How to preserve olives - lebanese recipe - زيتون مخلل على الطريقة اللبنانية
Ingredinets : 4 kilos of olives
1 cup of olive oil
1 cup of rock salt ( 300 g)
1 and half tbs of citric acid
4 green chilli ( optional )
1 lemon (sliced)
Water as needed

This is my second year of preparing olives using your recipe, and everyone who has tried them says how great they are . A great video. I have, by the way, tried olives which other people have prepared, and have asked them if they were trying to poison me! Fantastic recipe!

Thank you for sharing, I have tried other people's recipes, but my family and I love your recipe is delicious, this is the second year I use your recipe, the first time I waited almost a year before I could eat it , this year I soaked the olives for a week before making them, hope it works!

I never realized how easy it is to cure olives. I have a huge tree in my yard in California and just let the olives fall on the ground. Sometimes the dog eats them. But I'm going to try this. Thank you for sharing.

Thank you for the recipe, this is exactly the way my Grandmother cured olives-only she used lemon juice. I just couldn't remember the ingredients. I did buy Citric Acid and will use that in place of the lemon juice. My Grandparents had an Olive Grove on their farm in Sicily and would make Olive Oil with the majority of their crop, but my Grandmother always held back some in order to cure them. I have her old Olive Masher and it must be at least 100 years old.

Last year i tried your way of curing olives at home,it took almost 6 months to get ready to eat...but after 9 months the taste turned out to be amazing..thank you for the recipe. I am going to cure another batch today.

thanks so much for the recipe. I tried it with my harvest of olives in May (I live in the southern hemisphere and have only one olive tree). Six months later they are the best olives I have ever eaten and small jars of olives are a great present for friends! Thank you :)

Hi there may I ask how to eat the olives after they are ready to come out of the jar please? Do I rinse the olives? Add oil or how to season it please? We've left the olives for almost 6 weeks now and some still taste slightly bitter, but some have very slight fermented taste, I wonder if we've done something wrong.. :-(

@@dhuniya108 They sound fine. Eat them straight out of the jar or rinse (your choice) To reduce the bitterness (next time) soak the cracked olives in water for 7 days, changing the water each day. This will extract /dilute the Oleuropein (bitter taste). Once washed daily for seven days then add to the brine solution and store for a minimum of 4 weeks. Taste is very much country/ region-specific. What tastes good to you may taste horrible to others. It takes a few seasons of playing with curing to find what you like.

A great recipe indeed and the way u explained each and every step is really awesome. A little suggestion that instead of beating/pressing the olives with a masher, if a circular cut on olives be made so that would be great. Thanks

Wouldn’t it be better to use a glass jar than plastic, to avoid mixing any toxins released from plastic into the preserve?

Rob Moffatt I bought it from a Turkish shop as pickled jar when we finished the pickles I cleaned it and use it back for the olives 🤣

I have a question for you. My jar was ok until i opened it to take sme olives out with a dry spoon. But the next day when i opebed the jar,there was white thing on the top which was not fungus and it did not change the taste of olives. Plz tell me how to take olives out of the jar in a way that white things does not appear on the top

I used this recipe last yr. I also added the lemon olives. Unfortunately the olives became super bitter, because of the white part of the lemons. A professional chef told me i should only take the zest of the lemon. This is what i sm going to do this year.

some of my olives are small and float up to the top and sit in the olive oil layer, should i weight them down under the liquid?

Yes otherwise the olive will get rotten on top but doesn’t make any poisons for the body take the rotten top part and throw it . Sorry for the delay I was abroad .

Hello , I got mine from Morocco as present from a friend Btw I live in London but I think you can find them in any Mediterranean grocery specialty of u live near Michigan there is lots of Lebanese groceries there .

We smash the olives and preserve it , it will take less time but there is people preserve them without smashing them it will work of course but it will take more time or more than 4or 5 months . Hope that help , you’re very welcome 🙏

The bitterbess still goes away but it takes a long time. Like 8 to 12 months. The wait is hard but it is even harder to not eat them all quickly once they are ready.

Hi! Why some people put them in salty water first (brine) for many days? Is this another method to cure olives?

Daisy Cecilia Green or black olives, can be cured in water, which removes the bitter taste. They will have a fresh, nutty flavor and firm texture. After a week or so of water curing, they are stored in a pickling brine, which adds a salty flavor. There is no different way to preserve olives , this is the best way .

you need the acid so use lemon juice or vinaigar otherwise it will be bitter

If you don't use citric acid up the lemons by at least 5 times or more. Ancients used vinegar. The acid and the salt protects against botulism. Important!

Hi , yes no need to rinse the olives after 4 weeks or 6 weeks the bitterness will disappear , the salt and citric acid will help a lot .

I've 🐝 doing olives for about 5 years now and I cute them with lye first. Takes about 12 hours. Much faster and easier for me.

You can add lemon juice about half a cup. If no it’s okay just add water and rock salt .

I have preserved olives using this method after about 2 months a white orange yellow gray layer appeared on top with a peculiar different smell coming out of the jar when opened,, I washed all the olives and have spread them on a tray in the sun hoping the smell will go away , they taste alright though , I want to ask if these can be consumed if yes then plz tell how to keep them preserved from this point on

Consider the appearance. If the olives are in brine and there’s a layer of white mold at the top, Mezzetta says it’s fine to remove it and continue eating. But if they smell and taste bad that means the olives not safe to be eating . But after you washed them if the smell goes away it’s okay just add on them salt , bit of lemon juice and oil do not add any water make sure all the olive on top are covered to avoid any rotten I hope that help all the best .

Followed receipe, but after 4 weeks, top of jar was covered with mold, would they be safe to eat? if not what did I do wrong?

Next time put more salt, a teaspoon of salt for every glass of water. Also add oregano leaves and garlic, and more olive oil on top. O and make sure that the jar is very clean, clean it with hot water. All of these should help prevent mold.

After you make this method as showed in video you have to keep them between 1 to 2 month after this the bitterness will go .

@@FazeedTv Yes sure u can do them without lemon or citric , my mom also she do green olives with rock salt only without lemon taste delicious . Also You can keep them for more than a year in a place away from sunlight. They don’t go bad in a short time.

citric acid tastes awful, by far the dominant flavour.. so sad the number of otherwise excellent traditional dishes that have been perverted by it. People just need to take more care with food hygiene, remove air pockets, etc.
