Guys, this cut of meat is a sleeper. If you take your time, and cook it right, you can have a great meal out of the gate, and use it in several different ways for several different style dishes. I completely suggest you try it. Bonus video coming on Friday!

You said cook it to 245 internal? I believe you meant to say 145.

Doesnt say how long he cooked it for and gives the temperature as 245? Beef at 245 will be ruined. This chunk of meat is $50. smh

Just did a beef knuckle to me that is a little over cooked as I like rare. I sliced mine real thin like roast beef deli meat and will be using a creamy cheddar sauce on a pretzel roll

If I don't have a smoker, is there a way to roast it in a dutch oven in my oven instead, using the same marinade?

Absolutely. Just follow the same process in your oven. You won't have the smoke flavor, but everything else will work the same. Thanks for watching!

Let me hit that google for you real quick... "The knuckle is an exceptionally lean, very affordable cut from the Round (between the Top Round & Bottom Round). It can be cut into roasts, pot roasts, cubes for kebab or stew, etc. It can also be cut into low cost steaks which are typically cut very thin and pinned (cubed) for tenderness."

How long did you need to bring it up to temperature?

If I remember correctly it took about four hours. A probe is definitely your friend on this one.

At 4:25 you said you want the inside temperature at 245° I think you meant 145° if you were taking About the beef. Thanks for this did it myself and prime rib rub is the bomb on this.
