The profit problem, can also be explained this way: If you have a cake due, but you fall sick, somebody needs to do the work. You pay them for their time, instead of yourself. But you, as the business owner, didn't make a dime yet, because you didn't add a profit margin!! Thanks Arnie and Laura for your awsome videos and this incredible business series! It really made me think about my pricing, even though I already became more confident over the years. But I apparently still have a long way to go! Thank you for all your help!! I saw a lady in a Facebook group last week who said that someone had asked her to make 150 individual 4" decorated cakes for an event and then wanted to pay her the equivalent of $70 (total!!) for about 150 hours work (I thought it would maybe be more than that actually) she was stressing that she had turned down the order in the end... I directed her to these videos.. I hope she came and saw that she was completely right to laugh at the client's "offer"! What you are doing here is truly brilliant, educating us from a completely different perspective and giving us confidence in what we are trying to do, and most importantly, valuing ourselves, whether we are true artists or little bakers. I have learned so much and can't thank you enough... #powertothebakers!! #iamstromgiamableican! ❤

Thank you for the shout out! :D I'm really glad you included cupcakes, cookies and cake pops in this one. Sometimes clients really don't understand the amount of energy, time and skills it takes to produce those elaborate things. Even though they're small. When I first did cake pops I myself thought it should be considerably cheaper as they're small. However, when the orders started coming in for cake pops I honestly felt like pulling my hair out. I quickly realised it was either I increased the price or stop making cake pops entirely. They really are intricate and time consuming. I wouldn't recommend anyone giving up on something that they're good at it. I also realised those orders weren't only coming in quickly because they were cheap but because people were amazed that they got high quality cake pops for almost nothing. That's when it hit me hard that I need to value myself, my time, my talent and my business. Thank you again for this video and I cannot wait for the next one. ♥♥

i cant thank you enough; your video series has given me the confidence to charge what i really deserve for my work. i am always inspired after watching your videos. raising the prices definitely worked for me it was a little hard but i kept reminding myself about how i hard i work on my cakes and cookies and how i wasn't making any profit until i didn't feel any guilt.looking forward for your next video.

Hi vecinos!!Thanks for the shout out in the last video!!! Thank you for this video, you are so right we have to be confident all the time. I usually ask clients to pay in full one week before the event, yesterday we got a new client and she paid the advance payment, but she said the wedding planner was going to be at the venue the day of the wedding paying the suppliers. I replied that we don't work that way and I was about to give in when she said "I'll pay in full right now"!! And she even ordered bizcochos like out of the blue, we practically doubled our sale in minutes!!! 😀 😀 😀

I'm super blessed by your cake business series. I am growing more confident and I now know that I can set my price and not run after customers. I have learned that if I undercharge I work for my customers but If I set the right price I work for myself and reward myself doing my cake business. Thanks. God bless you guys.

I usually have 4 or 5 sheet cakes for graduations and this year 0....I decided to implement this and found people don't want to figure in $250 and more for a graduation cake.....so I guess less stress this year. 1/2 sheet cakes are a ton of work and people don't understand that.

I raised my prices and I have lost customers :/ I usually have 5 to 7 cakes a month and this month i only had 2 :( . Just have to pray to God to send me good appreciative customers :)

Yes Dora. That's exactly what you need to do. Just thank God in ADVANCE for GOOD clients. GOOD FOR YOU for raising your prices! :) You losing customers is NO SURPRISE. That is something we should always expect when we raise our prices. Don't let it phase you though. Just keep in mind that those customers you've lost, had you been charging correctly for your work from day one, would have never been your customers in the first place. God will replace each and every one of those clients with quality clients. Don't budge or waiver. Patience is key. It WILL pay off. Guaranteed! Hi Laura and Arnie!! Thank you so much for these videos! I look forward to them every week! I took my first order last week using your pricing techniques and the buyer didn't bulk at all at the price!! Yeeehaaa! I still struggle with how much to charge for profit. Is there a way to know...should it be based on a percentage of the total cost? Also, what do you use your profit for? Do you put it back into your business? For equipment, etc? And, can you do a video on how to do the consulting part of this business? That would be awesome. Do you do it on the phone, in person and/or messaging? I have a Facebook page for my business and get inquiries that way most of the time. Thank you!!

