Guys, what about wrapping the smaller end in a bit of foil after the sear, for the 1st half of the low cooking so you can get all the crown to med-rare

You guys love to do lots of different experiments in the kitchen/butcher shop. you guys should do a subscription based service for your shop where any customers that are actively purchasing meats from your shop can be invited to just have a free tasting of whatever concoction you guys decide to do.

I gotta say the first time I ate the neck and head of a lamb was in Morocco and it was f’ing delicious! There are bits of the face and neck that are amazing once they’re barbecued properly. Combined with the delicious bread it’s an awesome meal. Not so keen on the brain or eyes however. Not quite the taste I imagined lol

In Kashmiri cuisine a dish is exclusively made from lamb ribs. It is called Tabakhmaaz. They have a crispy outer layer and inside cooked well.

Lamb fat needs to melt away and/or crisp up. That was basically raw fat, and that's how you get the infamous "gamey" flavour of lamb.

4:24 ~50 years ago, I had a Chinese braised lamb belly dish in a Sichuan style, which is influenced by the aromatic spice trade via Silk Road of the bygone era. It was gentle yet assured, just AMAZING. It is not found in professional kitchens nowadays, even in Sichuan, because people nowadays want extreme tastes, such as extreme hot and spicy, not a hint of subtlety - even old-timer professional chefs over the age of 75 lament about it.

I find unrendered lamb fat is unpleasant. Maybe crisping and rendering the fat when its flat before crowning the rib might be a good idea

Lamb is not very popular here in the States even though we produce some excellent product. Incredible as it may sound, much of the reason for lamb's lack of popularity goes back to the "Sheep Wars" in the American West back in the late 1800s/early 1900s (en.wikipedia.org/wiki/Sheep_Wars). In short, beef won, lamb lost. Lamb is very popular among certain ethnic groups here in the States (Basques, Greeks, Arabs, etc.), but I suspect most Americans go their entire lives without ever tasting it.

What breed of sheep is this? I work at a very famous lamb butchershop on the island of Texel in the netherlands. Here we have lamb with a lot more and higher quality meat on them because the breed has been perfected so much.
