Who knows? Anyways, in this video i'm going to show you how to smoke beef ribs hot and fast in a charcoal BBQ!

Awesome vid mate! When you opened the smoker lid after the first 1.5hr; WOW! Even though the hot & fast needs the long rest, it's still a great option if your time poor for the cook👍👍

Great video, and always interesting to see a different cooking method like this. I get resting the meat but how do know, in this case 4hrs, how long to rest it for? And is it different when cooking hot and fast? Awesome bbq-ing!

Hey mate thanks! Honestly I don’t know the science behind it but I always like to rest for 30-60 mins at minimum. Beef ribs are quite forgiving so can almost serve immediately

Was on the way doing this fast cook (didnt leave enough time) thinking "yep sweet, 4 hours" .... then hearing about the 4 hour rest.... i think ill be eating some chewy ribs tonight

Love your Bronco videos. I'm still deciding between an offset or Bronco Pro.. Question: have you done a full Packer brisket on the Bronco? If so, how was the bark?

Nice work Aaron. I’ve done em hot and fast on the Weber and no wrap. I was surprised that you wrapped yours as you were coming out of the stall temp range, it would have really sorted the bark out. Now I got a hankering for ribs, but the cape grim packs at my closest Romeos are averaging $60 😢 might get the coles ones.

Great vid. What would your fuel setup and number of lit coals be if doing it in a kettle? I’m thinking a 2x2 snake or an offset plate with about 30 lit to start with for either?

Hey mate, love your vids. I have a question, would you say the gist of low and slow is to basically cook at 120c until tender? I'm looking to do my first low and slow cook but feel I don't really understand it, and don't want to be solely following a recipe if that makes sense? Just feel like I'm missing the gist of it. Pretty much mate. There’s a fine line between tender and overdone/mushy though so that’s the understanding you need to know.

Always used gas when BBQing but want to give charcoal a go. Don't want to spend too much to start so after some recommendations. Was just looking at the Matador range from Bunnings. Would you recommend a Radiant Kettle BBQ or a Bullet Smoker? Will probably be doing ribs and briskets etc. to start with.

What would be a good alternative to butchers paper? A tray covered with aluminum foil? Is the four hour resting period after the cooking process mandatory? Or could you eat them right after they come off the BBQ? Or for how long do the ribs have to minimum rest?

Could use foil. Honestly ribs are very forgiving. I have every confidence these would be great with no rest

Wow, hot and fast used to be 300-325f lol. I usually cook them at 250f but I noticed one end on yours didn't shrink like mine do . I usually go Cape Grim, but not at that marble content. Do you think the lack of shrinkage was due to the temp? Great vid as always mate!

I never wrap anything on the bronco. I cook at 275 and let only open the lid when I'm at temp. Only run lump and everyone I have served say it's some of the best bbq they have had. Bronco makes you a pro.

Everyone from whichever county they happen to be from should follow the example of how well you take care of your equipment. Of course you can see that this cooker has been used but look how clean the area where you put the charcoal in is. Old ash and grease buildup definitely negatively affects taste of any barbecue.

Beef ribs are super forgiving. Honestly can get away with no rest.

So you rested them for 4 hours so in reality it was an 8 hour cook? I’ve done the beef ribs with a 3 hour cook unwrapped and 3 hours wrapped and then rest for an hour or so. I don’t know if I’d call these quick to be honest.
