Preventing Cake Condensation when using Fondant in a Humid Climate

I have broken it down into 4 steps to avoid/prevent cake condensation or sweating (These steps are only necessary in humid conditions):-
1a) Use Cornstarch or Cornflour rather than icing sugar to roll out your fondant.
1b) If it's an extremely humid day you can also knead a small amount of shortening (US) or Vegetable fat into your fondant to give a waterproof coating.
2a) Once you've baked your cake and want to refrigerate (prior to crumb coating), cover the cake in clingfilm to protect it from the moisture in the fridge.
2b) Don't ever refrigerate a cake whilst it's still warm.
3) When you cover the cake with buttercream and need to place it in the fridge, try not to leave it in the refrigerator too long. I'd only place it in the fridge to harden for no longer than an hour. As soon as you remove the butter creamed cake from the cold fridge - immediately cover it with a pan or tin. Then you can prepare your fondant and roll it out whilst your covered cake is able to acclimatise.
4. Then roll out your fondant (using cornstarch/cornflour). If it's extremely humid you can rub a small amount of vegetable fat/shortening on your hands and knead the fondant (this gives it a waterproof lubricant that protects it from moisture). Once fondant is on the cake - again cover it with tin, sealed box or pan. Again this will allow the fondant being affected by the humid air. In addition whilst the entire cake is protected it can slowly regain room temperature naturally. I'd leave the cake covered for at least 1 hour, before attempting to add more elements to your cake.
Please Note: Try not to return the finished cake to the refrigerator once it has been decorated and completed.

Ma’am though your video is a bit slow and lengthy it is very helpful. I’m from India and currently residing at Bahrain... the wilton fondant worked just fine for me but was expensive. Will definitely try this tip as the fondant that i buy to save cost often sweats... thanks again and God bless you 😘

Hello I'm from the Philippines just wanna share to you guys how i fixed my fondant cake which was sweating so much and it was a disaster, so here it goes last night i did a fondant cake i left it overnight with the fans on only to find out in the morning that it was dripping wet coz my cousin turned the fan off when i was sleeping he had no idea, so what i did is that i put it in the freezer for an hour and add another layer of fondant and turn all the fans on to high speed to it, it's still sweating and i just slowly used some paper towels to somehow remove some sweats and after some time it turned out really good. Bdw i just started baking few months ago.

This is very helpful 🙏🙏🙏 i got fondant cake that melted earlier 😢 because it was raining hard during the delivery.. Good thing is, the cake will be used tomorrow so I fixed it now and your discussion gave me the best technique to avoid this circumstance to happen again. my american buttercream cakes keep sweating?! i put the cake in the fridge to firm up after crumb coating (i leave it in for about 20 mins) how do i get my cake fully crusted and hard so i can handle it without it sweating please x do i just need to let it air dry?

Great question! First of all I suggest if it's a humid day try to avoid putting cake in fridge prior to cake decorating. meaning dont place in fridge unless you're wanting buttercream to harden and DONT store it in fridge otherwise. So once you've applied your crumb coat and want to place it in the fridge, put it in for 10 to 15 mins then remove and immediately cover with either a dish, pan or box and leave it covered while you prepare for next stage (for example covering in fondant), move quickly, apply fondant quick, smooth it over and again, once that stage is complete, cover cake with box/pan or dish for at least 1hr before attempting to remove cover. This will allow the cake to reach room temperature naturally. I hope that helps? The best tutorial about all the issues with fondant till now..Thank u so much. Have a fondant cake project on 18th april. Was thinking of baking the cake on 17th morning, 17th evening crumb coat with Ganache n keep in fridge overnight. But in video as u said no need to keep overnight. How to i go about with it? Is it that 18th early morning start crumb coat the cake with Ganache freezer in 20min then place over Fondant? Oh m so confused

Hi Shobel, you may have misunderstood, if you do keep your cake in the fridge overnight you certainly can, but when you remove it you must cover with pan/box or some kind of cover (if its humid) and allow it to sit for at least 3hrs before removing the box/pan/cover. This allows the cake to not be hit by the humid temperature and instead will come back to room temperature gradually. Hope that helps? Xx

@@MysteryBaker okay mam. So basically it is like keep it too long in fridge kept it out covered for longer to get back in room temperature... In keep less time in freezer about 20 minutes then kept less time out covered in room temperature. Thats right ?

@@shobelannafernandes8566 If you place in freezer for 20 minutes, use the same procedure by covering cake in pan/box once you remove it from the freezer, but it only needs to be left covered for an hour. After the hour, you can remove cover and continue with decorating or whatever you decide to do with it. Xx

Before we apply the fondant on the cake .. which frosting is best .. buttercream or fresh cream frosting?.. can we use fondant to cover a Sponge Cake..?

Buttercream is more stable than fresh cream and will set firm in the refrigerator which is perfect for the fondant to adhere to. I'm unsure what you mean with your final question so if you could expand, I'll try to answer you. X

Hi i am from India & here it's humidity and summer now and i am new in this work... Can you please answer me that if i want to deliver a fondate cake in morning than should i complete it in night means should i put all fondate design on it night. If so how can we preserve from humidity... As my fondate designs not going to wet in this session.

