight (~12h). If you can’t get to them right away, drain, place back in bowl, and cover with plastic wrap. They will keep refrigerated for 24-36 hours.
Drain cashews thoroughly and add to food processor. Add garlic, garlic powder, lemon zest, lemon juice, water, nutritional yeast, salt and olive oil.
Process until creamy and smooth, scraping down sides and adding additional water as needed. Taste and adjust seasonings as needed, adding more lemon zest for tartness, nutritional yeast for cheesiness, garlic for zing, or salt for flavor + balance.
Place mesh strainer (or colander) over bowl. Lay down cheesecloth or a clean, fine, absorbent towel.
Scoop all cheese over the cheesecloth, gather the corners and twist the top to form the cheese into a “disc.” Secure with a rubber band.
To remove more moisture and firm up faster, add folded paper towel to colander and place wrapped cheesecloth on top.
Refrigerate for 6-24h. Firmness increases with time. Replace paper towel when saturated with moisture to speed up moisture loss.
Unwrap cheesecloth and gently invert onto a plate. Reform with hands or utensils as needed.
Optional: coat with chopped herbs or serve garnished with nuts.
Vegan cashew cheese keeps well covered in the refrigerator up to 5 days.

I usually make a similar one but I bake it. It can be made with almonds and/or cashews... and yes, the taste is amazing!!!! 😍

Didn't harden at all. So I'm using it as cream cheese over lentil bread or as dressing for veggies is awesome! I added a little of chipotle paste and oh god, the flavor blew my mind. Thank you for a great recipe!

Sprinkle pink peppercorns to the final product, feta cheese cubes sold in olive oil has that mix, gives the cheese a dill type of taste. Phenomenal.

Thanks for the video. I struggle with cashews because of lectins. So I used roasted cashews, then fermented it for a couple of days. Oh crumbs is it delicious. I. Put in some mild curry powder and some fresh sweet basil. Mmmmmmmm

Been really enjoying your content ever since I subscribed, love the level of profesianalism and expertise you bring (maybe a bit more relevant for other videos, still enjoyed this one;). I have a question for you; recently I have moved more and more towards a wholefood plantbased diet, although I sometimes (mostly when I'm visiting other people) still consume animal and processed products. This made me wonder to what extend you have to completely move into a plantbased diet to reap the (health) benefits related to this dietary change, setting aside the environmental and ehtical benifits for the purposes of this question. Is there generally for example a certain percentage of your diet that needs to be free of animal/processed products for the benefits to begin? Furthermore is there a level at which the benefits begin to plateau or is there a linear (or better) relationship between reducing intake of animal/processed products and its related health benefits? Would love to hear your insights, in the meantime keep doing what you're doing.

short answer is nobody knows with certainty :) what we can confidently say is that having abundant fruits & veg, legumes etc is generally a good move. with or without animal foods, with or without some processed foods, there's no universal rule, it's down to personal preference and individual conditions. whatever you choose to do, bear in mind it needs to work for YOU long-term

According to Dr. Joel Fuhrman, in order to achieve superior health, the percentage of animal and processed foods should not exceed 5% of Calories. For me, that’s about 100 Calories per day. Also, according to the Adventist Health Studies, in terms of heart disease, diabetes, and hypertension, vegans do better than vegetarians, who do better than semi-vegetarians, who do better than pescatarians, who do better than omnivores (who do better than non-Adventist omnivores). So, yes, the more whole plant foods displace animal and processed foods, the lower the chances of developing the aforementioned and other chronic diseases. (And the greater the benefit to the animals and the planet.)

This is interesting idea. I've tried similar thing but with agar agar powder to make it more like firm cheese. Try that option as well, it is super cool :D AND you can melt it too :3 :D!

hey doc! Can you tell me if my current diet is good? A majority of my diet is a whole food plant base diet and I also eat eggs and lean white meat. I consume dairy very rarely. should I make any changes?

​@@NutritionMadeSimple I feel pretty good, I feel full throughout the day and don't feel tired at all. I don't think I've gotten a blood test in a while, so I'll have to get that done. I turned 18 a couple of days ago and the last time I got sick was when I was 15. Although I think I should include berries in my diet but unfortunately berries are little expensive in my country, are there any alternatives?

Awesome! But I have a question, I thought the limit of casews per day was 3-4. Eating a little portion of this cheese is more than that. Is this really healthy?

Maybe you mean paranuts = Brazil nuts, because they contain selenium so much, that 2-4 those per day is just perfect. Cashew nuts are rich in calcium (which is not a downside), but contain more saturated fat than most other nuts. So preferable not more than handful - or half - these per day.

They have certain elements that cause Gi issues in some people. Cheese has been consumed for centuries while cashews have probably never been concentrated to this degree and consumed until the century. It seems to be for those who have dairy sensitivity, are prone to cardiovascular issues related to saturated fat consumption, or don’t want to support the dairy industry.

the yeast is just for the cheesy flavor. it'll still work without it, just won't have that sourness reminiscent of cheese

I keep whining about missing cheese on your channel. I feel like this video was made for me :) Is it really a good substitute? Will it give me that relaxed satiated feeling that comes from eating obscene amounts of cheese and crackers? I don’t doubt the taste is good, I just question the whole effect without having casomorphine.

@@JonathanDLynch okay, I go on : D Gluteomorphin would be more potent, but just like caseomorphin, it has it´s downsides. People whose DPPIV -enzyme ain´t effective enough, can get their substance P -level too high, which causes a lot of trouble.

No, a vegan diet can lower ApoB. Tree nuts specifically can reduce cholesterol, LDL cholesterol, ApoB and triglycerides.

I love your science content, but that is not lemon zest - that’s lemon peel. You’re not supposed to get the white part of the peel in your zest. Also, your yeast looks more like baking yeast than nutritional yeast.

It's definitely not cheese, but something that should resemble it. Dry cashews are ~40% fat, so I guess this is 20% fat? It's basically a seasoned nut paste.

hmm it might be. making this in Portugal, ingredients have slightly diff names. but I think either works. as long as it has that subtle sour touch that resembles the cheese

You made a big mistake. You used Active dry yeast for bread making instead of nutritional yeast. These are completely different things. The former shouldn't be eaten raw, The latter is an edible yeast that comes in yellow flakes and tastes cheesy. Honestly, you should probably take this down and do the video again using the correct ingredient.

Nah, not killed for their milk, just kept impregnated their entire shortened lives and having their offspring immediately taken from them and either slaughtered it they are males to become veal or if female after a short childhood of around 15 months impregnated to become another enslaved milk cow. It is a horrible and short life (around 7 years) and ends with a trip to the slaughterhouse to become ground beef.
