I'm not sure exactly what you are asking. If you are making your own the best advice would be to follow the recipe precisely. If you are talking about the moisture level in a pre made product. If you find it to sticky and hard to roll I would use powdered sugar to roll and keep it from sticking to your surfaces and tools. If you are worried about it drying out to quickly, I would use shortening when rolling it out and working as this will keep it from sticking and help slow down the loss of moisture from the product.
