• 500g strong bread flour
• 10g fast action yeast
• 6g fine salt
• 280ml water
• 30ml olive oil
• 8 UNDER 7 OVER 1
• 2 UNDER 3 OVER 8
• 1 OVER 5
• 7 UNDER 6 OVER 1
• 8 OVER 5
• Repeat from 2 UNDER 3 OVER 8

Thanks for demonstrating braiding techniques for dough. I think I can cope with the simple braids, but that 8 strand braid is really something else! I love the effect it gives, so I will have to work up the courage to give it a try. Beautiful braids!

Actually great to see clearly how the 3 strand plat is done - I keep messing that up when I make Swedish "pulla" (cardamon bread braid). The 8 strand version is amazing - if I ever try that I'll practice with rope a lot first.

I love all of your recipes and have made quite a few of them through the years... But, it is maddening to me to watch you work with dough on planks. What's with that? Why aren't you using a solid surface? I keep imagining all the flour, dough bits, and various icky stuff falling into those crevices. Nice tutorial, by the way :)

When you number them 1-8 then take 8 under 7 over 1 does 8 become 1 and 7 become 8 or do I have to keep track of the various numbers all the way through? Also I'm sure he's too busy to answer my question ... so here goes nothing
