i had a roommate that taught us that to get the “perfect” cookie you get them out the oven earlier than said cooking time (i mean depends on how you prefer the texture and look) since the cookies will still be cooking from residual heat AND while still warm you use a cup (or whatever circular shape you want cookies to take form, which will depend on what size you want as well) put it over cookie and move it around so the cup helps mold the edges into a circular shape.
