How to prepare and cook a beef kidney from start to finish!
Kidney preparation:
1) Remove surrounding fat
Check out our Skillshare class on rendering fat! (www.skillshare...)
2) Remove membrane around kidney (this may come off with the fat as it does in this video)
3) Cut kidney lengthwise and remove core
4) Slice/chop kidney and soak in water with white vinegar for 2 hours
5) Drain and rinse
Kidney stew recipe:
~4 servings~
Ingredients:
2 Tbsp. Bacon grease
1 beef kidney prepared as above
1 onion diced
3 small-medium carrots thickly sliced (or if you want lower carbs substitute 2 cups cauliflower or cabbage)
1 tsp. Italian herbs
2 Tbsp. Soy sauce
2 Tbsp. Worcestershire sauce
2 Tbsp. Balsalmic vinegar
¼ cup Sherry cooking wine (optional)
1 ½ cups water
Melt bacon grease in Dutch oven. Saute onion until translucent, then add kidney. Brown kidney, then add remaining ingredients. Cover and place in 325o F oven for 1 1/2 -2 hours. Enjoy topped with full-fat sour cream!
Approximate macros per serving:
Fat: 9g -add some full fat sour cream to boost
Net Carbs with carrots: 8g- with cauliflower: 5g
Protein: 21g

I'm a dude from Canada and recently brought a beef kidney home from the store, I thought it was to be dog food but then I found you. I cooked it up last night using your method (I added some cabbage, extra carrots and doubled the spices and used only water as I had no sherry). What a good meal it turned out to be, Thank you!!! Dog is not impressed though...

We bought a 1/4 cow and in our state, it is illegal to sell the cuts individually when the animal is not processed by a USDA facility. Hence the sticker.

If you put a towel under your cutting board, it'll help keep it in place and it won't slide around.

You need to put a damp towel underneath your cutting board so that it won't move around

I have this in the oven right now. It is the second time I have made the recipe. I made it exactly by the recipe the first time, and it was really good. My husband loved it, and asked me to make it again today. I did not have any sherry, but I had just under 1 cup of flat IPA in the fridge. I topped it up with water and dumped it in. I tasted it before putting it in the oven, and I think it's going to be fantastic! P.S. it was fantastic! Hubby loved it, too. I will be using IPA from now on.

You should take a peek at Ashleigh Vanhouten's book called it takes guts. She has so many organ meat recipes in that cookbook :) I will use your recipe to make stew tonight! Ty for sharing

Keep your board stable: grab a paper towel, wet it and wring it out so it's just damp, then lay it out flat on your counter before placing the cutting board down on it. That's it. The damp paper towel acts a grip, preventing your board from moving around.

AT LAST I found the way to neutralize the urine smell! Been thinking vinegar might be the answer, and now I got it! Thank you!! I try kidneys again!! You have been the first one I found ever to recommend the vinegar!!

Instead of regular vinegar could I use apple cider vinegar? Thanks for posting this video. Looks like a great stew.

Thanks! I think you probably could. You also probably could use something like lemon juice. The important part is to use something acidic to neutralize the urea compounds in the kidney. I just used white vinegar as I had it on hand and it is inexpensive. Give it a try and let me know how it goes! :)

I noticed your cutting board spinning around, can be dangerous. If you put a damp cloth under the board it will not move. Thanks for sharing your great recipe.

If they contain urea and uric acid, are they that good for us humans to eat?

Kidney, particularly beef kidney is a very nutrient dense food. It contains large amounts of iron, zinc, folate, B12, selenium, and more. While liver is still my number one pick when it comes to nutritious organ meats, kidney comes close behind. Per my current understanding, I don't think the urea affects nutrition or absorption in a significant way. If someone have evidence contrary to this, please let me know and I'll take a look.
