The Script: How to Crack Black Walnuts
Tools
Crusher: There are other good crushers on the market. I have been pleased with the combination of power and control that I have with the one pictured. There is no comparison between the function of this tool and a vise or a hammer for instance.
Screw Driver: I find this tool to be very helpful in separating the shards of the cracked shell. It is not so much a pry as a gentle tease to separate the shell fragments without bruising or breaking the nut-meats. It is certainly not used as a nut pick.
Diagonal Electrician’s wire cutter: This sturdy tool is the closest we come to the powerful teeth of a squirrel. Used properly it can greatly enhance pleasure and productivity when shelling this hard nut.
Wearing a glove on the left hand makes it possible to reduce the shower of shrapnel from the fracturing shell while protecting your fingers from that shrapnel.
External Walnut anatomy
The Blossom End of the Walnut shows itself with a bit of a point.
The Stem End of the Walnut tends to be flat and will sometimes have a bit of a depression.
The importance of making this distinction will be shown in the crush; in the inspection following the crush; and in the use of the Diagonal Cutter in step four below.
Crushing the shell
Lining up the Stem/Blossom axis in the crusher. This exposes the Blossom End to the full force of the crusher resulting in complete loss of structure of this end of the nut as well as a number of cracks in the rest of the shell extending to the Stem End.
Inspecting the crushed shell and use of the Screw Driver. Note that the damage is primarily at the Blossom end of the nut while longer cracks extend through to the Stem End.
Getting a look inside. Note how the nut typically falls apart into four quadrants each of which contains a plump nut-meat.
Internal Walnut anatomy
You will see that the nut naturally falls into Four Quarters plus a bridge, or connector, as exposed by the initial crush and use of the Screw Driver. Note that the “bridge” is found at the Blossom end of the nut. The initial crush will almost always shear the “bridge” from the four quarters. This is no great loss and the resulting fragment is also useable.
Use of the Diagonal Cutter will help to expose the undamaged quarters. This step emphasizes again the importance of distinguishing between the Stem and Blossom ends of the nut. Using this tool at the Blossom End almost always yields frustration.
Always approach the nut from the Stem End when using the Diagonal Cutter.
Summary
The combination of a very hard shell of the Black Walnut, and nut-meats that almost fill the four compartments means that there is very little room for error in crushing the shell. Too much pressure and the nut-meats will be crushed beyond recognition and will have tiny fragments of shell that will break (your) teeth if not removed. Too little pressure and you will be frustrated by the many cuts you will have to make in order to expose the nut-meats.
Using a good crusher which allows for fine control of the amount of pressure is essential to a good result. The additional use of the screw driver and the diagonal cutter will reduce frustration and enhance output and the quality of the product. The resulting bounty of flavor, texture and beauty will be enjoyed even by those persons who lack the patience and sharp teeth of a squirrel.

When I was a kid we just used two bricks to crack them open. After you got good at it you could get mostly 1/4 or 1/2 of the nut meat pieces out in one piece. I’d hate to guess how many thousands of walnuts I shelled but every season I always saved out enough for my mom to make me my own pie.

For some reason the shells on my harvest are much thicker. Therefore I can't seem to match your efficiency. However, I learned a lot from your video that has saved me a lot of time. Can't believe I never considered using side cutters!

I like the way you remove the nuts from the shells and save the meat of the nuts. I have to pick up some nuts and remove the outer hulls then later remove the meaty nut from the shells. My grandfather showed me how he removed the hull and shell years ago, but I have forgotten that. I will try to remove the shell using the tools I have here already and get ready to bake and eat them. We have plenty of black walnut trees on our land and I need to eat them as there isn't enough to sell.

I came to the exact same conclusions as yourself. I was using a Bench vice for a couple weeks and they destroyed the internal nut which became stripped overtime from that hardcore dynamic pressure release when you crack through the shell..it must microvibrate backwards against the vice's threads. Currently using a 3/4" pipe clamp, which works excellent and is value oriented with easy crushing 90% of the time. I've never used your device but hope to build one soon for comparison.

those walnuts are huge! I'm in southern Ontario, Canada, and the walnuts I gathered are half the size of the ones you have in the video.

+Jon Barnhard It has a lot to do with the age of your trees. I was thinking the same thing, until I went further into our woods, and found the older trees. Also, the quality of the ground the tree is on. If it is in a lower area, with good water flow and lots of nutrients, they will be even better. :)

Jon Barnhard older trees. A lot of the trees up there are older cultivars not bred as well as younger ones. I find that the grandmother nuts....as I call them....have a more wonderful flavor though.

Amber M. And..l.im less likely to find worms in them. I just picked up about 200 lbs of them and not 1 worm did I find. Interesting. I've not iced his for years now.

this is a simple way to crack them its safe use a hammer a sock and a cement block put 6 black walnuts in the sock flatten it out on the block whack it a few times bingo broke shells dump them out try some more

I use a vicegrip they only crack them and not mash them.

not a good method over time. This product does NOT mash them..it cracks along the shell's lines from bloosm to stem end.. see his large pieces removed..that's what you want. it's about how you dry the walnut as well.

I think I would round off my screwdriver so it doesn't poke a hole in my hand if I slip . I actually ordered a English walnut tree when I got it it was small and couldn't tell the difference till several years later when it produced nuts I then found out it was a black walnut tree .but I still love the tree it turned into a tall wide beautiful shade tree

Why wouldn't this work on hickory nuts as well? As I kid I used to smack the bejesus out of them with a hammer and them poke through for the tiny fragments. Loved 'em.

A cup made in the press for both ends of walnut approximating the shape will create a better shattering of the shell without crushing the meat. The judicial use of a die grinder or drimel to thin the tips of the nippers will make them work better.

You are right. As it happens the press featured in this video has the cup shape above and below and is an important design feature that saves a lot of crushed nut meats.

I have a nut cracker that will break up a five gallon bucket in five minutes, all day long. Alot of half meats, mostly quarters. No extra tools or hand cracking needed. Home made, power supply heavy duty half inch drill .

Thank you so much for your help I'm 79 now with an abundance of nuts . I know I did it as a kid but I don't remember how we did it tried it recently but those nuts are like the saying goes That's a hard nut to crack . My hands are arthritic they hurt when I get done using them so I'm gonna make one of those crushers like u have . Does it crush the nuts or cut them . I think I'll make mine so I can cut some nuts and crush some

With this piece of equipment it is easy to crush but I prefer to push only enough to crack the shells, which I can then empty by extending the cracks and opening the shells further with the diagonal cutter.

Black walnuts: Want to crack'em with your hands:: Soak husked nut (in the shell) in salt water for couple days.. rince then put in warm area to dry laying (spread them out) next to a wood stove or heated garage. When they are dryed out (will feel lighter in weight) take a couple and crack'em with one hand! My grandpa taught me this method when I was a kid and it works every time. In Michigan I get a kick out of betting folks that I can crack two black walnuts together with one hand... I always win! Good luck! 🤙😁👍

It's so feminine. You see the hips, you remove the skirt and the girdle..and guess what you get. It's all laid out and there for enjoyment. And then you turn it upside down and they are our lungs. Get it cracked at the other cross section and you get a heart shape.

I think it’s easier to crush from the flat sides, the shell is much softer there.
