Crack and beat 2 eggs. Add some oil in a pan. Add the eggs and spread the eggs on the pan. Flip the eggs over when they are set. Transfer to a chopping board and cut the omelette into thin strips.
Prepare some sweet sauce, chilli sauce, grounded peanuts, dried sole fish powder, crispy shallots, rinsed lettuce and parsley.
Lay 2 pieces of popiah skin on a flat plate. Spread 1 tsp sweet sauce, 1 tsp chilli paste and 1/2 tsp shaved peanut on the popiah skin. Add some lettuce, parsley and egg strips.
Use a spoon and fork to spoon the popiah vegetables into the center of the popiah and evenly spread the vegetables out. Sprinkle some fried sole fish powder and crispy shallots.
Fold the popiah from the bottom up until you get a wrap. Fold in the sides of the spring roll on the left and right and finish folding the wrap tightly. You should get a neat and tight popiah at the end.
Use a sharp knife to slice the popiah into smaller pieces and place them on a serving plate.
And that’s how you fold a perfect popiah.
