Yama Seafood is among NYC’s top vendors when it comes to albacore, bigeye, yellowfin, and bluefin tuna. Director Nobu Yamanashi and his team begin their days at 3 a.m., breaking down tuna from Spain, Mexico, and Japan. The tuna is then delivered to New York City restaurants like two Michelin-starred Daniel and three Michelin-starred Le Bernardin. There may even be a rare appearance of Japan's tuna king in this video, tuna-in to find out!

I didn’t know the U.S. had such an authentically Japanese large-scale fish distributor. The story of the family and the product they’re putting out is amazing.

For instance, in L.A. there are dozens of Japanese owned wholesale fish distributors. Its a challenge to buy because all displayed seafood is identified in either Japanese or Spanish. Visiting and buying is a glorious endeavor on a Saturday morning at 6 a.m.

i think these guys are mainly serving the east coast (mostly) restaurants, specifically around NYC / tristate. Pretty sure there's a similar enterprise on the west coast, perhaps by another family owned business.

Too bad it’s completely unsustainable and there won’t be any left in 20 years. Japan is basically fishing the seas empty. I love these videos and I love sushi but we should all take like 20 years away from fishing so the oceans can replenish.

7:00 In French cuisine, the meat is always lean because the fat comes from the sauce, which is usually made from copious amounts of butter. A fatty meat would ruin the dish for being too greasy, so French cooks always prefer learn meat because their saucier can provide additional flavors and richness from the sauce!

You've got it backwards: rich french sauces and long braises came from the need to make lean, poorer cuts of meat palatable.

I love how interconnected the fish business is. I remember watching the video in regards to the sushi king (that guy with the big sword) and watching all those Michelin star restaurants that rely on getting these quality products. It’s awesome

😊👍 Takes care of their employees. I quit mine this morning after 18 years. It was a great place to work till the owner's wife started working in the office and doing payroll. She doesn't understand the proverb... *Don't bite the hand that feeds you.* Got 3 offers and took one in 45 min. I've got 18 years worth of receipts. There isn't going to be a single chain,clamp, grinder, and a bunch of other stuff in that welding shop tomorrow when I back in my trailer. All the sandblasting and painting equipment is demonstrably my personal property as well. 🤷‍♂️

@@ifs_fishing Good. I'm not mad. Just don't put up with unnecessary drama either. It's disappointing but things change. I didn't "cripple" them. But the tool section of local hardware stores are bare. Leased some of the bigger equipment short term. Still friends...just not doing buisness with each other any more.

There was a case in Japan where a couple of yakuzas went messing around in a seafood factory, and got killed by an employee who fought back with his tuna cutting sword.
