How to prepare and cook a beef kidney from start to finish!
Kidney preparation:
1) Remove surrounding fat
Check out our Skillshare class on rendering fat! (www.skillshare...)
2) Remove membrane around kidney (this may come off with the fat as it does in this video)
3) Cut kidney lengthwise and remove core
4) Slice/chop kidney and soak in water with white vinegar for 2 hours
5) Drain and rinse
Kidney stew recipe:
~4 servings~
Ingredients:
2 Tbsp. Bacon grease
1 beef kidney prepared as above
1 onion diced
3 small-medium carrots thickly sliced (or if you want lower carbs substitute 2 cups cauliflower or cabbage)
1 tsp. Italian herbs
2 Tbsp. Soy sauce
2 Tbsp. Worcestershire sauce
2 Tbsp. Balsalmic vinegar
¼ cup Sherry cooking wine (optional)
1 ½ cups water
Melt bacon grease in Dutch oven. Saute onion until translucent, then add kidney. Brown kidney, then add remaining ingredients. Cover and place in 325o F oven for 1 1/2 -2 hours. Enjoy topped with full-fat sour cream!
Approximate macros per serving:
Fat: 9g -add some full fat sour cream to boost
Net Carbs with carrots: 8g- with cauliflower: 5g
Protein: 21g