Hi Judy! We hope you're doing well! You're very welcome. :) That is so AWESOME!!! You SEE!!! It DOES work! The minimum amount of profit a Cake Artist should make on the decorations is pretty cut 'n clear with the 50% mark up. The amount of profit you choose to make on the actual cake alone however, is totally up to you. Most "regular" businesses that sell products to the public use a profit margin of anywhere from 15% to around 30%. But, we have to remember that what we do is not your "typical business". Our craft is very artistic and hands on. Not done by a machine. You have to ask yourself, "what is profit margin I'm happy with?" A 15% margin for example, for us doesn't cut it, but it may for others. When Arnie and I have done the math on our own cakes, right now as things stand at this point in our careers, our profit margin ends up being somewhere in the vicinity of 27%. But again, with time that will and should increase. Remember that your price per serving should include the base price (which covers your out of pocket and your time). What you charge per serving according to intricacy should cover not only 1). your base price, but also 2). the increased amount of time you will be spending on a more intricate design, and 3). your profit on the overall cake. What I would suggest is "make up" (on paper of course) a few "pretend cakes". Give each cake a few different intricacies and figure out what you "would" charge for them using the techniques we've taught. Calculate what your profit margin % is and see if you are satisfied with it. If you're not happy with that % and you feel you deserve more, then rather than just adding a higher % profit margin to your cakes, just increase your prices per serving starting from you simplest to the most intricate. That way, when you quote a price, you know you have a good profit margin. As time goes by, I would recommend at least once a year, look at your work, see how it has improved, and recalculate your prices to reflect the level you are at. We increase our prices (therefore increasing our profit margin) once a year. I hope this helps and doesn't confuse more... LOL. Let me know if anything is unclear. I know that in my brain it all makes perfect sense but I may not be explaining it as well as I have it in my head. LOL. What do we do with our profit? About half of what we make goes back into the business and the other half is for us. Bills of course, we save for the future, and have LOTS of fun with our babies (doggies). We rarely buy equipment as we acquired just about everything we need in the 1st year. Eventually we'll buy nicer refrigerators for example, and perhaps a new delivery vehicle, but that's about all I foresee for the near future. Thank you for the suggestion on the video! We actually have that planned VERY soon. "Client communication" is so vital in the business. Love, love, love your tutorials and business advice. It has been very helpful. Once you start your own business, do you have to immediately get a tax ID from the IRS? Do you factor in sales tax into your overall cake price or do you add it in after? I know you may not be an expert in this area, but any advice on where to find such info would be appreciated. :)

Thank you Peggy! That's wonderful to hear! You don't have to get a tax ID from the IRS if you are "self-employed" as we are. For all of our tax purposes we just use our SS#'s as all the tax forms we receive are in our name. BUT, that's not to say that you can't. It's not absolutely necessary however if you are running your own cottage business as we are. :)

I have seen some cake artist charge extra for Ganache filings or Meringue buttercrems. How would one go about charging extra for these specialty frosting/filings? Would I charge for the totally cost to make the ganache + plus my time or would I just add an additional $1.00 to the serving cost? Thank you in advance. :)

Hi Peggy, I have too. If you choose to charge extra then you would need to increase the price of your cake to make sure it covers the cost of your extra ingredients, plus any amount of time it takes to obtain the ingredients (if special time is needed) as well as if it will cause you more work than it would a "typical cake" (as far as time). This cost would probably only need to figured out once (like we did in the video where we discussed base pricing) if you make these types of cakes a lot. If each cake you make is different however, fillings, icings, etc., then instead of adding an extra $ amount per serving, you can just add an additional total cost. I hope that helps! :)

Hello Laura and Arnie! Another encouraging video....thank you! I have a question about something you actually talked about in another video. You were explaining how ,when looking at the cost of ingredients, that you don't break them down into cups, teaspoons, individual eggs, etc., but, instead, factor in the cost of the whole pkg.....bag of flour, sugar, etc. so....even though you may only use a few cups of flour, you count the cost of a 5# bag? What if you buy some of your ingredients from a place like Sams or BJs, which only sell very large pkgs.? This is really confusing me. It seems like this could lead to very easily overcharging. Or, do you suggest just initially buying from a grocery store to get the base prices? Thanks so much for sharing all of the wisdom you've gained over the years!

