Thanks for the very informative video. I've recently switched to cooking the day before, and using the hot hold method. It allows me to get a good night's rest before the big party. The longer rest results in better BBQ!

Impressive that is a ton of work. My brother and I cater for some football teams d1 and the most we catered was 220. I couldn’t believe how much work it was. Everything you did reminded me of that I was exhausted for a week straight

Sounds like a lot of work an lots of fun,an fellowship, something I say .it takes lots of work to have a good time ,our church we use to go to ,,we did 350 to 750 chicken plates for fundraisers ,we would have like 5 big grills going ,brothers an sisters working together pots of potato’s an green beans ,bread, sauce it was great,

It all got mixed in the end, and that was the goal. We all tended each others pits during the cook since we were making beans, pickles, onions and managing a team of volunteers that were there to help us the day of the cook as well. It was a true team effort.

Where do you source that much wood for smoking?

I source it on Facebook Marketplace usually. I found a guy who gets logs from the power company when they cut trees down, and he saves his Cherry, Oak and other good smoking wood for guys like me. I buy it by the rick.
