Showing you how to vertically roast a chicken on the Weber kettle. I also cook my version of spiral potatoes on skewers.
The chicken: Its basically a "beer can chicken" without the beer can. I've tried "beer can chicken" numerous different ways and still think its better without the can. Cooking the chicken vertically allows it to cook quicker and more evenly. You'll notice how tender and juicy it is when I cut into it. The rub is just your standard store brought chicken rub. The stand is designed for a "beer can chicken" but can obviously be used without the can. Most chickens wont fit vertically on the Weber kettle. You'll need to use a riser. I used the one that comes with the Weber rotisserie kit. I always make sure my chicken reaches 165 degrees fahrenheit.
Spiral potatoes: Peel the spuds and please them between two chop sticks. The chop sticks will prevent you from accidentally cutting the whole way through. Cut thin slits into one side of the spud on a slight angle. Flip the spud over the do the same on the other side on the opposite angle. Slide the spud onto a skewer and extend out creating a gab where you had made the slits. keep basting the spuds with melted butter throughout the cook. You should end up with crunchy, light and tasty spiral spuds.
