I put my cakes in a cake box put in fridge and it keeps the condensation out and even when you remove the cake from fridge it stays dry. Got that tip from a professional baker.
Yes, this method works every time. I even take it a step further and wrap the entire cake box with cling wrap and let it sit outside the fridge in the wrapped box till it comes to room temperature

Have to agree with you MMF is awful for the hot summer months. i had a wedding cake just fall apart after it was delivered. Thankfully it was for a co-worker and I only charged for the materials used. But, I felt very badly.

i live in Cornwall England so it dosent get that hot, not like australia etc, but even weve had very high temps and humidity so i swear by this paste, its very forgiving and easy to use, xx
Yep! Definitely Massa Thchino works well in humid weather. Without fear you can keep your covered cakes overnight in the fridge. Its bit expensive but worth it.

All about the temperature is fine, but what about in India when its pouring down rain and is warm at the same time? I also have to transport the cake 60 kms away from home.
Oh that’s such a tricky situation... even to the most experienced bakers this is a hard delivery to make... I’d say make sure your cake stayes in the fridge until you are about to deliver and keep it in a box with dry ice on the outdide of the box
Thankiu so much, I make cakes covered with buttercream and some elements are of fondant. When I take out the cake and start to stick de elements, they start to sweat. I don't put the cake back in the fridge, it happens when I'm sticking the elements in the cake 🥲

I don't have a card board box and not enough space in my fridge even if i wanted to. I usually freeze my buttercream cakes so i can move them around freely, but this is something you cannot do with fondant. Now I gotta stack two fondant cakes and i kinda don't know what to do. Whereas I usually do not use the fridge at all after putting on the last bit of buttercream when using fondant, I'm not sure whether this is possible while stacking cakes, as it will not be as firm. Do you have any tips and tricks for that? Well if you do get what I'm trying to say as I'm not as good at explaining🥴😂 (Would it be enough to put fondant over each cake, let them sit overnight so the fondant hardens and then stack them the next day or to be like really fast and do the stacking right after covering the cake? Or do both options suck?🥲) I'd be really thankful for any kinda help🥺
I see what you mean I normally stack right away but you can definitely cover them then pop it in the fridge then stack after it will be perfectly fine 😊

Hey actually i am gonna paint my Fondant cake gold using vodka and luster dust and i have to travel with the cake for 2 hrs to reach the venue. So do i paint it and keep it all ready and set it in the refrigerator (in a box all the time) and then carry it in an AC car? Will that work. I am worried if my gold dust will come off due to the water specks or something and how long i can refrigerate this cake? Just a few hours or like a day before will also work good! Really need ur help. I kniw this is too long but please help me
You can put the finished cake in the fridge in the box then drive in the AC car... it will only start sweating and running the gold dust if it's really hot in the venue... but that's gonna take a while before that happens so I would say you should be good to go 😋 just bring extra gold dust and vodka with you to patch up any mistake in case you encounter anything wrong when you arrive at the venue... good luck with the cake dear hope it all turns great...
You can try to insert a toothpick at the bottom of the figurine if you can and stuck it on the cake that way… it won’t always work with every shape but it’s worth a try 😊
Yes if you're working with ganash thats ok but with Italian meringue buttercream for example that's a disaster waiting to happen lolol... I've had a cake collapse on me so I'm speaking from experience lol

It might be the brand of fondant you’re using… the only thing that will make this happen is heat and moisture… fondant is mostly sugar so keep in mind that it’s very susceptible to heat and moisture but some brands do better than others… I’m sorry I don’t have the answer you’re looking for but in this case all you have to do is experiment with different kinds… every single fondant is different and without being exactly where you are I can’t tell you what’s going wrong… you have to do some research when you have free time and get to the bottom of it…
My fondant in melting after 20-25 min of completing the cake. And It's not getting as hard as i can make a flower. I used cmc powder also. But not working. Please help. I use snow ice fondant Malaysian brand
Hi there 😊 oh no I’m wondering if it’s simply too hot for the fondant to set… I’m assuming if you’re using cmc powder you’re making figurines right? If that’s the case try using hun paste instead or pastillage… pastillage is great because you can make it yourself super easy… there are so many great recipes here on RU-vid for pastillage… try that and see if it works… good luck
I wouldn't suggest using whipped cream under fondant... I've never done it myself because it's not strong enough to hold the weight of the constant... you will end up with a disaster