Hi Joann! Thank you so much! In the case where you are buying huge amounts like at Sam's, then of course you'd want to break it up by amount, because you know you will be able to make MANY cakes with just that one trip to Sam's. If you don't do that then you will definitely be seriously overcharging. For most Cake Artists, like us, who run their businesses from home and buy small amounts at a time, it's not overcharging because we are taking our time into consideration (grocery store trips, shopping, standing in line, etc.) I 100% agree with and support your suggestion about first buying in small amounts at a grocery store to obtain the base price of your cake. Hello maritza mathura, this is your beginning, I suggest you choose a design from a youtube video and stick to the one video you like. From this cake design you will learn the challenges of designing a cake and when next you design such a cake there will be much improvement, I assure you of this. It is amazing to look back at the first cakes we made. Good luck!

Hi Laura and Arnie thanks again for your amazing tips.and videos..I have a story..since I increased the price of my cakes I haven't done any work lately..so I got a temporary job in a packing company..on lunch.time my coworker brought a cake to our table that ordered from a girl who.works there..ok.it looked good to me but I could see she wasn't too experienced..guys the cake was delicious..and pretty..but the girls.commented it was expensive..ufff! I though..this are NOT my clientes..but then..someone said..hey!! you make cakes too!!..why don't you.bring.some samples!! the girl.of.that cakes.looked.out.our table surprised..so my question is: how do I manage a situacion where there is some competence and I don't want to look advantageous or in the worst situation I don't feel comfortable offering my services when I know the person is not willing to pay my work? should I let know the other workers that actually I am a baker when someone else is around? sorry for being.sooo long story love your videos :)...bu the way..I decided to quit thi job...is a blessings but I am not happy there..I.miss my cakes ..

You are VERY welcome Alicia! This awkward situation can be VERY EASILY nipped in the bud by telling them that you "don't provide samples". If they want to sample your cakes, LOL, they have to order them. Here's the thing Alicia... You ALREADY KNOW that those ladies are not your clients, ESPECIALLY if they are saying that THAT cake they ordered was "expensive". You probably know that you would charge more than whatever she charged for a similar design, plus, you KNOW your cake would look a lot better. Right? So don't worry about that situation, and don't even see that other girl as "competition". Let her have them as clients. God has MUCH BETTER clients in store for you Alicia. You just continue being patient and thanking God in ADVANCE for promoting your business and for bringing you the right clients. I promise you it will happen! Do you know that I've learned from experience, that when business is calm and the orders aren't coming in, that just means something BIG is about to happen! God is working on your behalf (if you trust Him) and He's making things happen "behind the scenes" that you're not aware of. You just keep trusting, believing, and EXPECTING. Don't you dare budge on your prices! It's better to have no cakes, than to give away your work. At work, what you CAN do is talk to people about your cake business. Have photos of your most beautiful work on your phone and show it off to everyone! There's nothing wrong with promoting your own business to your co-workers. If they mention the other girl that does cakes you just say, "Yes, she does awesome work". Always compliment other Cake Artists. Never shoot them down (which I know you don't do Alicia). When you bless others with your words, God will bless you in return. And of course, don't ever "offer" your services to someone who you already know WON'T pay. The RIGHT clients will seek you out and come to you. Tell EVERYONE about your business. I mean everyone! That's what Arnie does on a DAILY basis, EVERYWHERE he goes and we get TONS of business that way! God bless you Alicia and I KNOW I'm going to hear great news from you in the future. Put God FIRST in your life and in your business and HE WILL make it happen for YOU! He's doing it for US, and He'll do it FOR YOU! I promise!!!! :)