I'm so sorry but your comment was held back for some reason, so only just read it. I would recommend doing any cake decorating when the temperature is cooler especially in humid climates. For further information, I'd make the elements of the cake in advance and set them aside. Put the cake together (evening or when cooler) and add the elements to the cake and place in the refrigerator the night prior to delivering cake. Obviously on the morning, follow the procedure of placing the cake in a box/tin/pan in the refrigerator and when you take it out on the following morning, keep covered in the box/tin/pan for at least 2 hours before removing and preparing for delivery. Love your video it’s amazing, is it fine to keep fondant covered cake in the fridge ? How long do you have to keep it at room temperature before delivery please and decorate as well? Thank you

If temperatures are humid I'd cover the cake as near to the delivery date, as you possibly can. I'd cover and decorate the same day and refrigerate once complete (remembering to cover cake with dish/box or pan whilst in refrigerator). Remove from refrigerator night before delivery and keep covered to allow cake to acclimatise overnight. The next day the cover can be removed and cake can be delivered. Hope that helps? Xx

Hi I'm new to you channel. I'm in the Caribbean,a new baker and not yet equipped with ac,is it better to use crusted butter cream under fondant? Or it have to be chilled before covering with fondant?

Hi and welcome to my channel! 😊 it's always better to chill the buttercream prior to applying buttercream. The buttercream is applied to disguise imperfections and allows you to straighten the top and sides and once its refrigerated, the fondant can be applied smoothly and give it a more professional finish. Obviously, follow my instructions to avoid condensation, if your climate happens to be humid. Hope that helps? Xx

Hi I'm actually new with baking. Few days back i made a cake covered with fondant but before covering the cake with fondant i had kept my cake inside the freezer for 2 hours covered with ganache as soon as i covered the cake with fondant the fondant turned sticky with lot of moisture in it. Just need your advice what to do in this kind of situation whether to keep the cake in refrigerator or let the cske be in room temp?

If the climate is humid and you have to refrigerate to allow ganache to set then, cover the cake with a box/pan and Place in the refrigerator rather than the freezer. Then refrigerate for no longer than 60 minutes. Then when you're ready to cover in fondant, remove from refrigerator and leave it still covered with box/pan for 15 - 20 minitues, before removing its cover and placing on the fondant I hope that helps? @@benvilldsouza1380 if the weather is humid I'd suggest, covering the cake in fondant the day prior to delivery or day before the event. Place in refrigerator covered by pan/box. Keep it there until the night before it's due for the customer/party and take it from the fridge (keeping pan/box on) keep it a cool dry place overnight and remove the cover the following morning. Xx

if I'm freeze butter cream flower and place them on a cake which is in room temperature it sweats and begin to mix the colours with the cake. can you please tell me a way to prevent that happening?

It's because you're placing a very cold buttercream flower to a room temperature cake in humid or hot conditions. I suggest you apply frozen flower to a refrigerated cake (cold cake). Then using the method I described once you take cold decorated cake from the fridge keep it covered with pan/box for a few hours to allow it to acclimatise, before removing from cover. I would choose to do this on the coolest part of the day/evening. I hope that helps. Xx

I hd put whipped cream to cover d cake frm inside n refrigerated it fr 15mins den I removed the cake frm refrigerator n covered with fondant den soon after 20 mins d fondant started sweating..

Whipped cream is rather a difficult medium to use to coat a cake. Buttercream is a more reliable ingrediemt, as the butter in the buttercream, will set firmer, quicker. Hope that helps xx

Dont put the fondant flowers in fridge if you want them to harden. Take them from fridge and leave uncovered for 1hr to reach back up to room temperature. Then put oven on low temp for 10 mins then switch oven off, once oven is off but still warm (not hot), put flowers in oven for half hour. Hope that helps x

I suggest that when you remove cake from fridge, do it the night prior to needing it and then immediately cover with box or pan. Keep it covered overnight giving it time to reach room temperature before removing from its cover. Hope that helps? Xx.

hi. i will deliver a fondant cake on the 19th. i will coat the cake using chocolate ganache and cover it with fondant. when i remove the chocolate ganache covered cake from the fridge, do i have to to acclimate before covering it with fondant? im afraid that the coolness of the ganache might bring moisture to my fondant when i cover it.

Yes you'll have to acclimatise your ganache covered cake if the temperatures are hot. Remove from refrigerator and cover with box/tin or pan for around 2hrs before covering in fondant. Hope that helps x

Hi there, not hundred percent sure of your question. But if you're struggling with fondant figures during high humidity, then I'd suggest adding some tylose/cmc powder to your fondant. Hope that helps xx

Hi. I am from a tropical country and after i remove my cake from the refrigerator, i cover it with fondant and after maybe half and hour later it starts sweating. How many hours/days can i already cover my cake with fondant before i deliver the cake? Moreover, what happens if we mix tylose powder with the fondant? And one last question. Is homemade fondant better than ready made fondant? thanks.