Ok so if you are using chocolate Ganesh as your icing and filling you can probably get away with leaving the cake at room temperature... if you are using buttercream or any perishable fillings like cream cheese or fresh fruit then no in the fridge... with buttercream under the fondant it’s tricky some people say it’s ok at room temp some say in the fridge... I put it in the fridge just to avoid any headache.... that being said in the fridge I would just put the finished cake in a cardboard box and pop it in the fridge overnight

I normally take it out right before I deliver it or they pick it up... it's the last thing I load into my car... the longer it's in the fridge the better

I wish it were that simple... but sometimes you have to refrigerate the cake for many reasons... not everyone's recipe is the same and some cakes get softer than others at room temperature... I'd never try to deliver a stacked wedding cake at room temperature that's just a disaster waiting to happen 😫.... i know some people do but I'm too afraid so I'd rather deal with a little condensation... #pick your battles 😁🤷🏾♀️
@@JaniesSweets the cake is sealed when covered with fondant. I made custard filling and didn't have a problem. Of course the cake was frozen and used ganache before fondant. Observe cleanliness when making cakes. It will last for a week if handled properly.
I have decorated my cake with buttercream icing . i have put it in a cardbox then in a fridge( refregirator). I will leave it there for 10days. Is it safe in the cardbox in the fridge for upto 10days?

Thats a very valid question... not weird at all 😋 Unfortunately once you put the fondant on the cake it will start to dry out... but that's ok to serve it like that so no worries 😁 while you are working with it Male sure you are working fast so it doesnt dry out before you add it to the cake...

You can do that but keep in mind it will sweat A LOT so make sure you put it 1st in the fridge for a couple hours then outside for a few more hours before serving

Ya I graduated from The French Pastry School and Carma fondant was the only brand we used. Its definitely more expensive but its worth it! Its way more elastic and doesn't dry out or give "elephant skin" as easily, so its a lot more forgiving and easier to work with. condensation gone now ...the fondant gets melt from edges and it has destroyed the cake from sides 1 have removed 1 side of the cake (including ganache & fondant )
the watery fondant is coming out drop by drop ...it is making much proble to manage the cake as cake is having double fondant layer on half side ...one is for coating and one is for decore ...but the upr layer is quite hard ...but the watery fondant is coming out from the tiny spots or way in the fondant

What did you say was basic physics again? Fondant absorbs moisture in the fridge and releases back in room temp...? That is not condensation. The reason why anything sweats is because when your object is cold, water vapour in the atmosphere condenses when in contact with a cold surface. More or less condensation depends on the HUMIDITY of the room. And please, i hope the temperature of your refrigerator(4-7 deg cel) is not the same as your room (25 deg cel). Either you will die from the cold or all the stuff you have in the fridge rottens. Also, if your fridge is the same temp as your room, why do you still need a fridge then? You can't do that. Please.
I'm assuming you weren't looking for a real response from me but in case you were here it goes... 1. I said basic physics is your cake going in the fridge and comming out sweaty... I went to school for accounting not physics... I wasn't trying to explain how sweating works there's Google for that 2. I don't keep my room the same temperature as my fridge if you paid attention to the video you'd hear me say that I raise my temperature up in my fridge a bit or lower the temperature of the room a bit so that when the cake comes out it doesnt get a shock in temperature and it reduces the sweating 3. You dont need to worry about things rotting in my fridge cuz I did also say that I have a separate fridge to keep cakes that I keep nothing else in so there's that... 4. I have been doing this for almost 10 yrs so this is a tried and true method that I had to learn the hard way by myself so if this video helps at least 1 person stop going crazy with sweaty fondant then I've done my job... that video is for them and not for people like you who wont even try what was mentioned in the video but will just criticize for the sake of criticizing 5. Well it's only useless if you dont put it in the fridge this video is for people who do put it in the fridge and struggle with their fondant sweating... not everyone wants to leave a 5 tier cake out on a counter overnight then drive hours with it to a wedding venue to sit out and wait hours to finally be cut at the reception... if that's cool with you then do it but for the rest of us normal folks who care about not having a wedding cake collaps because it was not chilled before delivery I can assure you... this video is very very necessary and useful... good night 😘
