Fatty, flavorful, juicy, brisket. It’s one of my favorite types of barbecue to eat. And do you know what? I always struggled to cook it perfectly till I started to use sous vide. Now it turns out excellent every single time. I'm going to show you how.

I love a good brisket, and using sous vide allows me to cook it perfectly every time! There are several approaches to making brisket, for steak-like I usually do between 131°F and 140°F (55°C and 60°C) for 2 to 3 days or 150°F (65°C) for a "perfect BBQ brisket", but if you want something along the lines of traditional results you can cook it at any of the braise-like temperatures for a few days.

try putting a few hours of smoke before bath time. Then, another couple of hours of smoke after the bath. It sets the bark perfectly.

I sous vide brisset @155 for 24hrs then smoke it for 3hrs the next day, cut them into slices ,take all of juices from the bags boil that, mix to gearther and then serve as a sandwich

Is that for a 15 pound plus? What about a 8 or 9 pound grass fed brisket? Any suggestions would be appreciated.

I love your explanation. Currently have a brisket in for 24hrs at 155. I hope that will work. How long do you sear it?

I am going to sous vide it for 3days. Is that ok at 155? is 3 days to long? I then plan on putting it in a pellet grill for about 2 to 3 hours. If I do that, what temperature would I set the grill for? Oh it is a 14 pound brisket.