I'd cover the cake in fondant one or 2 days prior to delivery, ensure the cake is protected with a cover, whilst it's in the fridge and remove it from the refrigerator the night prior to delivery. Keep it covered in box/pan or container overnight away from direct sunlight, in order for it to naturally acclimatise to your room temperature and don't remove from the box until your due to deliver. If you mix tylose with fondant it changes the molecular structure and it becomes more like modelling paste, which is ideal for making decorations for your cake. I hope that helps? Xx

Hi thnks so much for the advice. Actually what if i use another refrigerator and i alter its temperature? Will the sweating happen? And like when i remove the cake from the refrigerator and let it resr won't it be morr difficult to cover the cake with fondant as the buttercream will become soft again? @@krishcheeneebash7402 I must have misunderstood your question, I meant... Cover the cake in fondant one to two days prior to delivery, then cover with pan/box and place in fridge. Remove from fridge night before delivery and keep it covered in box/pan overnight and that should reduce cake from sweating. If you have access to another fridge then yes, alter temperature so its not as cold. Hope that helps xx

@ mystery bakery i cake base prior 3 to 4 days and freeze and I will put it in refrigerator night before adding chocolate ghance (chocolate n whipped cream). I keep in refrigerator over night. How long should I keep out before putting fondant (Directly keep cake in refrigerator without putting it in box)..and my fondant start sweating. Please help me.

@@nisargaramesh48 Not sure if I'm understanding completely but I'd remove from freezer minimum of 24hrs prior to covering with any type of buttercream or ganache. When removing from freezer cover with tin or pan in the coolest part of your home. After that full 24hrs of having the cake defrost and acclimatise, only then would I add ganache. Then immediately cover with tin or pan and place in refrigerator.... removing from fridge night before it's due for delivery (again sit in cool part of home with pan or tin covering it), then remove cover day of delivery. Have you placed the cake into the box and put it in the fridge? If so, remove from the fridge before you go to bed but dont remove it from the box. Allow cake to acclimatise to the room temperature naturally and only remove the box in the morning to check everything is ok. Can I ask how hot your temperature is currently at night? Xx

If you're in a humid climate and you added fondant to a frozen cake, you'd probably encounter condensation/sweating of the cake. Xx

I baked this one myself for my sons wedding. But it came with it's hassles. It was SUPPOSED to appear to be white lace draped over the cake. But even in an air conditioned church, I couldn't get it to stay in place! The humidity that day was awful, and the "lace" kept wanting to sag down off the cake! I guess the professionals know tricks that I don't, because nothing I tried worked, including using extra powdered sugar to change up the consistency of the icing I was piping the lace with.. Nothing I did seemed to work, everything seemed to want to shift and move! I kept the individual layers in the fridge until an hour before the service, but once stacked and put together, it would not go back in the fridge. We even tried removing the racks, but they were the type that will come all the way forward, but not completely out! So, finally I just gave up and went for the leftover flowers! Can I put my cake which is covered with fondant in a box and put it in fridge the day before delivery or it is best to do that on the same day of delivery ? And if i am going to do some models on the top of the cake using gumpaste or some tylose should I make it on the day before and should I cover it with a box or I can leave it not cover to dry ?

If the climate is humid, try to cover the cake with fondant and decorate, as near to the delivery date as possible. Once complete cover with box and refrigerate. The evening prior to delivery, remove from refrigerator (remembering to keep it covered in box overnight). This will hopefully allow the cake to acclimatise naturally. So on the morning of delivery, simply remove from its cover and the cake is ready to be delivered. I hope that helps? Xxx

I make Iceland cake and i make boat from a fondant. I use icing sugar in the fondant for fold the fondant. And to keep in the fridge my boat is totally melt😭 what a mistake please say 🙏 because i make a one more fondant cake

I'm not 100% sure what you are asking but, I would suggest that when you make the boat from fondant. Let it dry naturally and dont put it in the fridge. Only apply it to the cake if the cake is at room temperature... in other words, if the cakes been in the fridge, take it out and cover it with pan or box for few hours before removing it from box. Then you can apply the boat to the cake. Hope that helps and apologies if I've misunderstood your question xc

If it's a humid day, don't keep it in fridge any longer than 2 hrs. Whilst in fridge keep it covered in box or pan. Remove from fridge (keeping it in box/pan) and leave for 30 mins, before covering with fondant. Once covered in fondant, place back in box/pan and return to fridge. Xx

Yes you can keep it in the fridge but when you take it out ensure you keep the box over cake for couple of hours to acclimatise to the room temperature before removing box. Hope that makes sense? Xx

@@Nouneeye I'd not keep the cake and it's embellishments in the refrigerator for longer than overnight (approx 8 hrs maximum). Obviously follow the instructions in the video to acclimatise the cake to the room temperature. Hope that helps xx
