i feel like it could have gotten a higher score if less liquid was added to the grinder. the regrind was definitely a good call.

You cant take out the Juice... Its part of the Sausage. Thats like: Lets make Toothpaste Sausage but take out the Toothpaste

I don't think the liquid was the issue, the potatoes did wonders and absorbed almost all of it, you can see that there was no liquid dripping out when he was making the sausages. I think the sausages should've been made slimmer, so that they don't burst as quick and get a bit more sear. The outside texture seemed like the biggest flaw, not the filling.

@@vilcsith Liquid is the enemy of browning and crisping, the reason it never crisped up is because of all the water evaporating keeping the sausage from reaching the correct temperature to achieve maillard reaction.

@@MuraKun The Maillard reaction can easily happen with moisture present, that's how steak potatoes are crispy on the outside while still being soft and tender on the inside, same with steak unless you like yours well done. Furthermore, a slimmer sausage could do wonders as it would have less water to evaporate with less of a chance for bursts.

Mr. Sausage: what is with these cicadas? Me who can't hear them over the cicadas outside: Also would sausages like these cook better smoked? A long dry cooking process to get rid of the extra moisture?

Yeah, I'll second this suggestion Start smoking the sausages with more moisture content in them. They'll burst a lot less, come out more solid, and taste better overall. I only speak from years of experience with a BBQ pit

I feel you there. I'm in North Carolina. I don't think people who live outside cicada country realize how loud the little bastards are. If you're too close to a tree with one in it, the sound is physically painful, it's so loud.

Well I'm only a quarter but my grand does this dish almost exactly like he did (without the canned thing I don't know what it is). The end result was too watery but other than that it looks very tasty.

Mr. Sausage I was thinking you could do a redemption Sausage episode. Where you take sausages that scored poorly but had potential (not toothpaste) and tweek the recipe to make it more Sausage friendly and see if you can get a good one out of it.

When you re-grind you're just turning the filling into paste and removing any texture you may have gotten otherwise. Most videos where he does a regrind he complains about the sausage being mushy and that's probably why. Most of the sausages that he thinks requires regrinds really just needed to be corsley chopped and mixed before being put in the grinder in the first place.

in czech, we have goulash usually with either bread or dumplings and i feel like those could prove to be very good way to kinda absorb the liquid and make the sausage slightly firmer

I blieve the raisin guy got months before he got his sausage, and I think toothpaste suggester was vying for an episode for awhile before Mr. Sausage obliged. Mr. Sausage does do a lot of work getting supplies for these foods from his own time and money for our own entertainment, it's disappointing but I understand when he doesn't get to my requests right away. Although maybe the breakfast burrito sausage is already in the plans. Either way I would say don't lose hope yet, Mr. Sausage could use a good sausage before whenever he finally makes my surströmming sausage mwahahahaha.

Nice, a tasty Hungarian goulash. Nice to see you showing some love to other cultures by bringing the taste of Hungary to your home and kitchen and sausages. You know what I think would be really cool to see next on the sausage world tour? Something from Sweden, maybe something fish like, like a lightly salted herring from the Baltic sea that's a traditional Swedish cuisine dating back to at least the 16th century. If you think of a dish like that to make into a sausage it'd be cool to see an episode on it. But if you can't think of one I'll just suggest a surströmming sausage again.

Do a pretzel sausage. I'm now asking for both the soft kind you get at a mall and the dry crunchy unsatisfying-chip-replacement kind. I think they'll both be 1/5s but we should find out for sure.

Maybe this goes against the novelty of the channel but perhaps adding bread or cracker crumbs to the filling of sausages like this would absorb a lot of that moisture to ensure for a better sear and filling for future sausages

I feel you about the cicadas. Last time I went camping around Christmas time (in Australia) and we had to leave after a day because we couldn't even talk to each other they were that loud. Loud enough to give you hearing damage.

I would just like to say that this video gave me an instant craving and I went and made this very dish (minus the sausaging, of course) using only the first 30 seconds or so of him actually making it. I must say, I think it turned out pretty tasty. Whether its a passable goulash or not, I cannot say as I have never actually had goulash outside of the goulash MRE (which doesn't really count, does it?). So thank you Mr. Sausage for helping to add a new, tasty, and relatively easy dish to my dinner menu.
