I changed the Data Source like you showed and after I click ok on the Change Data Source popup, the processing wheel keeps spinning for over an hour or it crashes! Please could you advise? Thanks.

It can effect the calculated fields. Either you can edit those calculated fields manually by adding the updated columns that are present in the new dataset or you can also do replace references. Replacing the old field with the new field as done in this video

I have few doubts .. what if new data has more columns added?

No issues. Those new columns will be visible in Tableau workbook once you replace the old data source with new data source. Just make sure that all the columns that were used to create the dashboard using the old data source are also present in the new data source even if the column names are different so that the views won’t get affected

When you are creating a dashboard, the first requirement is that you must know what all columns you have in your data source whether new or old. Then only you will be able to correctly replace the data sources.

You won’t be able to open the excel. To get the data, you will have to export data to csv. Go to Data tab on the menu bar-> go to the data you want to export-> export data to csv. I hope this will help
