Follow our recipe for homemade venison bacon and there's no way you'll buck it up. Venison bacon is an easy and delicious way to use your venison harvest. Unlike traditional bacon, this version is a mixture of ground venison and pork that is seasoned, cured then reformed and smoked. The result is full-flavored bacon that can be sliced and fried up for BLTs, served with eggs and more.

Actually, I just made Some traditional French onion gratinee soup, With a couple very minimal changes ( ha ha ha) while I was making it, i thought back to my pops ( A VERY accomplished man in many ways but one of them was he was an EXCELLENT chef). anyway, he used to comment on how much he loved the smell of bacon and onions sauteing so much. So, I got the bright idea to add bacon to the onions as they were cooking, as well as Instead of the traditional chicken stock base to the soup, I used Some of my Pops recipe BBQ rib stock we all make every time we make and serve BBQ ribs. So, the bacon i used was sausage bacon just as produced here (except with our family's recipe). I'm telling you that soup was not only the best I had ever made, it ended up being the best I have ever had, period! So just a tip for everyone as a potential use for this bacon from the video! Can you tell me why you don't add your seasoning during the grinding process?

Hey Richard, great question! We often add it before the grinding process and since the seasoning didn't have any large pieces, we could've done so here. It was just Chef's preference that day, but you can do whichever way you prefer.

How much of the maple cure do I need to add for a 12 and 1/2 lb batch.

Hi Mike, our Venison Bacon cure comes with premeasure Maple Cure for a 12.5 lb batch, but if you already have it on-hand you would measure out 1¾ tsp per pound.

@@Mike-ge4kf Correct! You'll get a pouch of seasoning and a pouch of cure, both measured for 12.5 lbs of meat.

You mean beef and venison? You could try it, but it would be very lean

@@Ihsaan1422 Yes you can, it may change the flavor and mouthfeel as pork and beef fat and very different. You could use brisket trimmings!
